再说白菜。秋白菜在北方人眼里，不只是菜，多少还带着点季节记忆。过去一到秋末冬初，家里就会买几棵大白菜，囤在院子里，像是把过冬的底气先放好。现在虽然不用再成车往家里拉白菜了，但清炒白菜这口，还是很多人离不开。原文里特别提到菜帮和菜叶分开炒，这个做法很讲究。菜帮先下锅，耐炒，吃起来脆；菜叶后下，火大快翻，出水少，口感还能保持清爽。要是手法不对，白菜一出水，整盘菜就会塌，味道也散了。
