香酥干炸蘑菇，比肉还香的家常小零食

我家餐桌上哪道菜一上桌就被抢光，那绝对非干炸蘑菇莫属。每次刚炸好端上桌，弟弟就第一个冲过来偷吃，烫得直吸气也不肯松手，那副馋样儿每次都能把全家人逗笑。别看它只是普普通通的平菇，裹上面糊下锅一炸，外酥里嫩，撒上辣椒粉和椒盐，那香味儿能飘满整个屋子，比肉还好吃，真的是谁吃谁知道。

其实这道菜的做法特别简单，根本不用什么大厨手艺，厨房新手也能轻松搞定。首先咱们得准备食材，平菇是主角，大概买两朵就够了，再准备两个鸡蛋、一包淀粉、一点面粉，还有辣椒粉、椒盐、盐这些调味料。先把平菇撕成小条，不用撕得太细，稍微宽一点炸出来口感更好，撕好后用清水多洗几遍，把里面的杂质洗干净。这里有个小技巧，洗好的蘑菇一定要挤干水分，可以用手攥着使劲挤，或者放在漏勺里压一压，水分挤得越干，炸出来的蘑菇就越酥脆，不容易回软。

接下来就是调面糊，这可是干炸蘑菇酥脆的关键。拿一个大碗，打入两个鸡蛋，再加入淀粉和面粉，比例大概是1:1，淀粉多一点会更脆，面粉多一点会更酥，我一般喜欢各放三勺，然后加一点点盐和五香粉调味，慢慢加清水搅拌，调成那种能挂在筷子上缓缓流下来的稠度就行，太稀了挂不住糊，太稠了炸出来面皮太厚。把挤干水分的蘑菇倒进面糊里，用手抓匀，让每一根蘑菇都均匀裹上面糊，这样炸出来才会外酥里嫩。

起锅烧油，油温大概六成热的时候就可以下锅了，怎么判断油温呢？把筷子插进油锅里，周围冒出密集的小泡泡就说明可以了。把裹好面糊的蘑菇一根一根放进油锅里，别一股脑全倒进去，容易粘在一起，中火炸到蘑菇定型、表面微微发黄就捞出来，大概炸两三分钟就行。等油温再升高一点，把炸好的蘑菇倒进去复炸三十秒，这一步能让蘑菇更加酥脆，而且不容易回软，复炸完捞出来控油，趁热撒上辣椒粉和椒盐，翻拌均匀就可以开吃了。

现在我自己在家也经常做这道菜，每次做都觉得特别有成就感，看着家人吃得津津有味，心里就美滋滋的。干炸蘑菇不仅好吃，还特别健康，蘑菇本身营养丰富，富含蛋白质和多种维生素，比那些油炸的膨化食品强多了。周末在家的时候，不妨试试做这道干炸蘑菇，做法简单，食材便宜，全家人都会喜欢的。记得一定要趁热吃，放凉了口感会差一点，要是放凉了，也可以用空气炸锅复热一下，又能恢复酥脆的口感啦。
