秋分，别总吃大鱼大肉，多吃4样温润家常食，润燥又健脾

秋分至。这一天昼夜均分，寒暑相平，此后凉意渐深，燥气当令。老话说“秋分不养，一年白忙”，此时饮食最忌盲目贴秋膘，大鱼大肉反而加重脾胃负担，助燥生痰。真正懂吃的人，会顺应时节，把目光转向田间地头那些温润朴实的家常食材。它们不张扬、不昂贵，却能以柔和之力润肺燥、健脾胃，让身体在季节转换时安稳过渡。今日便分享四道秋分家常食，做法简单，滋味绵长，愿你在这个秋天，吃得温润，过得舒坦。

【第一道：山药百合小米粥】

所需食材：铁棍山药200克，鲜百合1头（或干百合20克），小米80克，红枣5颗，枸杞10克，清水1200毫升，冰糖适量。

步骤：

1. 小米淘洗两遍，不要用力搓，以免营养流失，洗净后沥干备用。

2. 铁棍山药削皮，注意戴手套防痒，切成滚刀小块，泡在清水中防氧化。

3. 鲜百合掰开洗净，去掉根部发黄部分；若用干百合，提前温水泡发30分钟。

4. 红枣洗净去核，枸杞用清水略泡，捞出沥干。

5. 锅中加1200毫升清水，大火烧开后放入小米和红枣，转小火煮15分钟。

6. 加入山药块，继续小火慢煮20分钟，期间偶尔搅动防粘底。

7. 最后放入百合和枸杞，再煮5分钟，加冰糖调味，关火焖3分钟即可。

2. 小米煮粥要开水下锅，这样米粒易开花，粥更香浓，且不易糊底。

3. 百合最后放，煮太久会化掉，影响口感和卖相；冰糖量依个人口味增减，秋分宜少糖。

【第二道：莲藕花生排骨汤】

所需食材：莲藕2节，排骨400克，红衣花生50克，生姜3片，料酒1勺，盐适量，清水1500毫升，小葱1根。

步骤：

1. 排骨斩块，冷水下锅，加料酒和两片生姜，焯水去血沫，捞出温水冲净。

2. 莲藕去皮，切滚刀块，泡入淡盐水中防止发黑。

3. 红衣花生提前用温水浸泡30分钟，捞出备用。

4. 砂锅中加1500毫升清水，放入排骨、花生和剩余姜片，大火烧开。

5. 水开后撇去浮沫，加入莲藕块，转小火慢煲1小时。

6. 煲至莲藕粉糯、排骨脱骨，加适量盐调味，再煮5分钟。

7. 关火后撒上葱花，加盖焖2分钟，让葱香融入汤中即可。

【第三道：南瓜红枣蒸百合】

所需食材：老南瓜300克，鲜百合1头，红枣6颗，枸杞5克，蜂蜜1勺，干桂花少许。

步骤：

1. 老南瓜去皮去瓤，切成约1厘米厚的片，整齐码入盘中。

2. 鲜百合掰瓣洗净，去掉边缘发黄部分，沥干水分。

3. 红枣洗净去核，切成小条；枸杞用清水泡软后捞出。

4. 将百合瓣均匀铺在南瓜片上，再撒上红枣条和枸杞。

5. 蒸锅加水烧开，放入盘子，大火蒸12分钟至南瓜软熟。

6. 取出后淋上一勺蜂蜜，撒少许干桂花增香。

7. 稍晾2分钟即可食用，温热时口感最佳。

2. 蜂蜜待蒸好后再淋，高温会破坏其营养，若给一岁以下幼儿食用则不加蜂蜜。

3. 百合易熟，蒸太久会化，12分钟足够；若南瓜片切得较厚，可适当延长3分钟。

【第四道：银耳雪梨羹】

所需食材：干银耳1朵，雪梨1个，枸杞10克，冰糖30克，清水1000毫升，红枣4颗。

步骤：

1. 干银耳提前用冷水泡发2小时，去掉根部黄色硬蒂，撕成小朵。

2. 雪梨洗净去皮去核，切成滚刀小块，泡淡盐水防氧化。

3. 红枣洗净去核，枸杞用清水略泡后沥干。

4. 锅中加1000毫升清水，放入银耳和红枣，大火烧开。

5. 转小火慢炖40分钟，至银耳出胶、汤汁变稠。

6. 加入雪梨块，继续炖15分钟，让梨的清甜融入羹中。

7. 最后放枸杞和冰糖，煮3分钟至冰糖融化，关火焖5分钟即可。
