“白露吃八宝，不往医院跑”，白露后，建议多吃八宝，润秋燥

老辈人常说“白露吃八宝，不往医院跑”，过了白露节气，风里都裹上了秋凉的干意——嘴唇掀皮、嗓子发痒、连大便都燥得发堵，这时候别急着囤补品，桌上摆对8样家常润燥宝，顺顺当当度过秋凉天。今天就把这“润燥八宝”的详细做法给你摆明白，厨房新手零失败，吃完浑身润得舒服。

一、雪梨莲藕猪骨汤

食材清单： 雪梨、莲藕、猪骨、红枣、姜片、松鲜鲜（或盐）。

做法步骤：

1.猪骨冷水下锅焯水洗净。

2.锅里放少许油加姜片，放入猪骨翻炒2分钟炒出香味，倒入莲藕和适量热水，煲30分钟。

3.倒入雪梨和红枣再煲20分钟，最后加松鲜鲜调味即可。

二、黄豆炖猪蹄筋

食材

干黄豆120克、泡发猪蹄筋250克、生姜3片、大葱一段、少许生抽、少量食盐

做法

1.黄豆提前一晚冷水浸泡，充分泡胀；猪蹄筋清洗干净切段。

2.黄豆冷水下锅，小火先炖煮40分钟，煮到黄豆微微变软。

3.放入猪蹄筋、姜片、葱段、少量生抽，继续小火慢炖50分钟。

4.全程保持小火，炖至黄豆完全绵糯，蹄筋软糯。

5.出锅前放入适量食盐调味即可。口味清淡，少放酱油，保持食材本味。

三、泡椒炒猪肚

食材

处理好的熟猪肚450克，泡椒12个，泡椒水3勺，香菜4根，生姜3片，大蒜5瓣，生抽1.5勺，料酒1勺，食用油3勺

做法步骤

1. 熟猪肚切成宽条。生姜切片，大蒜切片。泡椒对半剪开，香菜切成长段。
2. 锅里烧开水，下入猪肚条，加1勺料酒，姜片，焯水2分钟。捞出来沥干水分备用。
3. 锅烧热倒入食用油，油热放入姜片蒜片，泡椒，小火翻炒1分钟炒出酸辣香味。
4. 倒入沥干的猪肚条，转大火快速翻炒2分钟。
5. 加入泡椒水，生抽，继续大火翻炒1分半钟，让猪肚吸满酸辣味道。
6. 最后倒入香菜段，快速翻拌十几秒，香菜变软立刻关火出锅。

四、丝瓜蒸牛肉

准备食材

牛里脊200g、嫩丝瓜1根、姜丝、少许盐、白胡椒粉、半勺生抽、少许淀粉

制作步骤

1. 牛里脊逆着纹理切薄片，剔除所有筋膜，保证口感嫩滑不塞牙。
2. 牛肉片中加入姜丝、少许盐、白胡椒粉、半勺生抽、少许淀粉。
3. 少量多次加清水抓匀，抓至肉片水润粘稠，腌制15分钟锁水入味。
4. 丝瓜去皮洗净，切成均匀厚片，平铺在盘底打底。
5. 把腌好的牛肉片均匀铺在丝瓜上面，平铺摊开，受热均匀熟得快。
6. 水开上锅，大火蒸12分钟即可，切记不要久蒸，避免牛肉变老发硬。
7. 蒸出的原汤保留不动，锁住全部营养和鲜味。
8. 牛肉嫩滑、丝瓜清甜，低脂高蛋白，清爽不油腻，掉秤超给力。

五、炒白扁豆胡萝卜肉片

食材

炒白扁豆60克、胡萝卜1根、猪瘦肉180克、大蒜2瓣、少许食盐

做法

1.炒白扁豆提前浸泡2小时，放入锅中加水先煮20分钟，煮到八分熟捞出；白扁豆一定要彻底煮熟。

2.瘦肉切薄片，少许盐抓匀腌制十分钟；胡萝卜去皮切成薄片。

3.热锅烧油，下入肉片滑炒至变色盛起备用。

4.锅中留底油，蒜末爆香，下入胡萝卜片翻炒两分钟。

5.放入煮好的白扁豆、肉片，放适量盐，大火翻炒均匀，再加两勺清水焖五分钟，全部熟透即可出锅。

六、百合莲子银耳羹

所需食材：干银耳半朵（约20克）、新鲜百合100克（或干百合30克）、去芯莲子50克、红枣6颗、枸杞10克、冰糖适量、清水约1.5升。

步骤：

1. 干银耳提前用冷水浸泡2小时，待完全涨发后剪去根部黄色硬蒂，撕成小朵，越小越易出胶。
2. 莲子洗净，若用干莲子需提前浸泡1小时，并检查是否去芯干净，避免苦味。
3. 将银耳碎与莲子一同放入砂锅，加入足量清水，大火烧沸后立即转小火，慢炖40分钟，期间需偶尔搅拌防粘底。
4. 新鲜百合逐瓣掰开，清洗掉泥土和鳞片边缘的黑色部分；红枣洗净去核，剪成圆片状。
5. 银耳炖至汤汁微稠、莲子粉糯时，加入红枣片和百合瓣，继续小火炖煮15分钟，百合呈半透明状即可。
6. 放入枸杞和冰糖，冰糖用量视个人甜度喜好，再煮5分钟至冰糖完全融化。
7. 关火后不揭盖，利用余温焖10分钟，使胶质更浓，口感更润滑。

七、板栗炖鸡

食材准备

新鲜板栗 300g 土鸡 半只（斩块） 生姜 5 片、大葱 1 根 八角 2 棵、桂皮 1 小段 生抽 2 勺、老抽 1 勺、料酒 2 勺 冰糖 10g、盐、食用油 适量

做法步骤

土鸡剁成块，清水浸泡 20 分钟泡出多余血水，捞出沥干水分。

处理板栗（关键）：板栗外壳划一道小口，放进沸水煮 3 分钟，趁热剥掉外壳和内膜；放凉之后内膜容易粘连果肉，很难剥除。

锅里放少许食用油，下入冰糖，小火炒到融化，变成漂亮的琥珀色糖色。

倒入鸡块，中火快速翻炒，让每一块鸡肉均匀裹上糖色，炒至表面微微焦黄。

加入姜片、葱段、八角、桂皮，淋入料酒、生抽、老抽，继续翻炒激发出香料香气。

倒入没过全部食材的热水，大火烧开转小火慢炖 25 分钟，再放入板栗仁接着炖 15 分钟。

等到鸡肉软烂、板栗粉糯，加盐调味，开大火把汤汁收得浓稠就完成。

八、雪菜炒茭白

食材

茭白、雪里蕻雪菜、小米辣、蒜末、少许白糖

详细步骤

1、雪菜洗净挤干水分切细末；茭白切小丁或细条。

2、少油下锅，先把雪菜干炒1分钟，炒出咸香，盛出备用。

3、底油爆香蒜末、小米辣，下入茭白翻炒至断生。

4、倒回雪菜混合翻炒，加少许白糖中和咸味、提鲜。
