外酥里爆汁的家常肉酱锅盔，一口沦陷超解馋

街头小吃里最让人念念不忘的，莫过于刚出炉的肉酱锅盔。滚烫的饼身滋滋冒香，表层金黄酥脆、层层掉渣，轻轻一碰就簌簌掉皮，掰开内里更是惊喜满满，饱满的肉酱裹挟着滚烫汁水，浓郁肉香瞬间迸发。外皮酥香不腻，内馅鲜嫩多汁，咸香入味的口感恰到好处，不用出门排队，在家就能轻松复刻这道经典美味，做法简单零难度，当作早餐、加餐或主食都再合适不过，一口下去满是烟火幸福感。

想要做出完美的肉酱锅盔，面团和肉酱是两大核心关键，家常食材就能轻松搞定。准备普通中筋面粉、温水、少许食用油、白芝麻，馅料选用三分肥七分瘦的猪肉末，肥瘦比例适中的肉末做出来的馅料鲜嫩不柴、自带油脂香气，不会干涩发柴。再搭配姜末、葱花、生抽、蚝油、少许甜面酱、食盐、白糖和胡椒粉，简单的家常调料，就能调出浓郁地道的秘制肉酱，还原街边老店的正宗风味。先来调制灵魂肉酱，这是锅盔好吃的重中之重。猪肉末中加入切好的姜末和葱花，放入一勺料酒去腥、两勺生抽提鲜、一勺蚝油增香，少许甜面酱增添醇厚酱香味，一点点白糖中和咸味、提鲜增润，再撒上少许胡椒粉去腥增香。所有调料加好后，顺着同一个方向持续搅拌，让肉末充分吸收料汁，搅拌至肉馅上劲粘稠，最后淋上一勺熟食用油锁住水分，拌匀后静置腌制十分钟，让肉馅充分入味，做好的肉酱湿润多汁，烤制后不会发干发硬。接着处理饼皮面团，酥脆掉渣的秘诀就在柔软的面团和油酥中。面粉中加少许食盐增加筋性，分次倒入温水，边倒边搅拌，搅成絮状后揉成偏柔软的光滑面团，偏软的面团烤出来才会外酥内软，口感不会发硬。揉好的面团盖上保鲜膜松弛二十分钟，充分松弛的面团延展性更好，擀制的时候不易破皮，能牢牢锁住内部肉馅。松弛面团的同时调制简易油酥，少许面粉加入热油搅拌均匀，调成浓稠的油酥备用，这是饼皮分层起酥、层层掉渣的关键。

面团松弛好后无需反复揉搓，直接搓成长条，切成大小均匀的面剂子。取一个面剂子擀成长薄的牛舌状面皮，均匀涂抹一层薄薄的油酥，从一端紧紧卷起来，卷好后竖起来按压压扁，再次轻轻擀开，中间放入足量腌制好的肉酱。像包包子一样收紧所有封口，彻底捏合严实，防止烤制过程中漏馅流汁，包好后轻轻擀成薄厚均匀的圆饼，表面刷一层清水，撒上白芝麻轻轻压实，增香又提颜值。平底锅刷薄油，开最小火预热，放入做好的锅盔生胚，慢火煎至底部金黄定型，翻面继续小火慢煎，反复翻面几次，让饼身受热均匀。煎至两面金黄酥脆、饼身微微鼓起，就说明已经完全熟透。全程小火慢煎是重点，既能保证外皮酥脆掉渣，又能让内部肉馅彻底熟透，还不会出现外皮焦糊、内里夹生的情况。刚出锅的肉酱锅盔热气腾腾，金黄的饼皮层次分明，轻轻咬下咔嚓作响，酥皮掉落在餐盘里，仪式感满满。咬破酥脆外皮，内里满满的肉酱喷涌而出，醇厚的肉酱香混着芝麻的清香在舌尖化开，肉馅鲜嫩多汁、咸香浓郁，每一口都扎实又满足。不干不柴、酥香入味，不管空口吃还是搭配粥品、小菜，都是绝佳的美味。
