爆炒牛筋

食材：卤牛蹄筋、青红椒、姜、大蒜、花椒、生抽、蚝油、盐、鸡精

做法：

1、将卤好牛蹄筋切块；青红椒切丝，姜、大蒜切碎备用。

2、热锅冷油加入适量花椒爆香，爆香后捞出来丢了，加入姜碎和大蒜碎爆香，加入适量蚝油和生抽，放青红椒丝翻炒均匀，再加入牛蹄筋快速爆炒，加盐、鸡精调味；

3、加入少量清水防止糊锅，转小火煮五分钟即可出锅装盘。

大葱炒猪头肉

食材：卤猪头肉、大葱、泡椒、干辣椒、料酒、生抽、鸡粉、盐

制作步骤：1、猪头肉切成片，大葱去掉外皮后洗干净，然后斜切成稍微大点的段，泡椒剁碎，干辣椒切成丝。

2、锅中烧油，油温升高后，放入猪头肉煸炒，加入适量的料酒，炒至稍微发黄就可以了。

3、然后里面加入泡椒和干辣椒丝炒一会，让其入味。4、接着放入大葱段进行煸炒，炒至大葱发软，后调入适量的盐、生抽和鸡粉。

5、大火快速的翻炒均匀后就可以出锅了。

辣子鸡丁

制作方法：

1. 青椒洗净切片，辣椒洗净切段，蒜洗净切片。鸡胸肉洗净切丁，加盐、料酒、淀粉、生抽搅拌均匀，腌渍入味，备用。

2. 起锅烧油，油热后，放入腌渍好的鸡丁，炸熟至金黄色后捞出，沥干油备用。

3. 起锅烧油，油热后，放入蒜片、辣椒段煸香，再加入青椒片炒香，接着加入鸡胸肉翻炒均匀，加辣椒酱、白醋、白糖、料酒、胡椒粉和适量水，大火翻炒均匀后用水淀粉勾芡，淋明油出锅装盘即可。

罗汉果陈皮炖梨

-材料-罗汉果10g、梨250克

陈皮10g、冰糖适量

-做法-

1.梨去皮后切块。

2.把全部食材加入炖盅内注入清水。

3.通电后按炖煮时间一小时。

4.之后加入冰糖调味即可。

芝香四季豆

材料：四季豆1小把、胡萝卜小半根、盐、香醋、白糖、生抽酱油、香油、熟白芝麻；做法：1、四季豆去掉豆筋后斜切成细丝，放在开水锅里煮3分钟左右，

2、煮熟后的豆角丝捞出过凉水，沥去多余的水分后放在一个大碗里，

3、胡萝卜丝也在开水锅里焯一下捞出过凉，和豆角丝放在一起，加上食盐、香醋、白糖、

4、生抽酱油、香油调拌均匀，装入盘中，最后撒上熟白芝麻装饰一下即可

酒酿红烧猪肘

食材：蹄髈百叶结豆腐泡米酒姜干辣椒八角盐五香粉白酒生抽老抽鸡精冰糖

做法

1、蹄髈焯水，水中加白酒煮开。不盖锅盖。捞出洗净去毛备用。米酒滤掉米，姜切片。

2、锅里放入冰糖熬化炒糖色。糖色炒好后把锅里所有的油都倒出去，开中火

3、加干辣椒，姜，八角煸炒两三分钟，撒点五香粉再炒匀。

4、放入老抽生抽一比二，米酒，热水，一半盐，一起大火煮开，小火炖一小时。

5、放入百叶结和豆腐泡，继续炖一小时。

6、尝一下，把盐调到自己吃有点淡，大火收汁，放入味精或者鸡精就可以出锅了。

野葱炒牛肉

材料：野葱150克，牛肉（瘦）500克，料酒3克，盐3克，味精3克，酱油5克，姜3克

做法

1、将野葱去杂洗净切段；

2、牛肉洗净切片，放大碗内加料酒、精盐、味精、酱油、姜丝腌渍一会；

3、锅放油烧热，倒入牛肉煸炒熟而入味；

4、放入野葱炒至入味，出锅即成。

清炒蕃薯叶

【材料】蕃薯叶200g、蒜瓣少许、盐1勺，生抽1小勺，油适量

【具体做法】

1.烧开一锅水，放几滴油，把洗净的蕃薯叶焯一下，水再开后即可把菜捞起

2.热锅放油，爆香蒜瓣，放入焯过的蕃薯叶，快火翻炒片刻，用盐和生抽调味即可。

百香果山药

制作流程：

1、将山药去皮后放入开水中煮至九成熟，捞进冰水中镇凉。

2、净锅内加入清水，放白糖和少许柠檬片烧开，晾凉后浸入山药备用。

3、新鲜百香果切开，将果肉、汁水掏入干净容器内，边加蜂蜜边搅拌，待果汁质地浓稠后即成百香果酱，入冰箱冷藏备用。

盐菜炒乌贼

材料：土盐菜、乌贼、五花肉、辣椒节、小米椒丁、二荆条辣椒丁、盐、味精、鸡粉、胡椒粉、酱油

1、把土盐菜用清水泡发透，控干水再切成寸段备用。

材料：芹菜150克，猪耳朵250克，蒜2瓣，红椒半个，油适量，酱油适量，盐适量。

做法：

2、清洗干净、芹菜切段、红椒去籽切丝、蒜去衣拍碎

3、猪耳朵焯水

4、猪耳朵捞起、沥干水份

5、热锅放油、放蒜爆香、放芹菜炒几下

7、放红椒、炒至红椒断生

8、放盐、酱油、翻炒几下、即可出锅

黑鱼鸡蛋羹

食材：黑鱼、鸡蛋、姜、葱、黄酒、生粉、麻油、生抽、枸杞、蚝油、食盐

做法：

1、首先把鱼杀好，处理干净，然后把鱼两边的肉剔除留中间鱼骨，鱼骨看成段，放入水中洗净捞出放入容器中；

2、鱼肉去皮，然后把鱼肉斜刀切成薄片，但也不要太薄半厘米左右，然后清洗一下捞出放入盘中；

3、准备葱段姜片放入碗中加入适量黄酒，抓捏出葱姜汁；

4、把葱姜汁倒在鱼片上面，加入少许盐，少许耗油，放少许生粉，然后抓捏粘稠再放一点色拉油再次抓匀，抓匀之后腌制20分钟；

5、起锅烧油把鱼骨煎一下，煎一面金黄就可以啦，然后加入清水，盖上锅盖熬几分钟。几分钟之后把鱼骨捞起砸碎继续放入锅中熬制一会，把鱼骨捞出汤汁用密漏过滤到碗中放凉大约20度就可以；

6、在碗中敲三个鸡蛋用筷子打散，然后把鱼汤倒入打散的鸡蛋碗里比例1:1.5，然后加点盐搅拌均匀倒入深一点的盘中；

7、起锅烧水，水开后放入屉板把鸡蛋液放入其中盖上盖子蒸7分钟，七分钟之后把鱼片卷一下放入盘中摆好姿势，再蒸三分钟；

8、出锅，撒上一点芝麻油、生抽，放入枸杞、葱花点缀一下即可。

干煸豆角

食材：四季豆300克、猪肉馅30克、生抽1汤匙、料酒1/2汤匙、干辣椒8个、花椒15粒、蒜4瓣、姜1片、食盐1茶匙、白糖1/2茶匙、鸡粉1/2茶匙、植物油4汤匙。

做法：1、四季豆去老筋，掰成寸段，沥干。肉馅加料酒和生抽，腌10分钟，干红辣椒切段，蒜拍散，姜切末；

2、热锅上油，油热后倒四季豆翻炒，余油倒入腌好的肉馅炒散。倒姜末、蒜末、干辣椒和花椒炒香后和肉沫一起翻匀；

3、倒炒好的四季豆，加盐、白糖和鸡粉翻炒20秒装盘。

莴笋炒鸡蛋

材料：莴笋300克、黄瓜200克、黄椒半个、红椒半个、鸡蛋2个、葱10克、蒜3粒、姜5克、花生油35ml、香油5ml、味精2克、食盐2克

做法

1. 把莴笋去皮洗净，黄瓜洗净，切片，把莴笋切成菱形片

2. 彩椒洗净，切小块备用

3.锅里放油，放入葱、姜、蒜煸炒出香味

4.放入黄瓜、莴笋翻炒片刻

5.鸡蛋过油滑炒一下，盛出来备用

6.放入彩椒、盐翻炒1分钟，倒入鸡蛋翻炒片刻，出锅前放入味精、香油调味即可

葱油爽脆南瓜

做法：1.南瓜去皮馕切片洗净备用。

2.葱切段备用。

3.锅中放入适量油倒入葱爆香。

4.倒入南瓜翻炒片刻。

5.加入适量味极鲜翻炒。

6.加入少量盐调味。

7.出锅前加入鸡精和葱调味。

8.炒好后装入盘中就可以啦

食材：西红柿2个，鸡蛋3个，葱2根，蒜瓣3个，盐，料酒，白糖，

做法

1、蛋打散，加1小勺料酒去腥、1小勺盐、两小勺清水搅拌均匀。番茄切小块。

2、炒锅烧热放色拉油，油热倒入蛋液，煎至蛋液凝固。翻面，用铲子划散成小块。炒好的蛋盛出备用。

3、锅中放适量油，油热放入番茄翻炒。炒出番茄红色汤汁。放入炒好的蛋翻炒均匀，加盐、白糖调味、翻炒均匀即可。

4、出锅盛盘，撒上葱花。
