立秋吃一肉，一年不咳嗽？清热润肺健脾，老人孩子都能放心吃！

立秋一到，老话就来了，立秋吃一肉，一年不咳嗽。山东这边的老人最信这个，尤其是家里有上岁数的、还有孩子的，到了这个节气，桌上总得有一锅鸭子。不是图啥神神叨叨，就是秋天一燥，人先遭罪，嗓子干、嘴发苦、胃口也跟着差。鸭肉性凉，正好顶上这个时候的火气，既能补点营养，又不至于吃得燥得慌，这个理儿，老辈人摸得门清。

要说立秋吃鸭，为啥这么多人认这个账，得先看节气。立秋不是一下子就凉了，很多地方还是闷，白天热、夜里凉，空气里还带着夏天尾巴上的湿热，再往后几天，风一吹，干燥就上来了。中医讲秋燥最容易伤肺，肺一受影响，人就爱咳、爱干、爱上火。鸭子性凉，民间一直拿它当秋补的常用肉，这不是空口白说，明清以来不少地方志、饮食笔记里都能看到秋食鸭肉的记录，尤其江南、两广、京津一带，入秋吃鸭成了老规矩。

我家里也是这样。到了立秋前后，我媳妇就会念叨，别老整那些热乎乎的大鱼大肉了，炖个鸭汤，老人喝着舒服，孩子也能多吃两碗饭。说句山东大实话，家里四代人同桌吃饭，最怕的不是菜少，是吃完嗓子冒烟、肚子还不得劲。鸭子这口肉，真有点四两拨千斤的意思，不张扬，但顶用。

第一锅最适合拿来打头阵的，就是冬瓜干贝老鸭汤。这个汤看着清清爽爽，实际上里头门道不少。鸭子不能买太大的，三四斤的仔鸭最合适，肉嫩，炖出来不柴。先冷水下锅，姜片、料酒一放，大火烧开，浮沫一定要撇干净。老话说得糙，但有道理，腥味这东西就像鞋底泥，不刷干净，后面再怎么炖都别扭。焯完以后用温水冲，不能拿凉水猛激，不然肉缩得死死的，炖一个钟头都不烂。

砂锅里一次把水加足，这一步很多人容易犯懒，中途老添水，汤味就散了。鸭块下锅后，拍一大块姜，葱打个结扔进去。干贝提前用黄酒泡发，撕成丝，连泡的水一起倒入锅里，这一步是关键，鲜味一下就立住了。大火烧开后转小火，慢慢焖一个小时。冬瓜这时候下，去皮去瓤，切厚块，不要切太薄，煮一会儿就成渣。再炖二十分钟，出锅只放盐，真不用别的花里胡哨的东西。干贝提鲜，冬瓜清甜，鸭肉的香气往外一冒，整锅汤喝起来顺溜得很。

这道汤的好处，不光是鲜。冬瓜本身水分足，口感轻，和鸭肉搭一块儿，能把鸭子的厚重感往下压一压。干贝里头蛋白质、氨基酸都不差，鲜味也特别实在。秋天吃饭，最怕嘴里没味儿，越是这种时候，清汤反而更让人上瘾。老人喝两碗，孩子也不嫌油，胃里舒服，嗓子也润。

第二锅要是想更扎实一点，就上芡实莲子老鸭汤。这一锅不是轻飘飘的路子，喝的是绵厚，讲的是养脾胃。芡实和莲子都得提前泡，冷水泡两个小时最稳当，泡开了才容易煮得粉糯。莲子中间那根绿芯一定要去掉，苦味儿特别硬，别小看这一点，整锅汤的口感就栽在这小东西上。

鸭块焯水的流程照旧，别偷懒。下锅以后，把芡实、莲子一并倒进去，再放几颗红枣、三四片淮山干。红枣有个甜口，淮山干带点温和的劲儿，和芡实莲子凑在一起，汤底就会更厚。大火烧开转小火，慢慢煲两个钟头，时间不能省。鸭肉炖到用筷子一戳就能脱骨，芡实开花，莲子一抿就化，这时候汤会变得发白，像奶汤一样，但又不是那种腻乎乎的白。

这一锅特别适合家里有老人。70多岁的父母，吃东西最讲究一个稳，太硬的不行，太油的不行，太凉的不行。芡实和莲子偏平和，淮山也属于温和路线，这锅汤端上桌，老人先喝汤，孩子再啃肉，谁都不亏。山东人讲究实在，做饭不是摆样子，是让一家老小都吃得踏实。

到了第三锅，风格就换了，紫苏焖鸭，属于一上桌就得被抢的那种。这个做法不走清汤路线，浓油赤酱，专门配米饭。鸭子剁小块，姜片多备一些，锅里先下油，把姜片炸到发黄卷边，再捞出来。用姜炸过的油去煸鸭块，鸭皮朝下慢慢煎，煎到金黄，鸭油被逼出来，锅底油汪汪一层，这时候要把多余的油倒掉，只留一点底油，不然吃着发腻。

接着烹料酒，老抽上色，生抽提味，再丢几块冰糖进去，颜色立马就亮了。倒开水没过鸭肉，大火烧开后转中火焖半小时。等汤汁收了一半，再把洗干净的紫苏叶整把放进去。紫苏这东西，讲究一个短兵相接，煮久了香气就跑没了，五六分钟足够。最后大火收汁，汤汁裹在每块鸭肉上，紫苏的香气混着鸭肉的油脂，闻着就知道这顿饭不简单。
