秋分后，这8道菜要舍得吃，每天换着做，热乎上桌全家舒服

秋分一过，昼短夜长的凉意就往骨头缝里钻，晨起的风裹着桂香却带了几分刺人的寒，傍晚做饭时手刚碰到凉水就打个寒颤。老辈人总说“秋补不忙，冬天遭殃”，这时候别总凑合吃凉面、点外卖，花半小时炖一锅热乎鲜美的菜，从筷子碰到碗沿的那一刻起，暖意顺着喉咙滑到胃里，全家老小吃完浑身舒展，比穿秋裤还踏实。今天就把8道应季又养人的家常菜做法分享给你，每天换着做，秋分这半个月的饭桌都不重样。

一、香煎带鱼

食材

带鱼、生姜、料酒、盐、淀粉

步骤

1、带鱼处理干净，切寸段，加料酒、姜片、盐腌15分钟

2、腌好后用厨房纸吸干表面水分

3、均匀裹上一层薄薄的干淀粉

4、平底锅热油，中火放入带鱼段

5、煎至底面金黄定型后翻面

6、出锅装盘，挤几滴柠檬汁或配椒盐食用

二、葱油手撕鸡

准备食材

三黄鸡半只、大葱、生姜、蒜末、白芝麻、葱花

煮鸡料：料酒、姜片、葱段

调味：生抽、蚝油、盐、白糖、鸡精、香油、葱油

详细制作步骤

1. 鸡肉清洗：三黄鸡处理干净，去掉多余油脂和鸡淋巴，冲洗干净血水。
2. 冷水煮鸡：鸡肉冷水下锅，加入姜片、葱段、一勺料酒，大火煮开焯水去血沫。
3. 小火浸熟：撇干净浮沫，转中小火煮15分钟，关火后焖10分钟，鸡肉更嫩不柴。
4. 过凉锁嫩：煮好的鸡肉捞出，过一遍冰水，肉质紧实Q弹、皮脆肉嫩。
5. 手撕脱骨：放凉后去掉鸡骨，用手撕成均匀细条，手撕比刀切更入味。
6. 熬制葱油：大葱切段，锅中多放一点油，小火慢炸葱段，炸至焦黄出香，捞出葱段留葱油。
7. 调凉拌料汁：碗中加蒜末、白芝麻、一勺生抽、半勺蚝油、少许盐、白糖、鸡精、香油。
8. 加葱油提香：倒入熬好的秘制葱油，充分搅拌均匀，料汁香味翻倍。
9. 淋汁拌匀：把调好的葱油料汁均匀淋在鸡丝上。
10. 充分抓拌：下手轻轻抓拌，让每一丝鸡肉都裹满葱油酱汁。
11. 点缀出锅：撒上葱花点缀，鲜香入味的葱油手撕鸡完成！

三、香烤芋头糕

准备食材

香芋头400克、糯米粉150克、白糖少许、葱花、盐、食用油、白芝麻

详细制作步骤

1. 芋头去皮切块：新鲜香芋头削掉外皮，清洗干净，切成厚薄均匀的小块。
2. 蒸熟芋头：芋头块放入蒸锅，大火蒸20分钟，蒸至芋头用手一捏就碎的软烂状态。
3. 压成细腻芋泥：蒸好的芋头趁热取出，加入少许白糖，用勺子碾压成无颗粒的细腻芋泥。
4. 加粉揉团：分次加入糯米粉，少量多次加温水，揉成不粘手、不开裂的光滑面团。
5. 松弛面团：揉好的面团盖上盖子，静置松弛10分钟，口感更软糯。
6. 分割剂子：把面团分成大小均匀的小剂子，每个剂子揉圆备用。
7. 压成薄饼：取一个剂子，用手按压成厚薄均匀的小圆饼，不要太厚，更容易煎透。
8. 点缀增香：饼面撒少许白芝麻、小葱花，轻轻按压贴合，不易脱落。
9. 平底锅预热：不粘锅刷一层薄油，中小火预热，放入芋头糕生坯。
10. 两面慢煎：小火慢煎，煎至底部定型金黄，翻面继续煎另一面。
11. 煎透出锅：反复翻面，煎至两面金黄微焦、外皮酥脆，即可出锅食用！

四、冬瓜虾仁汤

食材：

冬瓜300克、鲜虾仁12只、生姜3片、小葱2根、盐少许、鸡精少许

做法：

1. 虾仁去虾线洗净；冬瓜去皮，切成厚块。
2. 锅里放少许油，下入虾仁小火炒至变色，放入姜丝、蒜末爆香。
3. 倒入冬瓜块翻炒片刻，加2碗清水，大火烧开转中小火煮8分钟，冬瓜变得半透明就熟了。
4. 放适量盐、少许鸡精调味，撒上葱花，关火出锅。

五、蒜苔炒肉片

食材准备：瘦肉、蒜苔、蒜末、小米辣。

做法流程：

1.瘦肉清洗干净，然后切成薄片，放入大碗中，接着加入淀粉、生抽、老抽和花生油，再抓拌均匀，腌制二十分钟备用。

2.清洗干净蒜苔，然后切成小段备用，接着热锅烧油，油热以后，放入腌制好的瘦肉煸炒，煸炒至瘦肉变色后，盛出备用。

3.切好蒜末和小米辣，然后另热锅烧油，油热以后，放入蒜末和小米辣爆香，接着倒入蒜苔大火翻炒，再加入适量的食盐调味，继续翻炒至蒜苔断生。

4.最后再加入炒好的瘦肉一起翻炒均匀，最后再淋入适量的蚝油提鲜，继续出锅开吃。

六、毛豆烧排骨

食材

新鲜毛豆300克、排骨400克、生姜3片、生抽、少许老抽、食盐、冰糖

制作步骤

1. 排骨冷水下锅，加姜片、少许料酒焯水，撇净浮沫，捞出温水洗净沥干。
2. 毛豆剥壳，取出毛豆粒，清洗干净备用。
3. 锅中少许底油，放入排骨中小火翻炒，炒至排骨微微焦黄。
4. 加生抽、少许老抽、少许冰糖翻炒上色，加入热水没过食材。
5. 大火烧开转小火焖煮30分钟，将排骨焖至软烂入味。
6. 倒入毛豆，继续焖煮15分钟，最后开大火收浓汤汁，加盐调味即可。

七、南瓜蒸百合

所需食材：贝贝南瓜一个、鲜百合两头、蜂蜜一勺、枸杞十克、桂花干少许。

步骤：

1. 贝贝南瓜用刷子刷净外皮，无需去皮，从顶部切开，用勺子挖去瓜瓤和籽。
2. 鲜百合掰开瓣，逐片清洗干净，去掉边缘发黄或破损的部分，沥干水分。
3. 枸杞用温水泡软，捞出沥干；桂花干用清水快速冲去浮尘备用。
4. 将百合瓣均匀填入南瓜盅内，撒上枸杞，淋上一勺蜂蜜。
5. 把南瓜放入蒸锅，盖上南瓜顶部切下的盖子，大火烧开后转中火蒸二十五分钟。
6. 用筷子能轻松扎透南瓜肉即表示熟透，取出后揭开盖子，撒上桂花干。
7. 稍晾至不烫口时，用勺子连南瓜肉和百合一同挖取食用，香甜软糯，老少皆宜。

八、鲫鱼豆腐汤

准备食材: 鲫鱼、豆腐、姜丝、葱花。

做法步骤:

1、鲫鱼清洗干净擦干水分，然后热锅烧油，油热以后，放入鲫鱼油煎。

2、煎至鲫鱼两面金黄后，再加入姜丝爆香，然后倒入没过鲫鱼的开水继续煮开。

3、然后把豆腐切成小块放入，再继续煮三分钟左右。
