谁懂啊！这8道菜也太好做了吧，鲜香嫩滑，一周吃三次都不腻

下班推开门只想瘫在沙发上，连点外卖都要刷十分钟纠结选哪家？是不是早就受够了步骤二三十种、配料摆半桌的“网红硬菜”？今天挖到的这8道家常快手菜，不用复杂技巧，厨房新手零失败，鲜香嫩到咬一口就眯眼睛，我家最近一周吃三次都没人喊腻，连厨房小白照着步骤走，20分钟就能端出一整桌硬菜！

一、油焖大虾

【食材】

大虾、小葱、生姜、大蒜、料酒、生抽、蚝油、老抽、番茄酱、白糖、味精、清水、食用油

【做法】

1. 大虾剪去虾脚、虾须，开背挑去虾线，洗净沥干。
2. 调制料汁：碗中加入1勺生抽、1勺蚝油、半勺老抽、1勺番茄酱、小半勺白糖、少许味精和小半碗清水，搅拌均匀备用。
3. 锅中放稍多油，油热后放入大虾，先煎一会儿再翻动。一边炒一边用锅铲轻压虾头，压出红亮虾油。
4. 沿锅边淋入少许料酒，放入蒜末、姜丝炒香。
5. 倒入调好的料汁，翻炒均匀，使大虾裹满酱汁。
6. 撒入葱段，翻炒几下即可出锅。

二、南瓜小米红枣粥

所需食材：小米80克、南瓜200克、红枣6颗、枸杞5克、清水适量。

步骤：

1. 小米淘洗干净，用清水浸泡15分钟，捞出沥干备用。
2. 南瓜去皮去瓤，切成小块，尽量切得均匀一些。
3. 红枣洗净去核，切成小片；枸杞用清水冲洗干净。
4. 锅中加入足量清水，大火烧开后放入小米，再次煮开后转小火。
5. 放入南瓜块和红枣片，用勺子轻轻搅动，防止粘底。
6. 小火慢煮25分钟，期间每隔几分钟搅拌一次，煮至南瓜软烂、小米开花。
7. 最后加入枸杞，再煮2分钟，关火后盖上盖子焖5分钟即可盛出。

三、虎皮鸡爪

所需食材

新鲜鸡爪500g、生姜、大葱、干辣椒、花椒、八角、桂皮、香叶

生抽3勺、老抽1勺、蚝油2勺、冰糖少许、料酒2勺、盐适量

详细制作步骤

1. 处理鸡爪：鸡爪剪去指甲，清洗干净，对半剁开更入味，也更容易啃食。放入清水中浸泡10分钟，泡出里面的血水，减少腥味。
2. 冷水焯水：鸡爪冷水下锅，加入姜片、葱段、2勺料酒，大火煮开。水开后继续煮3分钟，撇干净表面的浮沫，彻底去除腥味和杂质。
3. 浸泡风干（起虎皮关键）：焯好水的鸡爪捞出，用温水冲洗干净表面浮沫，一定要彻底沥干水分、风干表面水分。表面没有水分，炸的时候不会溅油，虎皮纹路才会饱满好看。
4. 油炸定型：锅中多倒一点食用油，油温六成热下入鸡爪，中小火慢炸。炸至鸡爪表面金黄紧绷、起硬壳，全程盖上锅盖防止溅油。
5. 冷水激皮：炸好的鸡爪立刻捞出，趁热放入冰水或冷水中浸泡20分钟！冷热交替是长出饱满虎皮的核心秘诀，泡好的鸡爪纹路清晰、软糯Q弹。
6. 炒香底料：锅中留少许底油，放入冰糖小火炒出枣红色糖色，接着下入葱姜、干辣椒、花椒、八角、桂皮、香叶，翻炒出浓郁香料香味。
7. 炖煮入味：放入泡好虎皮的鸡爪，翻炒均匀裹上糖色。加入足量热水，没过所有鸡爪，放入生抽、老抽、蚝油、少许食盐调味。
8. 焖煮软烂：大火烧开后转小火，盖上锅盖焖煮35分钟。时间到后开大火收浓汤汁，让汤汁牢牢挂在鸡爪表面。
9. 出锅食用：汤汁浓稠裹爪即可关火，放凉一会味道更浓郁。鸡爪轻轻一抿就脱骨，麻辣鲜香、越啃越上瘾，大人小孩都爱吃！

四、南瓜胡萝卜浓汤

所需食材： 南瓜300克、胡萝卜1根、洋葱半个、清水600毫升、淡奶油30毫升（可选）、盐少许、黑胡椒微量。

步骤：

1. 南瓜去皮去瓤，切成小块；胡萝卜去皮切滚刀块；洋葱切丝。
2. 锅中加少许水，放入洋葱丝小火炒至透明出香，不用放油。
3. 加入南瓜块和胡萝卜块，翻炒2分钟让食材略微变软。
4. 倒入清水，水量没过食材约2厘米，大火烧开后转小火炖20分钟。
5. 待南瓜和胡萝卜能用筷子轻松扎透时，关火稍放凉。
6. 将煮好的食材连同汤汁一起倒入搅拌机，打成细腻的糊状。
7. 倒回锅中，小火加热，加入盐和黑胡椒调味，最后可淋入淡奶油搅匀。

五、辣椒炒五花肉

主要材料：五花肉一块；配菜：青椒几个，姜蒜片，花椒，豆豉；调味料：葱姜料酒，老抽，豆瓣酱，盐，蚝油，鸡精。

配菜：青椒，姜蒜片，花椒，豆豉

调料：料酒，老抽，豆瓣酱，盐，蚝油，鸡精

1.五花肉放入冷水中，加入葱，姜，料酒一起煮20分钟，取出切成片。

2.锅里不放油，把五花肉煸炒，再把姜蒜片，花椒，豆豉一起爆香。

3.点一点老抽上色，加入豆瓣酱来炒出红油。

4.放入青椒翻炒至断生后，加入盐，蚝油，鸡精调味翻炒即可出锅。

六、虾仁蒸豆腐蛋

食材：

鲜虾仁8—10只、嫩豆腐半盒、鸡蛋1个、豌豆一小把、姜一片、少许儿童酱油/生抽。

做法：

1. 豆腐切块铺碗底；鸡蛋加1.5倍温水打散，过一下筛倒进碗里（更嫩不蜂窝）。
2. 虾仁去虾线，用姜片腌两分钟去腥，摆在豆腐鸡蛋液上，撒几粒豌豆。
3. 水开后上锅，盖个盘子或保鲜膜扎孔，中火蒸10—12分钟。
4. 出锅淋几滴生抽，别浇热油（孩子吃太油容易腻、影响正餐）。

七、白萝卜烧牛腩

所需食材：牛腩、白萝卜、葱姜、八角、桂皮、料酒、生抽、盐、胡椒粉

制作方法：

1、牛腩切成大小均匀的块，放入清水中浸泡去血水，凉水下锅，烧开后撇净浮沫，捞出冲洗干净，白萝卜刮去老皮，洗净，切成滚刀块。

2、锅中入油，下入葱姜和八角、桂皮爆香，下入牛腩，煸炒至表皮微黄，微微出油，烹入料酒和生抽，炒上色，倒入开水没过牛腩，炖出来，香。

3、大火烧开后转小火，炖至牛腩软烂，下入白萝卜块，继续炖至萝卜软烂，加入盐和胡椒粉调味，开大火收浓汤汁，收汁的时候，勤翻动，别糊锅，即可出锅享用。

八、洋葱黄瓜拌卤牛肉

食材

卤牛腱子肉、黄瓜、洋葱、蒜末、小米辣、生抽、香醋、白糖、香油

做法

1. 卤制好的牛腱子肉切成薄厚均匀的肉片，保证口感紧实不柴。
2. 黄瓜拍裂切段，洋葱切细条备用。锅中烧水，下入洋葱焯烫十秒，捞出过凉去除辛辣味。
3. 准备大碗，放入牛肉、黄瓜、洋葱，加入蒜末、小米辣调味。
4. 依次加入生抽、香醋、少许白糖提鲜，淋上香油充分翻拌。
