猕猴桃居然也分公母？搞懂这件事，你吃的每一口甜都来之不易

前几天我在家做猕猴桃果酱，一边熬一边突发奇想——咱们天天吃猕猴桃，有没有人想过一个事儿：猕猴桃树还分公母吗？我当时就愣住了。你看啊，苹果、桃子、梨，一棵树上开花结果一条龙，从没听说还要配对。可猕猴桃要是也分公母，那咱们吃的每一颗果子背后，是不是都藏着一整套“相亲”流程？这个念头一冒出来就收不住了，我翻了资料问了果农，结果发现这里面的门道比我想的有意思得多。今天咱们就边做美食边聊这事儿，保证你看完再吃猕猴桃，嘴里的甜味儿都不一样了。

猕猴桃树还分公母吗？答案是：不光分，还分得挺讲究

先把结论撂这儿——猕猴桃树确实分公母，而且公树和母树长得还不一样。这就跟有些动物雌雄长得不同一个道理，只不过猕猴桃树的区别藏在芽眼、叶片、树皮这些细节里，不仔细看还真容易忽略。

先看芽眼。 公树的芽眼是往外凸的，像小疙瘩一样鼓出来；母树的芽眼呢，是往里凹的，平平的甚至有点塌。这个在冬天落叶休眠期看最明显，叶子掉光了，光秃秃的枝条上那点差别，老果农一眼就能分出来。

再看叶片。 到了生长季节，公树的叶片厚实、个头偏小、颜色偏深、形状也偏圆，整棵树看上去紧巴巴的；母树就不一样了，叶片薄、大、颜色偏浅、叶尖还带点尖，树形显得松散舒展。我家阳台之前种过一棵，光看叶子我死活分不出来，后来还是请了附近果园的老师傅来帮忙辨认的。

枝条和树皮也有讲究。 公树的枝条摸起来毛多、粗糙，芽间距短；母树呢，枝条光滑或者毛少，芽间距大。树皮方面，公树表面凸起的斑点多、手感粗糙，母树的斑点少、摸起来光滑。

不过说实话，这些特征在不开花的时候只能做个参考，准确率不是百分之百。真正最靠谱的辨别方法，还得等开花。

看花最直观。 公树开的花小、开花早、花期还长，花朵中间只有花蕊没有柱头，花蕾密密麻麻挤在一块儿，一朵挨一朵，看着特别“热闹”。母树的花大、开花晚、花期短，花朵中间既有花蕊又有柱头，花蕾在枝条上稀稀拉拉分布，一个果柄上就几个花苞，显得“高冷”多了。更重要的是，母花中间有子房，授粉后子房会慢慢膨大变成小果子；公花没有子房，开完就谢了，什么也不留。

你说这事儿巧不巧，一朵花能不能结果，光看中间有没有“小肚子”就知道了。

公母搭配这件事，直接决定你嘴里的猕猴桃甜不甜

搞清楚了公母，接下来才是重点——这跟咱们吃到的猕猴桃品质有什么关系？

关系大了去了。猕猴桃是雌雄异株植物，公树负责提供花粉，母树负责结果。公树的花粉飘到母花上，母花才能结出果实。如果没有公树，母树开再多花也白搭——要么不结果，要么结出来的果子又小又少。所以种猕猴桃的果农，必须按一定比例搭配公母树。一般标准是8棵母树配1棵公树，也就是雌雄比8:1。小果园有时候配到5:1，大果园10:1也有。公树虽然自己不结果，但少了它，整个果园就转不动，妥妥的“幕后英雄”。

而且啊，不同公树的花粉对果实品质的影响还不一样。这科学上有个叫“花粉直感效应”的说法，简单讲就是：用不同公树的花粉给同一棵母树授粉，结出来的果子大小、形状、甜度、维生素含量都会有差别。选对了公树，果子明显更大、更甜。

咱们平时吃的猕猴桃，甜不甜、大不大、口感好不好，背后全靠果农精心搭配公母树加上人工授粉的功夫。猕猴桃是雌雄异株花果树，光靠风媒虫媒传粉，挂果率很低。果农们得提前从优质公树上采集花粉，然后拿着授粉枪一朵花一朵花地喷，一捏一喷，动作很快但得特别仔细。这样人工辅助授粉之后，挂果率能从自然状态下的低位一下子提到80%以上，而且果子更大、品质更稳。

我去年去四川一个猕猴桃果园参观，果农大姐跟我说，盛花期那几天他们天不亮就得起来采花粉、授粉，忙得连饭都顾不上吃。她说：“你们吃一颗甜猕猴桃觉得没啥，我们这几天的功夫全在那一口甜里头了。”听完这话，我后来每次吃猕猴桃都舍不得浪费一点果肉。

公母同株靠谱吗？聊一个很多人踩过的坑

既然分公母这么麻烦，那有没有办法让一棵树既开花又结果，公母合体一步到位？

你可能在网上见过一些商家宣传“公母同株”“自花授粉”的猕猴桃苗，听起来特别省事。但这事儿吧，得给大家提个醒。目前国内通过国家审定的猕猴桃品种里，并没有真正意义上能同时稳定长雌花和雄花、自己给自己授粉的品种。那些号称公母同株的苗，多数是把公树枝条嫁接到母树上“拼”出来的，实际种下去以后，雄枝花粉量少、花期对不上，坐果率可能连15%都不到，结出来的果子畸形率还特别高。

所以买苗的时候别被“公母同株”“不用配公树”这种话术忽悠了，老老实实按比例配公母树才是正经路子。果农们在这些事儿上踩过的坑，可比咱们想象的多。

聊完种植聊吃法：不同品种的猕猴桃，做成美食各有各的妙

搞懂了公母树的那些事儿，咱们回到吃这个正题上。猕猴桃按果肉颜色分三大类，红心、黄心、绿心，它们做美食的用法还真不太一样。

红心猕猴桃糖度高，一般在14到16度，吃起来甜得明显，果肉细腻香气浓。这种甜度高的果子，特别适合做饮品和甜品。我最近试了一个做法：红心猕猴桃挖两颗，对半切开拿小勺贴着皮一转，整个果肉就出来了。一颗切小丁留着咬，另一颗放杯底用勺背压成果泥，加点冰块，倒半杯果味黄酒，再补满气泡水，杯口放一片猕猴桃丢两片薄荷叶。喝起来先是气泡的爽，然后猕猴桃的微酸把精神提起来，尾调是酒的那点温润甜，果香收得很干净，7度的小饮品，下班来一杯刚好。

黄心猕猴桃口感偏酸甜，果肉紧实汁水多。我试过把黄心猕猴桃切片铺在烤碗里，底下铺即食燕麦倒一层酸奶，再摆上猕猴桃片撒点坚果碎，180度烤15分钟，外香里软，早餐吃特别管饱。

绿心猕猴桃酸甜适中，膳食纤维含量在三种里相对最高，价格也最亲民。这种量大实惠的果子最适合熬果酱。猕猴桃去皮切片，放锅里加白糖腌两小时，小火慢慢煮，边煮边翻，熬到软烂水分蒸发成果酱状就行。抹面包、拌酸奶、兑气泡水都好吃。不过说实话，猕猴桃熬酱特别费时间，因为它汁水太多了，得有耐心。我第一次熬的时候急得不行，后来发现小火慢慢来，香味反而越来越浓，整个厨房都是那股清甜气。
