酱香鸡蛋，一口香迷糊的米饭杀手

每次不知道吃什么的时候，我的脑子里总会自动弹出这道酱香鸡蛋。它就像个随叫随到的老朋友，不用复杂的食材，不用漫长的等待，十几分钟就能端上桌，却总能让人吃得满嘴留香，连米饭都要多扒两碗。记得刚工作那会儿，租的房子小得连个像样的厨房都没有，只有一口小电锅。有次加完班回到家，饿得前胸贴后背，翻遍了冰箱只有几个鸡蛋。我凭着记忆里的味道，随便调了个酱汁一炒，结果那股咸香浓郁的酱味一飘出来，整个人都被治愈了。从那以后，这道菜就成了我的“应急神菜”，不管多累多晚，只要吃上这一口，就觉得生活又有了盼头。

做这道菜，最关键的秘诀全在那碗“万能酱汁”里。拿个空碗，按照“22211”的比例来调：2勺生抽提鲜，2勺香醋解腻增香，2勺蚝油让酱汁更浓稠挂味，1勺番茄酱或者白糖来平衡咸味、增加醇厚感，最后加1勺玉米淀粉勾芡。再倒入半碗清水，用筷子搅和均匀，让淀粉彻底化开。这碗酱汁就是这道菜的灵魂，提前调好放在一边，炒的时候就不会手忙脚乱。

鸡蛋的处理也有讲究。打4到5个鸡蛋的时候，往里面滴几滴料酒或者白醋去腥，再加一小勺清水，用筷子朝着一个方向使劲搅打，直到蛋液表面浮起一层细密的泡沫。加水和充分搅打是让鸡蛋蓬松滑嫩的关键，千万别偷懒。接着把锅烧到微微冒烟，倒入比平时炒菜多一倍的油，油热后把蛋液从高处一次性倒进去。你会听到“刺啦”一声，蛋液边缘迅速膨胀鼓起，这时候别急着翻动，等底部凝固、边缘变得焦黄蓬松了，再用锅铲从边缘往中心轻轻推，让没凝固的蛋液流到锅底。等大部分蛋液凝固但中心还有点湿软的时候，就划成大块盛出来，这时候的鸡蛋七八成熟，内部特别嫩。

最后一步就是让鸡蛋和酱汁完美融合。锅里留点底油，用中小火爆香葱白段和蒜末，然后把调好的酱汁再次搅匀，沿着锅边淋进去。转中火不停地搅拌，你会看到酱汁慢慢变浓稠，冒出绵密的大泡，变得油亮亮的。这时候赶紧把炒好的鸡蛋块倒回去，转大火快速翻炒，让每一块鸡蛋都裹上浓稠的酱汁，整个过程十几秒就够了，炒久了鸡蛋会变老。出锅前撒上一把新鲜的葱花，利用余温翻拌两下，就可以装盘了。
