中秋，无论有钱没钱，别忘吃“中秋8宝”，平安健康过盛夏！

刚入秋的晚风裹着桂香漫过窗沿，手里的月饼还没拆封，老辈人就总念叨：“中秋哪能光吃月饼？这8样老底子的中秋宝，才是托着平安的底气，不管今年挣多挣少，桌上摆齐了，阖家才能踏实过节。”这8道家常味不用贵价食材，做法零难度，厨房新手也能一次成功，顺着做下来，满桌都是团圆的烟火气。

一、鲜藕排骨汤

食材：粉藕一段、排骨 250g、生姜 3 片、盐 做法

1、排骨冷水下锅，加姜片、料酒焯水，撇去浮沫捞出冲洗干净。

2、莲藕去皮切滚刀块，泡清水防止氧化发黑。

3、排骨、姜片放入砂锅，加足量清水，小火炖 40 分钟。

4、放入藕块继续炖 30 分钟，至莲藕粉糯，出锅加盐调味。

二、无花果雪梨瘦肉汤

食材：干无花果6颗、秋月梨1个、瘦肉250g、蜜枣1颗、姜片、盐

详细做法：

1、瘦肉切块焯水去血沫，洗净备用；无花果冲洗干净；

2、雪梨去皮去核，切大块，保留果皮营养更佳；

3、所有食材放入炖锅，加清水隔水炖煮1小时；

4、食材熟透出味后，加少许盐调味；

5、汤味清甜回甘，不用加糖也很好喝，润燥利咽超舒服。

三、番茄鱼片汤

所需食材

番茄2个、巴沙鱼/龙利鱼、姜片、葱花、盐、白胡椒粉、少许淀粉

详细制作步骤

1. 鱼肉切成均匀薄片，鱼片越薄越容易煮熟入味。
2. 鱼片放入碗中，加少许盐、白胡椒粉、少许料酒抓匀去腥。
3. 加一点点淀粉抓拌均匀，锁住水分，鱼片更嫩滑。
4. 最后滴几滴食用油拌匀，腌制5分钟备用。
5. 番茄去皮切小丁，姜片切好备用。
6. 锅中烧油，下入姜片爆香，倒入番茄丁翻炒出沙。
7. 加入足量清水，大火煮开，煮出浓郁番茄汤底。
8. 转中小火，把腌好的鱼片一片一片分散下入锅中。
9. 不要快速搅动，等待鱼片定型变白。
10. 鱼片全部浮起、微微卷曲，就代表完全熟透。
11. 根据口味加入适量盐、少许白胡椒粉调味。
12. 轻轻推匀汤汁，撒上葱花即可出锅。

四、清蒸多宝鱼

食材： 多宝鱼 / 大葱 / 香葱 / 生姜 / 红椒 / 蒸鱼豉油 / 料酒 / 白胡椒粉

步骤：

1️⃣ 多宝鱼去鳃去内脏洗净，两面打浅花刀，用厨房纸吸干水分，加料酒、盐和白胡椒粉抹匀腌制15分钟。

2️⃣ 大葱切丝，香葱切葱花，姜切丝，红椒切细丝，全部泡冰水卷曲备用。

3️⃣ 盘底铺姜丝和葱段，放上多宝鱼，蒸锅水烧开后上锅大火蒸8分钟关火焖2分钟取出。

4️⃣ 倒掉盘中蒸出的腥水，铺上冰水泡过的葱丝姜丝和红椒丝，淋蒸鱼豉油。

5️⃣ 锅中烧热油至冒烟，趁热浇在葱丝上激发葱香，撒香葱花即可上桌。

五、红豆花生红枣粥

所需食材：红豆50克、红皮花生30克、红枣6颗、大米40克、小米20克、清水1000毫升、红糖少许（可选）。

步骤：

1. 红豆和红皮花生提前用清水浸泡4小时以上，最好头天晚上泡上，第二天早晨直接煮，节省时间。
2. 红枣洗净，用刀背轻轻拍裂，去掉枣核。去核后的红枣煮粥不易上火，也更容易释放甜味。
3. 大米和小米混合，淘洗两遍，不要用力搓洗，以免损失表层营养。淘米水可留作浇花。
4. 锅中加入1000毫升清水，放入泡好的红豆和花生，大火烧开后转小火，煮20分钟。
5. 加入大米、小米和去核红枣，搅拌均匀，继续小火煮25分钟。期间每隔5分钟用勺子顺一个方向搅动，防止粘底。
6. 煮至红豆开花、米粒软烂、粥体浓稠时，根据口味加入少许红糖，搅拌至融化，再煮2分钟关火。
7. 关火后盖上盖子焖5分钟，粥会更加绵密。盛出温热食用，香甜软糯，暖胃又养人。

六、酸菜焖鹅

食材：鹅肉半只（剁块）、酸菜2棵、大葱段、姜片、干辣椒、八角、花椒

酱料：酱油3勺、柱侯酱2勺、蚝油2勺 辅料：啤酒半瓶、热水、盐、水淀粉

1酸菜反复冲洗3遍去重盐，挤干切细丝；干锅不放油大火炒干酸菜水汽盛出，这是酸菜爽脆不发水的关键；

2️⃣热锅倒油，爆香葱姜、干辣椒和香料，倒入鹅肉大火翻炒，逼出油脂炒至表面微焦黄，彻底去腥；

3️⃣加全部酱料翻炒上色，倒半瓶啤酒+没过鹅肉的热水，大火烧开转中小火焖45分钟；

4️⃣加盐调味，倒入酸菜翻匀，淋水淀粉勾薄芡，汤汁浓稠即可出锅。

七、香菇炒青菜

【食材】

油菜、鲜香菇、葱、蒜、小米辣、生抽、蚝油、盐、鸡精

【做法】

1. 锅中水烧开，加少许油盐，放入油菜焯水1分钟，捞出沥干；香菇下锅焯水2分钟，捞出沥干。
2. 起锅热油，下入葱蒜、小米辣爆香。
3. 倒入香菇，加2勺生抽、1勺蚝油，翻炒均匀。
4. 放入油菜，加1勺盐、1勺鸡精，翻炒入味。
5. 翻匀后即可出锅装盘。

八、白菜牛肉汤

准备食材: 大白菜、牛肉、姜丝。

做法步骤:

1、牛肉切成薄片，然后加入姜丝、胡椒粉、淀粉和食用油抓拌均匀，再腌制十分钟备用。

2、清洗干净大白菜切好，然后热锅烧油，油热以后，放入大白菜大火翻炒。

3、炒软大白菜后，再加入适量的清水大火煮开，接着放入牛肉滑熟。
