蛏子别直接下锅！老渔民这1招，肉嫩得飚汁，鲜到舔壳

要说这夏日海鲜里的“鲜味担当”，蛏子绝对能排得上号。就那一口清甜软嫩，仿佛把整个海岛的初夏都缩进了壳里，隔三岔五就得买上一兜解解馋。可这玩意儿啥都好，就是肚里那点沙，一个弄不干净，一口咬下去“咯吱”作响，再好的兴致也败光了。我试过清水加盐，也淋过香油，可效果总是差强人意，炒出来还是有点硌牙。直到上个月去海边找老同学玩，他教了我一招传了几十年的土法子，说是能让蛏子把沙吐得干干净净，拦都拦不住。回家一试，那效果真神了，出锅的蛏子肉质嫩得飚汁，鲜到想舔壳，家里人吃了都夸比饭店做的还地道！

洗蛏子，只加盐和油就错了

很多人洗蛏子，习惯性地往水里撒把盐，再滴几滴油，觉得这样能模拟海水环境，让蛏子吐沙。可老渔民说了，这恰恰是帮了倒忙。

你想啊，蛏子本来就生活在咸淡适中的海域，你突然给它扔进一个高浓度的“盐水罐”里，它一受刺激，第一反应是什么？是吓得赶紧把壳闭紧，死活不肯张嘴！那层飘在水面的油膜更是要命，直接把水里的氧气给隔断了，蛏子呼吸都困难，哪还有心思吐沙？这就好比你正忙着干活呢，突然被人摁进一盆齁咸的水里，你第一反应肯定是憋气保命，哪还顾得上别的。

老渔民这招的精髓，全在 “温水” 二字，原理就是模拟蛏子最熟悉的海水涨潮环境。

备水： 取个深盆，接上足量自来水，然后缓缓兑入热水，用手试温，调到摸着手感温热不烫手，大概30-40摄氏度就行。

静置： 把买回来的蛏子倒进去，找个安静的地方放着。这温水的劲儿上来了，蛏子以为是阳光晒过的暖洋洋的海水涨上来了，立马就放松警惕，争先恐后地伸出“小肉管”，大口吞吐，疯狂排沙。

清洗： 静置半小时左右，去看盆底，保准能看见一层沉淀的泥沙。这时候再把蛏子捞出来用流水冲一冲，个个干净清爽！

大火快炒，锁住那口“鲜汁”

我常用的做法是辣炒，几分钟搞定，特别下饭：

备料：蒜末、姜末、葱花多备点，爱吃辣的再切几个小米辣。再调个碗汁：生抽、蚝油、料酒、一点点白糖提鲜，再加少许白胡椒粉和水搅匀。

焯水：锅里水烧开，把洗净的蛏子倒进去，一看到壳张开，马上捞出来！这个过程也就十几秒，目的是进一步去腥，也防止后面炒的时候出水太多。

爆炒：热锅烧油，把姜蒜小米辣爆香，然后转大火，倒入蛏子快速翻炒。趁着锅气最旺的时候，把调好的碗汁烹进去，大火颠炒几下，让每一只蛏子都裹上浓郁的酱汁。

出锅：最后撒上一把翠绿的葱花，再翻炒两下，香气“轰”地一下就炸开了，立马关火装盘！那一口下去，蛏肉饱满，汁水在嘴里爆开，鲜辣回甜，连盘底的汤汁都想拿来拌饭吃。
