豆皮别再凉拌了！卷上肉馅煎一煎，外焦里嫩，孩子连吃三个停不下来

这道菜是我妈的拿手绝活，每次家里来客人，她必做这个。说实话，我第一次吃的时候还纳闷：豆皮卷肉？听着平平无奇啊。结果一口下去，外焦里嫩，鲜香多汁，直接把我征服了。其实做法真没那么复杂，关键就几个小窍门。先说材料：干豆皮几张、猪肉馅三百克左右、葱姜蒜适量、生抽、蚝油、盐、胡椒粉、淀粉，齐活儿。

豆皮买回来先用温水泡软，大概泡个十来分钟就行，别泡太久，不然容易烂。泡好后捞出来沥干水分，裁成合适大小的方块，备用。肉馅是这道菜的灵魂。我习惯用三分肥七分瘦的猪肉，太瘦了口感柴，太肥了又腻。肉馅里加葱姜末、一勺生抽、半勺蚝油、少许盐和胡椒粉，再打一个鸡蛋进去，顺着一个方向搅上劲，搅到肉馅有点黏糊糊的感觉就对了。这一步别偷懒，搅上劲的肉馅吃起来才弹牙。

接下来就是卷了。取一张豆皮，铺平，放上一勺肉馅，别贪多，不然卷的时候容易爆。从一头慢慢卷起来，卷紧一点，收口朝下摆好。卷的时候手轻一点，豆皮泡软后挺娇气的，用力过猛就破了。煎的时候锅要烧热，倒少许油，油温五成热就把肉卷放下去，收口朝下先煎，这样不容易散开。中小火慢慢煎，别着急翻面，等一面煎到金黄再翻。两面都煎黄了，加半碗水进去，盖盖焖个三五分钟，让里面的肉馅熟透。最后大火收一下汁，撒点葱花，出锅！
