天天做饭没新意吗？11道家常菜换着做，荤素搭配，全家抢着吃

最近我在厨房里最常听到一句话：怎么又是这些菜？我也不是没变花样啊，可家里人对“菜的期待”就像孩子对玩具的期待——你不换口味，他就觉得你在糊弄。

我家以前也是这样。老人吃得慢、牙口一般；孩子一上桌就先找自己爱吃的；我呢，还要盯着他吃几口、再顺手把老公那碗盛好。久而久之，锅铲一拿起来，人就有点发懵：做什么好？怎么做才不费劲还像样？

后来我才想明白，问题不在厨艺，**在搭配**。一桌菜别太“单线条”，要有荤有素、有鱼有肉，豆制品、菌菇、绿叶菜各占一点分量。不是为了显摆，是为了让肠胃和胃口都舒服。你一轮搭好了，下次再做就不慌了，心里也有底。

我把家里最常轮着做的11道，给你按“有看头、有下口、有营养”的思路整理出来。难度不算高，关键是手上有顺序，不会越忙越乱。

先从水产那几道开始。水产这块要是做得对，整桌就立得起来，老人孩子也更愿意吃。

第一道：黑鱼片酸菜香葱那种味道

黑鱼片想滑嫩，真不是靠运气，全靠腌。鱼片不用太大讲究，我一般拿到手就先称个大概，比如400克左右，撒盐、料酒、白胡椒粉打底，再拌半个蛋清，最后加12克淀粉把水分锁住。腌10分钟就行，不要久，不然反而会发柴。

锅里先炒香姜丝、蒜片、花椒，顺手来一小把酸菜（我喜欢那种80克左右的量），添水烧开后，鱼片下锅要“轻轻拨散”，看到变色就立刻停手。最后撒葱段，浇一圈滚油，那一下“刺啦”声，家里人基本不用叫就会凑过来。

第二道：罗氏虾蒜蓉要玩“金银蒜”

罗氏虾想吃出层次感，我最怕大家只会一锅蒜蓉糊到底。我的做法是：蒜蓉分两半，一半小火炒到金黄、一半留着生的。等虾剪背去虾线，把虾煎到壳卷起来、发红，再把调料和两种蒜蓉一起焖个四五分钟。蒜蓉的香会进虾肉里，吃起来不单是“辣香”，是那种很圆的蒜香。

第三道：蛏子配丝瓜，鲜和清得刚刚好

蛏子这东西，怕的不是贵，是沙子。我一般提前处理：400克蛏子用盐水吐沙两三个小时，水微沸下锅，壳一开立马捞，不要让它继续煮，壳开得慢慢的就说明里面已经开始出水变老了。

丝瓜切滚刀块，大火快炒，倒回蛏肉，再加一勺过滤过的原汤。总共别超过一分钟。你要是手一抖多炒个两三秒，丝瓜就会软塌出水，鲜味也会跟着跑掉。

第四道：鱿鱼条爆炒，记住一个字“快”

我做鱿鱼，最怕家里人喊“再炒一会更入味”。不会更入味，只会更老。鱿鱼条焯水40秒，捞出沥干，爆炒两分钟就可以出锅了。配160克蒜苔很香，出锅前撒6克孜然粉，香气到厨房外面都挡不住。下饭的时候，孩子一般不需要我劝。

水产这四道够撑场面了。接着来点豆制品和菌菇，肠道舒服了，老人说话也更有劲，孩子也更愿意坐下来。

第五道：腐竹炒木耳，清爽又管用

腐竹和木耳我一直觉得是“餐桌清道夫”的搭档。腐竹补植物蛋白和钙，木耳负责膳食纤维。做的时候焯水两分钟去豆腥味，青红椒切好，大火快炒，最后淋一碗调好的料汁。口感一定要脆，别闷锅，闷就软塌。

第六道：口蘑炒梅头肉，肉香和菌香一口就懂

还有三道蔬菜和蛋类，是让全家胃口大开的“收尾选手”，特别适合周中随手端上桌，不费心但不敷衍。

第八道：长茄子酸甜外酥里嫩

茄子我不削皮，切条拍上80克淀粉。油温六成下锅炸到外皮金黄捞出。锅里用生抽、香醋、白糖调个酸甜汁，比例我不死算，按口味来：12毫升香醋、18克白糖左右，再加点生抽提底味。汁烧到微稠立刻倒回茄子快速翻拌。孩子抢着吃的那种酸甜，不是腻，是开胃。

第九道：西葫芦快炒肉沫，三分钟就能解决

西葫芦450克切细条，配180克肉沫，再来一勺豆瓣酱。大火两三分钟搞定。水分多的菜别慢慢来，慢了就软、也没脆嫩的口感。微辣带鲜，看着不起眼，端上桌照样光盘。

第十道：煎荷包蛋配料汁，别再只会撒盐

煎荷包蛋这事儿谁都会，但吃起来普通的人是因为“你只煎了鸡蛋，没有给它一个舞台”。我一般煎好后，用生抽、蚝油调个料汁，青红椒圈一烧，把料汁淋上去。鸡蛋卵磷脂多、蛋白也足，便宜又养人，关键是香味一出来，孩子会主动把碗端过来。

第十一道彩头菜：白菜卷肉蒸12分钟，家宴感拉满

这道我就喜欢它的“仪式感”。8片大白菜烫软，卷上用香菇、胡萝卜调好的250克猪肉馅，卷紧一点。上锅蒸12分钟，蒸出来的原汤别倒掉，取一些加生抽蚝油勾薄芡，再淋回盘里，撒点葱丝红椒丝。名字我会私底下跟家里人说成“百财聚来”，不是迷信，就是图个好彩头。反正上桌后，客人看着就觉得你认真。

说真的，做菜最怕的不是翻车，是“天天重复导致心累”。我现在轮着来，一周三五次进厨房也不慌，都是同一套逻辑：水产撑口感、豆菌撑营养、蔬菜蛋类撑胃口，再用一两道“看得见的精致”把氛围带起来。

如果你也想让家里吃饭不将就，可以试试这个组合：一餐里至少有一盘水产或肉类主菜，再配一盘豆菌或汤，再加一盘蔬菜快手菜，最后用鸡蛋/卷菜这种“容易讨喜的”收一下。你会发现，老人能吃出味道，孩子能吃下去，你自己也不至于做完饭像打了一场仗。
