末伏尾声多吃4道温性家常菜，护住阳气，秋冬就不怕冷

末伏这几天，最容易在饭桌上犯迷糊。天还热着，嘴里想吃点凉快的，可人一旦贪凉，脾胃先遭罪。山东人讲究一个实在，到了这个节骨眼儿，家里做饭就不能光图痛快，得把温和、开胃、好消化这几样都端上桌。黄鳝、豆腐、紫苏、南瓜，听着都是家常货，可做对了，饭香能把一家老小都拢到桌边。

这几道菜放在一起看，其实路子很清楚。泡椒鳝鱼负责开胃提神，茴香拌豆腐走清爽柔和，紫苏煎蛋简单顶饱，南瓜蒸排骨把主菜和主食感都照顾到了。它们共同的核心，不是猛吃凉菜，不是上来就大鱼大肉，而是借着末伏的节点，少寒凉、多温和，让胃口慢慢顺起来。

先说泡椒鳝鱼。黄鳝300克，先用料酒和姜片抓匀腌10分钟，这一步很关键，去腥是第一关。锅里少量油，姜蒜和泡椒一炒，酸辣味立马出来，闻着就有食欲。鳝鱼段大火快炒，表面收紧后加热水焖8分钟，最后再放盐和生抽收汁，撒葱段出锅。这个做法在很多家常菜里都算干脆利落，火候一到，鳝鱼肉嫩，汤汁挂得住，拌米饭是真下饭。

黄鳝在民间一直是夏末秋初常见的食材。老一辈人常说，黄鳝讲究活、鲜、嫩，做不好腥气重，做好了就是一口香。营养上，黄鳝蛋白质含量不低，脂肪相对适中，还含有一定的维生素A、B族维生素和矿物质。只不过这东西也不是谁都能放开吃，泡椒一上，刺激性就出来了，上火长痘、咽喉肿痛的人，吃多了容易觉得嗓子冒火，痛风、高血压人群也得量着来，别一口气干半盘，那叫嘴过瘾，身体不舒坦。

再看茴香拌豆腐，这道菜就明显温柔多了。嫩豆腐一块，切小块，开水焯1分钟，主要是去豆腥味，也让口感更稳。茴香洗净烫10秒，捞出切碎，蒜末、盐、生抽、香油一拌，往豆腐上一浇，清清爽爽就能上桌。别看做法简单，吃到嘴里那个味道很顺，茴香特有的香气能把豆腐的淡味提起来，简单，但不寡。

紫苏煎蛋这道菜，像是家里最省事的一位主力。紫苏叶洗净切碎，鸡蛋3个打散，加一点盐，再把紫苏碎拌进去，平底锅里少油中小火慢煎，两面金黄，切块装盘，麻利得很。很多山东家庭早上赶时间，或者晚上下班晚了，就特别需要这种能顶事的菜。它不折腾锅灶，也不挑厨艺，几分钟就能把饭桌撑起来。

紫苏在老话里很有存在感。夏天很多人喜欢拿它煮水、做菜，图的就是那股特别的香味。紫苏叶里含有一些挥发性成分，做熟以后香气会更稳，跟鸡蛋一搭，能把蛋香带出层次。鸡蛋本身就是很实在的营养担当，优质蛋白、脂肪、卵磷脂、维生素都不缺。山东人饭量大，光吃个馒头不顶事，配上一盘紫苏煎蛋，孩子能多吃半碗饭，大人也觉得肚里有底。体质燥热、容易盗汗上火的人，还是别贪多，吃着舒服最重要。

南瓜蒸排骨就更像是末伏饭桌上的压轴菜。排骨300克先冷水下锅焯水，撇掉血沫，加姜丝、生抽、蚝油、盐腌15分钟。老南瓜切方块铺在盘底，排骨摆上去，水开后上锅大火蒸20分钟。南瓜的甜味会慢慢渗到肉里，排骨的油香也会被南瓜吸住，蒸出来不腻，盘底还有点自然汤汁，拿勺子一浇，米饭都省了菜码。

这道菜最聪明的地方，是把主菜和配菜绑在一起做。排骨负责香，南瓜负责软糯和回甜，蒸的方式比煎炸少油，吃起来也更适合夏末。南瓜里有一定的膳食纤维和β-胡萝卜素，颜色黄澄澄的，端上桌看着就有食欲。可南瓜也不是越多越好，糖尿病人要控制量，湿气重、容易腹胀积食的人也得少吃点，不然再好的东西，进了肚子也得闹脾气。

这些食材放一起，背后其实是同一个思路。末伏天气还热，很多人一不留神就开始猛喝冰水、猛吃凉拌菜，觉得过瘾。可脾胃这东西，不像钢铁锅，哪经得起天天折腾。古人说秋后宜养，现代营养学也讲，季节交替时饮食要更稳一点，少生冷、少油腻、少刺激，让胃肠别老处在“加班”状态。
