美食推荐：茶香干炸仔排、香辣红烧肉、金钩芹菜的制作方法是什么

山东人做饭，有个老理儿，讲究家常里带点门道，实在里带点讲究。像这一桌菜，仔排先用茶汤上浆，再两次下油锅，外壳酥脆，里面还带着肉汁；五花肉先煸香、下酱、再炸、再回锅，香辣味一层压一层；芹菜配海米、海带、火腿，清爽里还带着鲜劲。看着是三道菜，实际上把炸、煨、拌三个路子都走明白了，核心就一个字，稳。

先看茶香干炸仔排。很多人炸排骨，最怕两个事，一个是外皮糊了，里头还没熟透；另一个是出锅放一会儿就塌，油味重得很。这个做法里先用清水浸泡半小时，把血水尽量去掉，再用姜葱蒜、生抽、料酒、白糖、五香粉、白胡椒腌30分钟以上，先把底味打进去。茶叶不是随便摆样子，是泡成茶汤，放凉后拿来上浆，这一步很关键，茶汤既能去腥，也能让肉质多一点松劲，不至于炸完像柴火棍。

茶汤上浆这事，不是噱头。老辈人泡茶讲究水温，做菜也是一个理儿，热茶汤不能直接往肉里怼，容易把表层弄散，冷却后的茶汤更适合拌肉。再加干淀粉、面粉，少许泡打粉，表面挂一层薄浆，炸的时候更容易形成酥壳。很多家常菜为啥总差口气，就是少了这种看着不起眼、其实顶事儿的细活。

炸制也有讲究。六七成热先初炸，目的不是图快，是让排骨先定型、熟透、锁住汁水。筷子插进去周围冒密集泡，这时候下锅比较稳。初炸出来颜色微黄就捞，别贪心。真要一锅炸到金黄，外边老了，里面也容易发干。等油温升到八九成热，再复炸30秒，外壳一下子立起来，油脂逼出去，吃起来才有脆劲。山东人爱说，做菜别毛毛糙糙，火候拿不准，锅里就给你脸色看。

最后那一下回锅裹茶，味道就出来了。泡过的茶叶沥干水分，小火煸到酥脆，再把炸好的排骨倒回去翻两下，让茶香贴在排骨表面。这个细节很像做事，前面把底子打好了，最后就差一点点收口。熟白芝麻一撒，香气立马往外窜，孩子一闻，筷子都得先动起来。家里那俩小子要是遇到这种排骨，基本不用喊第二遍。

这道菜最打动人的地方，不是茶香多高级，而是把油炸做出了层次。很多地方做排骨，偏重甜口或者重辣口，山东这边更讲究肉要有肉味，外皮要脆，里面要嫩，香气不能飘得虚头巴脑。茶叶本来就有去腻的本事，搭上排骨，油香不冲，吃着也不容易腻嘴。红茶厚一点，绿茶清一点，家里有什么就用什么，不用整得太玄乎。

再看香辣红烧肉，这道菜一上桌，基本就是下饭界的硬菜。原料不复杂，五花肉400克，土豆条75克，青红椒圈、洋葱粒，再加排骨酱、沙茶酱、煲仔酱，这些酱料往一起一碰，味道马上就立住了。五花肉先切块煸香，这一步很重要，肥肉里的油得先逼出一点，不然后面炖出来会发闷。再下酱翻炒，酱香先裹住肉，接着掺鲜汤，小火煨灯巴，肉才会慢慢入味。

这里说的煨灯巴，就是那种小火慢慢收，别急着大滚。火一大，肉块容易散，酱汁也容易乱跑。等五花肉煨到有点软烂的意思，再捞出来下六成热油锅里炸一下。很多人一听炸红烧肉就觉得多余，其实这是让表面收紧，口感更扎实，吃的时候不至于一夹就散。土豆条也先炸熟，垫在盘底，吸一点汤汁，软糯里带点酱味，妥妥的下饭搭子。

干辣椒节、干花椒、洋葱一起炒香，再把炸过的红烧肉和青红椒圈下锅翻炒，这个味道就不是单纯的咸香了，麻、辣、酱香、肉香都在。青红椒圈不是摆设，主要是提色提鲜，也给油腻的肉口一个缓冲。盐、味精、鸡精这些调味一收，最后撒葱花，盘子一端出来，香味能钻到隔壁屋去。家里人围桌一坐，谁先动筷子，谁就能先抢到那块带焦边的肉。

这道菜的底层逻辑，其实还是山东人熟悉的路数，重火候，重层次，重实在。肉先煸、再煨、再炸、再炒，不是多此一举，是一层一层把香味往里压。很多新手做红烧肉，最容易图省事，肉一锅炖到头，最后味道散，外形也塌。真正能把红烧肉做出饭店口感的，往往不是调料多，而是步骤舍得花功夫。

说到金钩芹菜，这道菜就像一桌硬菜旁边的清风，不抢戏，但很要紧。海米25克，芹菜150克，水发海带50克，熟火腿25克，配盐、白糖、香油、料酒、味精。海米先泡发，芹菜去老叶切段，海带切丝，火腿切细丝。芹菜先用沸水烫到碧绿嫩脆，海带也烫软烫熟，再和海米、火腿拌在一起。

这道菜看着简单，其实很考验对食材脾气的理解。芹菜最怕煮过头，一过火就蔫，颜色发暗，口感也没了。沸水一烫就起，马上过拌，才能保住脆。海带丝和火腿丝一搭，鲜味就多了一个层次，海米撒在上面，像是给整盘菜点了眼。香油一淋，味道立刻活过来，清爽、鲜、脆、软都能找着。

这盘菜的价值，在于它能把前面两道肉菜的厚重压一压。家里吃饭，最怕一桌子全是大鱼大肉，吃到后面嘴里发干，胃里也顶。芹菜这时候就像个好搭档，帮着把桌面上的油腻感往下拉一拉。再说芹菜本身纤维多，含水足，春夏秋冬做来都合适，尤其家里有老人小孩时，桌上有这么一盘，吃得更顺口。

说到底，做饭这事不是比谁摆盘好看，也不是比谁词儿说得玄，还是看你能不能把家常菜做出让人惦记的味道。仔排要酥而不柴，红烧肉要香而不腻，芹菜要脆而不老，这三样摆一桌，既有肉的厚，也有菜的清，热热闹闹，像山东人过日子一样，直来直去，踏踏实实，饭桌上不玩虚的。
