清蒸鲈鱼想要肉嫩，别只盯着蒸几分钟，这几个细节更值得留意

一条鲈鱼，几片姜，一小把葱，就能做一道适合家常餐桌的清蒸鱼。鱼肉本身味道清鲜，配一碗米饭和一盘蔬菜，调味不用复杂，吃起来也有满足感。
清蒸鱼看着简单，容易遇到的情况却不少：鱼背较厚的地方没熟，薄薄的鱼尾已经发柴；或者盘里积水太多，把调味汁冲淡。解决这些问题，需要同时留意鱼的大小、摆放方式和熟度，不能只背一个固定时间。
## 两至三人份食材
鲈鱼1条，购买重量约500—600克，请商家去鳞、去鳃、去内脏；姜15克，葱20克。调味准备生抽10毫升、温水10毫升、食用油8克。
准备一个放得下整条鱼的耐热浅盘，预计制作25—35分钟。鱼的购买重量包含鱼头和鱼骨，不能全部算成能吃到的鱼肉。人数较多时，可以搭配其他菜，不必一味选择特别大的鱼。
这里使用普通生抽兑水调味，如果改用蒸鱼豉油，应根据产品咸度调整用量，通常不需要再额外给鱼抹盐。
## 清理干净，鱼身擦去多余水分
检查鱼腹和鱼鳃位置是否处理干净，清理残留血水后，用厨房纸轻轻吸去表面水分。鱼身较厚的一侧可以浅划一两刀，方便观察熟度，刀口不要深到把鱼肉切散。
姜一半切片、一半切细丝；葱白切段，葱绿切丝。葱丝可以用干净凉水稍泡，沥干备用。处理生鱼的刀板和接触面及时清洁，再处理直接入口的配料。
不用把鱼泡在大量料酒里，也不用裹上厚厚调料。鱼的新鲜程度和清理情况，对成品味道更重要。
## 水开上汽后再入锅
蒸盘底部放几段葱白和几片姜，让鱼身与盘底稍微隔开；鱼腹放入剩余姜片和少量葱段。不要把鱼腹塞得太满，也不要用大量配菜把鱼盖住。
蒸锅加足量水，烧开、蒸汽稳定后放入鱼盘，盖好锅盖，保持持续上汽。这个大小的鱼可以先蒸约10—12分钟，再检查最厚部位，实际时间会随鱼身厚度、入锅温度和锅具变化。
检查靠近鱼背、紧贴主骨的厚肉处，鱼肉应由半透明转为不透明，能够较容易分开，没有明显生肉状态。如果仍未熟透，继续蒸后再检查，不能只看鱼眼或鱼皮判断。
## 蒸鱼水适量倒去，再淋调味汁
鱼熟后关火，小心取出盘子。盘里如果积了较多水，可以倾斜盘子倒去大部分，留下少量即可；夹出蒸软的葱段和姜片。
把生抽与温水混合，沿鱼身两侧淋入，不必集中倒在一小块鱼肉上。鱼身铺上姜丝和沥干的葱丝。小锅把油加热至流动明显、尚未冒烟，关火后小心淋在葱姜丝上。
热油主要是增加葱姜香味，8克已经能起到作用。如果更喜欢清淡口味，也可以减少用油。鱼肉应在淋油前就蒸熟，不能依靠最后这一勺热油补熟内部。
## 营养搭配，别只吃鱼不吃菜
鲈鱼能为这餐提供蛋白质，但清蒸做法并不意味着整餐营养已经齐全。鱼本身不能代替蔬菜和主食，可以搭配清炒油麦菜、焯拌菠菜以及适量米饭。
调味汁中的生抽含盐，鱼已经有鲜味，通常不需要另外准备重口蘸料。吃的时候夹鱼肉、蘸少量盘汁即可，不必为了“精华”把整盘汁都拌进饭里。
鲈鱼仍然有鱼刺，分餐时要仔细检查，鱼头和鱼腹附近尤其需要留意。清蒸鱼适合现做现吃，按一餐需要选择大小，更容易兼顾口感和分量。
