立秋多吃这4道家常菜，润肺祛湿增强免疫，全家怎能安稳过秋冬？

立秋一过，菜市场里最先变样的，不是天气，是摊位上的菜。紫苏叶一把一把地摆着，芦笋挺着腰，长豆角水灵灵的，番茄红得像刚熟透的脸蛋。人一到这个时候，最容易犯一个毛病，还是按夏天那套吃法，冰的、辣的、油的往桌上一摆，结果嗓子干、身上沉、胃里也不安生。原文讲的核心就一句话，换季别硬扛，贴秋膘也别瞎贴，顺着时节把家常菜吃对了，比光想着补品更实在。

这事儿不是玄乎话。中医里讲秋主燥，燥容易伤津液，夏天那股湿气又没散干净，人在这种时候就容易出现口干、犯困、没胃口、肠胃不顺当。现代营养学也说得明白，季节交替时，饮食最好从重油重盐慢慢转向清淡、温润、熟食为主，蛋白质、膳食纤维和维生素都得跟上。说白了，就是别让肠胃一会儿下海一会儿上山，得给它个缓坡。

我们山东人讲究实在，到了这时候，饭桌上最怕摆架子。大鱼大肉不是不能吃，是得有分寸。秋天真要养人，靠的不是山珍海味，而是几样当季、平价、做法不费劲的菜。像原文里的紫苏焖鸡翅、芦笋炒蛏子、凉拌长豆角、番茄蒸肉丸，都是一个路子，食材好找，做法也不花哨，关键是把身体最需要的那点东西稳稳当当送进去。

先说紫苏焖鸡翅。鸡翅这东西，家里有孩子的一般都懂，端上桌总能被抢光。我家那俩小子就这样，平时挑食得像小领导，一见鸡翅立马精神。鸡翅先划花刀焯水，再煎到两面金黄，随后加生抽、老抽、小火焖十分钟，最后丢一把紫苏叶，香气一下就起来了。紫苏在民间常被当成顺气散寒、解腻去腥的好帮手，秋风一吹，吃点带香气又不燥的菜，比猛吃辣椒舒坦得多。

紫苏这个东西，很多南方人常用，北方人反倒认识得少。其实它不稀罕，菜场里一把才几块钱，做鱼、做鸭、焖鸡都挺合适。它的气味有点冲，闻着像把山野气息拎回了厨房，能把肉味提起来，还能压住那股闷腻。过去老人常说，天凉了吃点带辛香的东西，身上不那么发沉。这个说法有它的生活道理，尤其是换季吹风后，手脚凉、脑袋沉的人，做饭时放一点，吃着顺口。

再看芦笋炒蛏子，这道菜就很讲究一个字，鲜。蛏子先盐水静养吐沙，水微开后加姜片和料酒，壳一张开就捞，动作慢了，肉就老。芦笋焯三十秒，立刻过凉水，颜色翠绿，口感脆生。锅里姜蒜一爆，芦笋和蛏子一合体，火候卡准了，鲜味能往鼻子里钻。芦笋的膳食纤维比较丰富，蛏子蛋白质不低，脂肪却不算高，这种搭配对换季时容易口淡、又怕吃太油的人挺合适。

这道菜还有个挺现实的地方，就是它不贵。以前大家一说养生，脑子里就冒出燕窝、海参、进口补剂，像是离寻常人家十万八千里。可真到菜市场一看，芦笋、蛏子都是能买得起、也能吃得明白的东西。海鲜不是谁都适合，原文也提醒了，海鲜过敏、痛风的人要避开，脾胃虚寒、经常腹泻的人也别贪多。这话得听，身体不是铁打的，不能看别人吃得欢，自己也照着来。
