蒸排骨，直接上锅就输了！牢记这3点，出锅软嫩不柴，满屋飘香

我敢打赌，十个人里得有八个，回家做蒸排骨就是排骨洗洗，加点调料拌一拌，直接扔蒸锅里就完事了。结果呢？出锅一尝，肉质又老又柴，要么就是腥味没去干净，白白糟蹋了好食材。其实，蒸排骨这道菜，最忌讳的就是直接上锅蒸！ 这里面的门道可多着呢。为了这事，我专门跟一位广东茶楼退休的老师傅请教，总算把这蒸排骨的窍门给摸透了。今天咱就把蒸排骨软嫩不柴、香味十足的3个关键点给大家掰扯清楚。只要您记牢了，保证以后做的蒸排骨，出锅那一刻，邻居都得顺着香味来敲门。

第一步：泡！给排骨做个深层清洁SPA

首先，买回来的排骨，别急着切，也别傻乎乎地去焯水！记住，蒸排骨千万不能焯水，一焯水肉质瞬间收紧，里面鲜嫩的水分全跑了，再蒸就老了，这是第一大致命错误。

正确的做法是什么？泡！ 把排骨剁成两三厘米长的小块，放进一个大盆里，加满清水，再撒一小勺盐，让它在里面舒舒服服地泡个澡。这个过程至少30分钟，中间换两三次水。这一步的目的，就是把骨头缝里的血水彻底逼出来，这可是腥味的主要来源。您会发现泡到最后，排骨颜色发白，肉质变得松软，这就是去腥成功的第一步。如果想让排骨更干净，还可以在换水时加把面粉进去抓揉两分钟，面粉的黏性能把肉表面的杂质和油脂吸附得干干净净。

第二步：腌！锁住鲜嫩的灵魂所在

排骨泡得粉粉嫩嫩捞出来，一定要把水分攥干，然后用厨房纸吸干表面水分，这是入味的先决条件。接下来就是重头戏——腌制。

别胡乱加一堆酱油和盐，那样只会咸齁。咱们的黄金腌料公式是：生抽提鲜、蚝油增稠、白糖回甘、白胡椒粉去腥。最关键的是，一定要加足量的淀粉（红薯淀粉或玉米淀粉都行）。淀粉就像是给排骨穿上了一件“锁水衣”，在蒸制过程中能牢牢锁住肉里的汁水，这是保证软嫩不柴的核心科技！

把姜丝、蒜末、豆豉（如果喜欢）和这些调料一股脑倒进去，然后别偷懒，直接上手抓拌！要像给排骨做马杀鸡一样，抓到手感发粘，感觉所有料汁都被排骨吃进去了。最后淋一勺食用油封住水分，腌制至少30分钟，如果时间充裕，放冰箱腌一两个小时效果更佳，绝对入味十足。

第三步：蒸！火候和时间是终极奥义

腌好的排骨，很多人直接丢进冷水锅里蒸，这又错了！一定要等蒸锅里的水烧开，上汽了再把排骨放进去。开水上锅蒸能让排骨表面的蛋白质快速凝固，锁住内部水分。

蒸的时候，盘底可以垫上切成厚片的土豆、芋头或者南瓜，不仅防止排骨直接接触盘底受热不均，这些配菜吸饱了肉汁后，味道简直比肉还香。大火足气，根据排骨块的大小，蒸20到25分钟左右。时间千万别太长，多一分钟，肉就老一分。时间一到，关火再焖2分钟，撒上一把翠绿的葱花，那一瞬间，香味直接“轰炸”厨房，排骨颤颤巍巍挂在骨头上，入口滑嫩脱骨，咬下去满嘴都是肉香和蒜香。http://wap.lzzsw.net/Article/details/80541.shtml
