四碟八码，比老北京还讲究！天津人吃打卤面，复杂程度堪比吃席

网上有个搞笑视频，北京大爷对着一锅饺子拍桌子："我跟你说多少回了？煮饺子得五个五个煮！老吃热的！一块煮出来都坨了，怎么吃？" 转头又刷到另一个视频，北京大哥吃炸酱面，非要先把碗里的油和酱分得一清二楚，再把油倒进面里拌，就是一个地道！ 处处体现着老北京人对吃的讲究。

但要说 "讲究" 二字，天津人表示："你们那都不算事儿，来尝尝我们的三鲜打卤面再说！" 如果你以为天津人吃打卤面就是 "煮碗面浇勺卤" 那么简单，那可就大错特错了。

这碗面，藏着天津人刻在骨子里的仪式感，讲究起来能让你怀疑人生，光是 "四碟八码" ，一碗面条一桌席的排场，就能把北京炸酱面的 "十三码" 比下去半条街。

天津三鲜打卤面的历史

天津三鲜打卤面，老天津本地人都亲切叫它捞面，它可不是近代随便发明的家常面食，根源来自天津百年漕运文化。当年天津是南北漕运重要枢纽，河鲜、海鲜、山珍南北食材在此交汇融合，慢慢慢慢就沉淀出了这碗独属于津门的特色面食。

在天津本地，捞面早就彻底超越了 “吃饭果腹” 本身，变成了刻在民俗里的仪式宴席。老天津卫一直流传一句话：无面不成席。结婚办喜事、老人过寿贺生辰、乔迁新居、孩子升学成才，全都要摆捞面席；就连大年初二姑爷节，丈母娘招待上门姑爷，必须端上一碗正宗三鲜捞面，这是礼数、是心意，更是女儿在婆家脸面的象征。

喜事吃喜面，寿辰吃寿面，一碗普普通通的面条，被天津人吃出了温度、规矩，还有独属于市井平民的顶级仪式感。

四碟八码

懂正宗天津三鲜打卤面的人都知道，整碗面最核心、最讲究的标配，就是代代相传的四碟八码。这套搭配是百度百科明确记载、老天津卫传承上百年的正统规格，少一样都算不上地道津味捞面，论细节排场，完全比大家熟悉的老北京炸酱面更考究。

先说传统四碟，这是捞面席必不可少的四道热炒小菜，荤素搭配、酸甜咸鲜平衡，每一道都有火候讲究，还有吉祥寓意。

正统四碟里一定有滑嫩清炒虾仁，必须新鲜活虾现剥，小火慢滑保持软嫩弹牙，寓意招财纳福；还有外酥里糯的糖醋面筋，酸甜比例恰到好处，象征日子甜甜蜜蜜；大火快炒的头茬嫩韭菜配香干，鲜爽清香；再配上蓬松软嫩的摊黄菜，也就是软嫩鸡蛋，金黄温润。四碟没有大鱼大肉，却道道火候精准，天津本地人一眼就能看出，主人家待客够不够用心。

说完四道热碟，再来说八码凉菜面码。八码是八种清爽解腻的配菜，全部切得均匀细丝，用来中和卤汁的厚重、丰富口感层次，是正统捞面绝对不能少的部分。

脆甜黄瓜丝是绝对主角，搭配焯水断生的脆嫩胡萝卜丝、掐头去尾清爽绿豆芽，还有酸甜爽口的心里美萝卜丝，加上 Q 弹红粉皮、软糯青豆黄豆，再配上清甜应季白菜丝。讲究的老天津人家还会跟着四季更替更换面码，春天加香椿，夏天配鲜蔬，应季而食，一年四季口感都不重样。

三鲜厚卤

四碟八码是面子排场，那一锅浓稠鲜香的正统天津三鲜卤，才是整碗面的灵魂核心。根据百度百科官方定义，正宗津味三鲜卤讲究地鲜、河海鲜、蛋鲜三者合一，缺一不可。地鲜是五花肉薄片、木耳与黄花菜，撑起卤底醇厚香味；海鲜是天津本地新鲜虾仁，是沿海城市独有的鲜甜；蛋鲜是顺滑蛋花，温润提香不油腻。

正宗天津三鲜卤还是老天津独有的双勾厚芡卤，宽汁挂面，绝对不是稀汤寡水的清汤卤。懂行的天津本地人做卤，从来不会敷衍下料。虾头虾壳绝不会随手扔掉，小火慢炒慢慢熬出香浓虾油，这才是整锅卤鲜味的根源。先用虾油爆香葱姜佐料，滑炒鲜嫩肉片至变色，再下入鲜虾仁炒至卷曲泛红，接着放入泡发透彻的木耳黄花菜，就连泡发食材的原汤也要过滤干净倒回锅里，是天然又纯粹的鲜味剂。

食材煮开之后分次缓慢勾芡，卤汁浓稠到能稳稳挂在筷子上不滴落，这就是老天津说的双勾卤。关火前均匀淋入蛋液，飘出细腻漂亮的蛋花，最后出锅前淋上一勺炝香花椒油，滋啦一声香气满屋散开。做好的三鲜卤鲜而不咸、浓而不腻，每一滴卤汁都能牢牢挂在面条上，这才是天津卤的精髓。

吃面的规矩

面煮好了、卤调香了、四碟八码全部配齐，天津人吃面依旧有一套代代传下来的老规矩。面条优先手工擀面，筋道爽滑，煮到八分熟再过一遍凉水，不坨不黏口感更佳。盛面先铺碗底，再浇上足量三鲜卤，卤汁用量刚刚好裹住面条，不多不少。随后铺上各色清爽面码，旁边端正摆好四碟热菜，讲究一口面一口菜搭配食用，最后再剥上几瓣生蒜。天津人老话讲吃面不吃蒜，香味少一半，这瓣蒜，就是天津捞面最后的灵魂点睛。

吸溜一口筋道面条，裹着浓鲜醇厚的三鲜卤，就着脆爽面码、搭配鲜香热菜，再咬一口蒜，满口鲜香层次饱满，这才是完整、地道、舒服的天津三鲜打卤面吃法。
