入秋后多吃土里长的高钾食材，4道家常小炒，养脾胃又解秋乏

入秋之后，凉意初起，许多人开始感到身体疲乏、精神不振，这便是民间常说的“秋乏”。中医讲究“顺时而食”，秋季养生重在养脾胃、补气血，而脾胃乃后天之本，气血生化之源。此时餐桌上不妨多添些“土里长”的高钾食材——它们深埋泥土之中，汲取大地精华，富含钾元素及多种矿物质，既能帮助身体恢复元气，又能缓解秋日倦怠。比起大鱼大肉，几道清爽的家常小炒更贴合秋日脾胃的承受力，简单翻炒之间，既能保留食材本味，又能让营养悄然入馔。接下来分享四道适合入秋后食用的家常小炒，做法不难，却能让全家吃得舒坦，安稳度秋。

土豆丝炒青椒

所需食材： 土豆两个（约400克）、青椒两个、干辣椒三四个、大蒜三瓣、生姜一小块、白醋两勺、食盐适量、食用油适量、生抽一勺、花椒十余粒、香油少许。

步骤：

1. 土豆削去外皮，先切成薄片，再改刀切成粗细均匀的细丝，切好后立即放入清水中浸泡，防止氧化变黑。

2. 青椒去蒂去籽，洗净后切成与土豆丝粗细相近的细丝；大蒜切片，生姜切丝，干辣椒剪成小段备用。

3. 将浸泡好的土豆丝捞出，用清水反复冲洗两遍，洗去表面多余的淀粉，这样炒出来才会根根分明、口感脆爽。

4. 锅中加入足量清水，大火烧开后放入土豆丝焯烫约二十秒，迅速捞出过凉水，沥干水分备用。

5. 炒锅烧热，倒入适量食用油，放入花椒粒小火炸出香味后捞出弃用，再放入姜丝、蒜片和干辣椒段爆香。

6. 转大火，倒入沥干的土豆丝和青椒丝，快速翻炒均匀，沿锅边淋入白醋，继续保持大火翻炒约一分钟。

7. 加入食盐和生抽调味，翻炒均匀后淋入少许香油，即可关火装盘。

芋头烧排骨

所需食材： 芋头500克、排骨400克、生姜一块、大葱一段、八角两颗、桂皮一小段、冰糖十余粒、生抽两勺、老抽一勺、料酒两勺、食盐适量、食用油适量、清水适量。

步骤：

1. 排骨斩成小段，放入清水中浸泡半小时，中途换水两次，泡出血水后捞出沥干备用。

2. 芋头削去外皮，洗净后切成滚刀块，放入清水中浸泡防止氧化，烹饪前捞出沥干水分。

3. 锅中加入冷水，放入排骨，加入几片生姜和一勺料酒，大火煮开后撇去浮沫，焯水两分钟后捞出用温水冲洗干净。

4. 炒锅烧热，倒入少许食用油，放入冰糖小火翻炒至融化并呈现琥珀色，倒入排骨快速翻炒上色。

5. 加入姜片、葱段、八角和桂皮炒出香味，淋入料酒、生抽和老抽，翻炒均匀使排骨裹上酱色。

6. 倒入没过排骨的热水，大火烧开后转小火炖煮约二十分钟，然后放入芋头块，继续炖煮十五分钟。

7. 待排骨软烂、芋头粉糯时，加入食盐调味，转大火收浓汤汁，出锅前撒上葱花即可。

所需食材： 红薯两个（约400克）、五花肉350克、蒸肉米粉一袋（约100克）、生姜一小块、大蒜三瓣、郫县豆瓣酱一勺、生抽两勺、老抽半勺、料酒一勺、白糖少许、食用油适量、清水适量、葱花少许。

步骤：

1. 五花肉洗净后切成约半厘米厚的片，放入碗中，加入姜末、蒜末、豆瓣酱、生抽、老抽、料酒和白糖。

2. 用手将调料与肉片充分抓匀，腌制二十分钟，使肉片入味，期间可翻动一两次。

3. 红薯削去外皮，洗净后切成滚刀块，放入清水中浸泡片刻，捞出沥干水分备用。

4. 将蒸肉米粉倒入腌制好的肉片中，加入少许清水和食用油，翻拌均匀，使每片肉都均匀裹上米粉。

5. 取一个深碗或蒸笼，先将红薯块铺在底部，再将裹好米粉的肉片整齐码放在红薯上面。

6. 蒸锅中加入足量清水，大火烧开后将蒸碗放入，盖上锅盖，转中火蒸约五十分钟至一小时。

7. 蒸好后取出，用筷子轻轻翻拌一下，使米粉、肉片和红薯混合均匀，撒上葱花即可上桌。

6. 转大火，倒入焯好的山药、木耳、胡萝卜和青椒块，快速翻炒均匀，持续翻炒约两分钟。

7. 加入食盐、生抽和蚝油调味，翻炒均匀后即可关火装盘。
