手脚冰凉寒气重，喝当归生姜枸杞羊肉汤暖身又补气血

到了寒凉时节，不少人一到晚上就手脚冰凉，脚底像踩着冰坷垃，半宿都暖不过来。山东这边一进风，老人孩子都爱念叨一句，寒从内生，身子里头要是没点阳气，外头穿再厚也白搭。原文说得很实在，一碗当归生姜枸杞羊肉汤，正是很多人冬天会惦记的暖身法子。

说到羊肉，很多人第一反应就是膻。其实处理得对，膻味不重，汤还格外香。冷水下锅汆烫这一步不能省，血水和杂味先出去，后面炖出来才清爽。很多家庭做羊汤，最怕一锅出来味道冲，喝着顶得慌。山东人做饭讲究实在，火候和时间都得掐准，九十分钟慢炖，看着不起眼，实则是把肉里的鲜和汤里的厚一点点熬出来。急火快煮像赶集，汤不够透，肉也发柴，差点意思。

当归这味东西，老百姓不一定天天碰，但在传统饮食里很常见。它常被用来搭配肉类，尤其适合寒冷时节做成汤食。按照中医食养思路，当归偏于养血活血，生姜偏于温中散寒，二者搭在一起，一个负责补，一个负责散，路子很顺。再放一点枸杞，汤面看着也更柔和，喝起来不至于一口下去太燥。古人讲药食同源，很多滋补菜就是这样一路传下来的，能留下来，往往不是图热闹，而是确实合乎冬天人体的需求。

现在不少人一到冬天就靠奶茶、炸鸡、火锅硬扛，嘴上热乎，身子却未必舒服。像我这种家里有老人孩子的，最能体会一锅热汤的分量。老人怕冷，孩子活动量大，晚上回来一人捧一碗，脸上立马有精神。羊肉汤的妙处就在这儿，不是花里胡哨的摆盘，也不是一口下去刺激味蕾，而是慢慢把人从里往外捂热。那种从胃里往四肢散开的暖意，真是比穿两条秋裤还来得实在。
