爆炒双脆

食材：鱿鱼、猪肝

配料：生姜、蒜米、螺丝椒、干辣椒、洋葱

调料：豆瓣酱、盐、鸡精、生抽、香醋

开始制作

1.鱿鱼先用开水烫一下，撕掉表面的一层皮，然后打上十字刀花，先斜着从一个角，刀呈45度切一遍，然后换一个方向，从另一个角垂直下刀切一遍，下刀不能太深，不能切断鱿鱼，刀花打完后改刀切成大小均匀块状。

2.猪肝切成大小均匀薄片，然后洗去血水，加入食盐、味精、生抽、生粉抓捏均匀腌制一会。

3.起锅开火，锅中烧水，水开放入鱿鱼焯水，出锅前倒入猪肝烫熟。

4.锅烧底油，放入姜蒜、豆瓣酱、辣椒炒香，再放入螺丝椒、洋葱块炒7分熟，放入鱿鱼和猪肝，加入调料，点少许水，勾入水淀粉，大火爆炒，翻炒均匀出锅。

肺片汤

食材：猪肺、白萝卜

配料：生姜、菜籽油、猪油、小香葱

调料：盐、鸡精、白胡椒粉

开始制作1.猪肺买回来后先要处理干净，把猪肺气管接在水龙头上，在猪肺上刺一些孔不停用水冲，直到猪肺变白。

2.猪肺处理干净后，改刀切成片，淋巴多的位置不要食用应丢掉。

3.起锅烧油，放入姜片、菜籽油、猪油烧热，倒入肺片大火爆炒，肺片焦香后加入适量的水，大火烧开煮一会。

4.当汤水白后倒入高压锅，上气压15分钟，再关火放气，放入调料，白萝卜盖上盖，再上气压3分钟。

5.时间到后排气，直接倒入碗中撒上葱花即可。

香辣薄荷羊肉

材料：羊肉300克、薄荷叶10克、蒜头2个、干辣椒5克、盐3克、油5克、酱油1汤匙、花椒油3克、白糖5克

做法

1.备好食材，羊肉提前取出解冻，软化后用清水浸泡一两遍，洗净沥干水

2.切成薄片或条状，切法随意

3.薄荷嫩叶洗净、辣椒洗净剪去头尾、蒜头去皮切片

4.备好花椒油、白糖和酱油混合盛起

5.热锅，倒入食用油，下蒜片爆香

6.倒入羊肉，保持大火快速煸出油脂

7.倒入辣椒干

8.调入酱油，白糖，继续翻炒

9.调入花椒油，翻炒均匀

10.最后倒入薄荷叶，快速拌匀即可铲起

香菠糖醋里脊

材料：里脊肉，少许盐，糖，料酒，几片生姜，1只蛋黄，1大勺芝士粉，3勺生粉，葱段，5大勺番茄酱，3大勺白糖，1大勺白醋，少许菠萝丁

做法：

1、里脊肉切成厚约0.5CM，宽约1CM，长约2CM的条，略用少许盐、糖、料酒、几片生姜腌渍半小时入味，然后捞出生姜片。

2、一只蛋黄、1大勺芝士粉、3勺生粉与肉片拌匀，静置半小时，让肉片与浆充分结合。

3、起锅入油，油热后入一节葱段，待葱段周围密集小泡并在锅中迅速旋转时，入肉片开炸，肉片漂浮起来捞出略晾，再炸一遍捞出待用。

4、锅里留少许油，入5大勺番茄酱、3大勺白糖、1大勺白醋，中火熬至糖融化。

5、入水淀粉勾芡，入炸好的里脊、少许菠萝丁（1/6个菠萝提前切丁备用），大火翻炒至里脊充分蘸满糖醋番茄汁后，放少许麻油即可出锅。

香菇炒芦笋

材料：芦笋、胡萝卜、大蒜、橄榄油、水、盐、干贝素(或味精或鸡精或别的什么精或省略);

做法：

1、香菇泡发(鲜香菇就直接用啦)，洗净，去蒂，挤干水分，切成薄片。

2、胡萝卜洗净，切丝。

3、芦笋洗净，切段。

4、大蒜，切片。

5、锅烧热，倒点橄榄油，油热，放蒜片炒香;加胡萝卜和香菇，翻炒一会儿;加芦笋，适量盐，翻炒一会儿;稍微加点水，继续翻炒，芦笋会慢慢变翠绿，水会慢慢收干，加点干贝素，翻炒均匀，就好啦，起锅~

南瓜杂菌汤

材料：南瓜、杂菌、葱花、水、盐、油、鸡粉

做法

1.杂菌切段或切块，南瓜去皮，切片。

2.将南瓜放入微波炉，高火加热6分钟直到变软，烧热油渣，加入杂菇炒5分钟。

3.倒入水，加盖煮滚，加入南瓜泥，加入鸡粉和盐调味，撒上葱花装饰。

双瓜炒百合

材料：百合、南瓜、青瓜、花生油、食盐、白糖、鸡粉

做法

1. 百合掰开，洗干净，南瓜剥皮，去掉籽子，把南瓜、黄瓜洗净，切小粒。

2. 下油锅，把南瓜煎至金黄色，加上少许清水使其易熟透。

3. 放入百合、黄瓜进行翻炒，最后放入盐、鸡粉、糖调味，翻炒至熟即可。

桂花红薯年糕甜汤

材料：糯米年糕、油、盐、番薯、冰糖、干桂花

做法

1.将蕃薯去皮洗净，年糕洗净，分别切成和冰糖大小一致的丁。

2.汤锅中放水，加入红薯丁和冰糖一起煮开，蕃薯煮开1分钟后，加入年糕一起再煮2分钟左右。

3.按个人口味再放少许糖调味，最后出锅前撒上干桂花即可。

海鲜菇芦笋

食材：海鲜菇135克，芦笋50克、高汤、精盐、鸡粉、绍酒、葱姜片各适量

做法：

1.将海鲜菇、芦笋洗净均切成段。

2.锅内倒入高汤，下入海鲜菇烧开，加入芦笋再次烧开。

3.调入精盐、鸡粉、绍酒、葱姜片至熟，盛在盘内即可。

西红柿烧茄子（微甜）

食材：茄子1个，西红柿1个，青椒1个，糖3克，蒜瓣3个，料酒5克，生抽15克，料酒5克，鸡精少量，香油、盐、水淀粉适量。

做法:

1、将所有的食材清洗干净，切子切成滚刀块，西红柿切小块。

2、炒锅烧热，放油，油热后，放入切好的茄子块翻炒，炒至茄子皮发皱，变软微黄时。

3、放入葱姜蒜炒香，再放入西红柿翻炒。

4、加入料酒、生抽、糖和适量的盐翻炒均匀。5、放入适量的清水烹制，烧至汤汁块干时放入青椒翻炒均匀。6、淋入适量的水淀粉勾芡，再加入少许鸡精淋入香油翻炒均匀即可关火。

芋头蒸排骨

食材：排骨500克，芋头300克，大蒜1个，姜1块，小葱3根，白糖1勺，花生油1勺，白胡椒粉少许，米酒少许。

做法：1、食材处理：姜切片，小葱切段，芋头去皮切块（小块容易熟）。

2、排骨处理：买回来的排骨剁成小块，用水清洗干净，沥干水。准备一个大碗，把排骨放入碗中。加入半勺白糖（提鲜），半勺花生油（让排骨肉质滑嫩），加几片姜（去腥）搅拌均匀后放冰箱冷藏3-4小时。出冰箱后，下锅蒸之前15分钟。放入1小勺胡椒粉，蒜末，米酒搅拌，加1勺生抽调味。最后撒上淀粉水，搅拌均匀。撒淀粉水目的是锁住排骨里面的味道和水分。

3、准备一个盘子，把芋头平铺在盘中。开水锅，蒸10分钟。

4、10分钟后，开锅盖，把腌制好的排骨铺上表面。开大火，继续蒸15分钟。

5、15分钟后蒸好，出锅，撒上葱花，淋上热油，淋入生抽调味。搅拌均匀即可

鲜椒马蹄

材料：盖菜200克，马蹄100克，蒜末、青红椒丁、鲜青花椒各少许。盐、味精、白糖、水淀粉、红油、麻油。

做法

1、盖菜洗净改刀；马蹄切片。

2、水中加入盐、白糖、油，将盖菜、马蹄分别飞水。

3、盖菜清炒一下，加入盐、味精、白糖，一点点淀粉勾芡，翻匀摆放在盘底。

4、马蹄加入蒜末、青红椒丁、红油、麻油拌匀，盛入盖菜上即可

手撕包菜

食材：包菜半棵，花生油20克，食盐1茶匙，葱1段，蒜5瓣，花椒1把，干辣椒6个，生抽2汤匙，香醋2茶匙

做法：

1.准备原料，锅中倒油烧热后入花椒煸出香味儿，捞出花椒丢弃，留花椒油。

2.爆香蒜片葱花，倒入干辣椒翻炒。

3.倒入手撕好的包菜，炒熟后加入香醋，倒入少许生抽炒匀，加入适量食盐翻炒均匀，即可出锅！

红油金针菇肥

食材：肥牛卷250g、金针菇200g、油适量 、蒜末适量、葱花适量、红油豆瓣酱适量、鸡精适量

做法：

1.金针菇去根后洗净，准备蒜末，葱花和豆瓣酱。

2.锅内水开后倒入肥牛烫变色后马上捞起冲洗干净。

3.热锅温油爆香蒜末后熄火加入红油豆瓣酱爆出红油。

4.加入开水后开大火煮开，加入金针菇煮开，倒入肥牛卷。

5.加入鸡精煮开后熄火出锅。

6.撒上葱花上桌。

青椒炒鸡蛋黄

做法1.鸡蛋黄搅散，大青椒洗净切碎块，干椒切成椒圈，大葱切碎，蒜头拍碎

2.1勺干淀粉加1勺半水，搅拌均匀，倒入鸡蛋黄搅匀，倒入料酒拌匀

3.油锅中火加热，倒入蛋黄，让它略凝成块，搅散，归置一边，用蛋黄泌出的底油爆香葱蒜碎

4.放下青椒碎加大火力翻炒一下，放入鸡蛋黄混炒，根据各人口味下盐、糖、生抽调味后装盘即可。

三色炒虾仁

食材：虾仁350g；黄瓜30g；胡萝卜30g；玉米粒30g；油1大勺；盐1小勺；白酒1小勺；淀粉2小勺

做法：

1、胡萝卜和黄瓜洗净切小丁

2、虾仁清洗干净，去掉虾线，加入1小勺盐，加入1小勺白酒拌匀，腌制15分钟

3、腌制好的虾仁加入2小勺淀粉、抓拌均匀

4、锅中加入1大勺油，油热后下锅滑炒虾仁，虾仁变色后即可捞出

5、另起锅加入少许油，将胡萝卜和黄瓜丁下锅炒至断生

6、加入少许盐，加入玉米粒翻炒

7、然后加入事先炒好的虾仁，翻炒均匀，即可关火

花菜炒蛋

用料：花菜；鸡蛋；料酒；生抽；盐；

[补血菜谱]花菜炒蛋的做法：

花菜切小，焯水后捞出备用

鸡蛋打散加入适量料酒、生抽，搅拌均匀

炒锅入油，烧热后下入花菜翻炒几分钟。

倒入蛋液，炒散。翻炒均匀后加入适量的盐。

起锅装盘啦~

可乐鸡翅

材料：鸡中翅10个可乐1小罐；辅料：盐少许白胡椒粉1克香叶3片八角1个桂皮1片冰糖50克；

做法：1.制作之前先用少许盐和胡椒粉把鸡翅腌制半个小时，然后高温油炸一下食用。

2.锅下油放入冰糖炒出糖色倒入鸡翅翻炒一下倒入可乐并加入少许的盐

3.然后放入香料开始中火卤制，烧至收汁即可那么一个口感非常好的可乐鸡翅就完成了
