“补药一堆，不如秋菜一把”，秋季建议多吃这8种菜，鲜嫩正当时

老辈人常说“补药一堆，不如秋菜一把”，入秋后贴秋膘别光盯着肉，应季的秋菜带着整个秋天的鲜气，清润解燥还养人，现在正是最嫩的时候，8道家常做法收好，每天换着吃不重样。

一、白萝卜炖羊肉

所需食材：散养山羊腿肉700克、白萝卜1根（约500克）、生姜6片、大葱1段、花椒1小撮、白芷2片、草果1个、料酒3勺、白胡椒粉适量、盐适量、香菜少许、清水适量。

步骤：

1. 羊肉切成3厘米左右的块，放入清水中浸泡1小时，期间换水三次，充分去除血水和膻味。
2. 白萝卜去皮，切成滚刀块，放入淡盐水中浸泡10分钟，捞出沥干备用。
3. 羊肉冷水下锅，加入3片姜和1勺料酒，大火煮开后撇净浮沫，再煮2分钟捞出，用温水冲洗干净。
4. 砂锅中加入足量清水，放入焯好的羊肉、剩余姜片、葱段、花椒、白芷和草果，大火烧开。
5. 汤沸后转小火，盖上锅盖慢炖1小时，期间不要频繁揭盖，让香气充分保留。
6. 放入白萝卜块，继续炖20分钟，至萝卜透明软糯、羊肉用筷子能轻松穿透。
7. 加盐和白胡椒粉调味，撒上香菜段，关火焖2分钟即可上桌。

二、裙带菜豆腐牛肉汤

所需食材

干裙带菜、嫩豆腐、瘦牛肉、/、姜丝

盐、白胡椒粉、淀粉、少许香油

详细制作步骤

1. 干裙带菜放入清水中泡发5分钟，泡软后清洗干净，挤干水分备用。
2. 瘦牛肉切成薄片，加姜丝、少许淀粉、少许清水抓匀上浆。
3. 淋少许食用油拌匀，腌制8分钟，肉片嫩滑不柴。
4. 嫩豆腐切小块，清水冲洗一遍备用。
5. 锅中加清水，放入姜丝，大火烧开。
6. 转小火，一片片下入牛肉片，轻轻推开防止粘连。
7. 煮至牛肉全部变色浮起，撇掉表面少量浮沫。
8. 放入豆腐块、泡好的裙带菜，中小火继续煮3分钟。
9. 食材全部熟透、鲜味融入汤中。
10. 加入适量盐、少许白胡椒粉调味，搅拌均匀。
11. 关火后滴两滴香油增香，不用多放，清淡不油腻。
12. 撒上葱花，搅拌均匀即可出锅。

三、黄花菜炒鸡蛋

特点： 鲜香软嫩，简单快手，营养丰富。

食材： 干黄花菜50克、鸡蛋3个、葱花、蒜末、生抽、盐、油

做法：

干黄花菜提前泡发30分钟，去根洗净，挤干水分。

鸡蛋打散，加少许盐。

热锅倒油，倒入蛋液炒至凝固盛出。

锅中留底油，爆香蒜末，下黄花菜翻炒2分钟。

倒回鸡蛋，加盐、少许生抽，撒葱花翻炒均匀即可。

黄花菜配鸡蛋，鲜上加鲜，早餐下饭都好。

三、黄花菜炖排骨

食材： 排骨500克、干黄花菜50克、姜片、枸杞、红枣、盐、料酒

做法：

1、排骨冷水下锅加姜片、料酒焯水，撇沫捞出洗净。

2、干黄花菜提前泡发30分钟，去根洗净。

3、砂锅中放排骨、姜片、红枣，加足量清水，大火烧开转小火炖40分钟。

4、加入黄花菜继续炖20分钟。

5、加盐调味，撒枸杞即可。

6、黄花菜吸饱肉汤，鲜香软嫩，比肉还好吃。

四、鸡蛋炒黄瓜

食材：黄瓜、鸡蛋、蒜、盐、蚝油

做法

1、黄瓜去皮切薄片，鸡蛋打散搅匀。锅里油热，倒入蛋液煎到两面金黄，先盛出来。

2、锅里留底油，放蒜片炒香，倒入黄瓜翻炒 2～3 分钟，炒到黄瓜微微变软还带点脆劲。

3、把煎好的鸡蛋倒回锅里，加盐、蚝油调味，翻炒 1 分钟左右就出锅。

五、酸辣手撕包菜

所需食材：包菜、干辣椒、蒜、五花肉、陈醋、生抽、盐

制作方法：

1、包菜切去根部，用手撕成大片，洗净控干水分，干辣椒剪成段，蒜切成片。

2、锅中入油，下入五花肉片，煸出油脂，下入干辣椒和蒜片爆出香味，没有五花肉的，直接爆香干辣椒和蒜片就行。

3、倒入包菜，大火快炒，炒至断生，沿锅边烹入陈醋，加入生抽和盐调味，翻炒均匀，即可出锅。

六、山药胡萝卜炖牛肉

所需食材：牛腩500克、铁棍山药1根、胡萝卜1根、生姜4片、八角1个、香叶2片、料酒2勺、盐适量、白胡椒粉少许、香菜少许。

步骤：

1. 牛腩切成3厘米见方的块，放入清水中浸泡30分钟，中途换两次水，泡出血水。
2. 牛腩冷水下锅，加入料酒和两片生姜，大火煮沸后撇净浮沫，捞出沥干。
3. 山药和胡萝卜分别去皮，切成滚刀块，山药泡在清水中防止氧化变黑。
4. 砂锅中加入足量热水，放入牛腩、姜片、八角、香叶，大火烧开转小火炖1小时。
5. 加入胡萝卜块，继续炖15分钟，再放入山药块炖10分钟。
6. 待牛腩软烂、山药绵密时，加入适量盐和白胡椒粉调味。
7. 关火后撒上香菜碎，盖上盖子焖2分钟即可上桌。

七、芹菜炒香肠

材料：香肠，芹菜，生抽，蚝油

1.香肠切成片状，芹菜去皮后斜切成段。

2.把香肠放入热油中煎至微微弯曲后捞出。

3.把芹菜放入锅中翻炒至断生。

4.把香肠放进去，加入少量生抽和蚝油翻炒均匀就可以出锅了。

八、小葱尖椒酱炒蛋

材料：鸡蛋4个、小葱4棵、尖椒2个、油适量、黄豆酱2汤匙、

做法：

1.准备好所需材料，小葱择洗干净，尖椒洗净，去掉辣椒籽不要，黄豆酱如果比较干，加少许水搅匀稀释一下

2.将小葱斜刀切段，葱叶和葱白分开放，尖椒切成片

3.鸡蛋磕入碗内，搅打均匀

锅加油烧热，淋入鸡蛋液，摊开，待蛋液稍凝固，再翻炒成块，不要把鸡蛋炒老了，盛出待用

5.下入葱白炒香，再下入尖椒片翻炒均匀，将尖椒炒至颜色变深
