不用名贵补品，秋季3款暖汤暖粥就能健脾润肺、好吃又养人

一场秋雨一场凉，秋天一到，家里那点“硬扛”的劲儿就不灵了。山东人讲究实在，入秋以后，光靠嘴硬不行，得靠锅里这口热乎气儿。原文里提到的三样家常汤粥，板栗山药鸡汤、南瓜山药小米粥、莲藕花生猪蹄汤，走的都是清润、温和、好消化的路子，正好对上秋季养生里常说的“润燥不腻、补而不燥”。这篇就顺着这个思路，把为什么秋天适合喝汤粥、这三道家常食补怎么搭、哪些人更合适、怎么吃才不容易踩坑，一点点说透。

先说秋天为啥总让人觉得嘴干、嗓子紧、胃口也有点别扭。中医里常讲秋主燥，燥气一上来，最先受影响的往往是肺和脾胃。国家卫健委和不少营养科科普都提到，入秋后饮食要适当从生冷、冰凉、油腻，转到温软、清淡、易消化。这个时候来一碗热汤、一锅软粥，不是玄乎，是让身体少费点劲儿。尤其家里有老人、有孩子，再加上秋风一吹，整个人就容易发紧，吃点温润的东西，确实更舒服。

第一道板栗山药鸡汤，底子就很稳。鸡肉本身蛋白质高，脂肪比很多红肉更温和，炖汤以后味道鲜，肚子也不顶。板栗是秋天的老熟人，甜糯，带点谷物香，民间常拿它跟健脾、补肾联系在一起。山药更实在，淀粉颗粒细，口感绵，做熟以后对胃口比较友好。很多人秋天一到就觉得累，白天没精神，晚上还睡不踏实，这种鸡汤就适合慢慢喝，热气顺着胃往下走，整个人没那么发飘。

这道汤做法不复杂，关键在火候。鸡块冷水下锅焯水，浮沫一定撇干净，这一步别偷懒，不然汤味就浑。先把鸡、板栗、红枣、姜片下砂锅，慢慢炖40分钟，再放山药继续20分钟，山药不早下，才能保住口感，不然炖太久就容易碎成一锅糊。最后撒枸杞，少许盐提味，汤色清亮，喝起来有鸡香，也有板栗的甜。秋天晚上回家来这一碗，比外面那些花里胡哨的东西靠谱多了，咱山东家庭吃的就是这个踏实。

说到这里，得提醒一句，鸡汤虽香，也不是越浓越好。很多人一看炖汤就猛加油、猛放料，结果喝着一层厚油，胃弱的人喝完直发堵。秋季食补，讲究的是清润，不是油腻。鸡汤上面那层油可以撇掉一部分，汤味照样足。要是家里有老人牙口一般，山药和板栗都能炖得更软一点，入口就省事。孩子挑食的时候，拿这汤拌饭，也比单吃白米饭有劲儿。

第二道南瓜山药小米粥，放在早饭桌上最合适。小米这东西在北方家里太常见了，老辈人总说小米养人，不是空话。小米煮出米油以后，口感糯，暖胃感很明显。现代营养学里也常把它归到容易消化的粗粮里，适合早餐和肠胃负担重的人吃。南瓜甜，山药润，红枣再一搭，整锅粥不需要加糖，自己就有自然的清甜味。

做法也讲究一个顺序。小米先泡10分钟，煮的时候更容易出米油。锅里水开后下小米，小火先熬15分钟，把底子熬出来，再放南瓜、山药、红枣，继续煮20分钟，煮到粥体黏乎乎的，像老家话说的那种“能挂勺”。最后焖几分钟，加枸杞，颜色也好看。早上起来，胃还没完全醒，这碗粥一进肚，舒服得很。尤其家里有老人，牙口不太好，或者孩子早晨起床磨蹭，这种粥比油条豆浆更顺。

不少人秋天一上来就想着进补，结果补得太猛，反而胃口差、上火、口干。小米粥这类东西就像个缓冲垫，先把脾胃稳住，再谈别的。国家膳食指南也一直强调，主食不能只盯着精米白面，适当搭配杂粮和薯类，更利于饮食结构均衡。南瓜和山药属于那种温温和和的选手，不抢戏，却很顶用。山东人吃饭讲究一口一个舒坦，这锅粥就是舒坦本身。

第三道莲藕花生猪蹄汤，得放在周末或者家里人都在的时候做。猪蹄这东西，很多人一听就觉得油，其实关键在处理和炖法。焯水去血沫，再慢火炖，油腻感就会少很多。莲藕选粉藕，炖出来才软糯。红衣花生洗干净一起下锅，汤会更香。猪蹄先炖1小时，再加莲藕继续40分钟，最后汤发白，藕块一咬就开，花生也绵。这个汤看着朴实，喝着很有内容。

秋天为什么常说吃藕合适？因为藕正是这个季节的新鲜货。民间有秋藕最养人的说法，和它口感清润、含水量高有关。现代营养资料里，莲藕含有膳食纤维、维生素C、钾等成分，做熟之后口感温和，适合秋燥时节。花生也不只是零嘴，红衣花生在不少家庭里就是拿来炖汤的，味道香，口感软，和猪蹄搭在一起，汤里多一点醇厚，喝着不发冲。

这汤特别适合家里干燥、嗓子发紧、皮肤也容易起皮的人。秋天风一吹，脸上干，嘴唇也干，晚饭来一碗这种温润的汤，确实比一堆炸货强。老人喝了不费牙，孩子喝了有肉香，大人吃了也能顶一顿。要是想更清爽一点，猪蹄别炖得太久发烂，藕保留一点块状，吃起来更有口感。葱花最后撒一点，香气立马就出来了。

秋季食补还有个容易被忽略的点，就是别天天一样。原文里提到一周轮换2到3次，这个频率就挺合适。天天喝大补汤，脾胃受不了，油脂和热量也容易超。轮着来，今天鸡汤，明天小米粥，后天猪蹄汤，身体有个缓冲，口味也不容易腻。家里做饭的人都知道，饭桌上最怕的不是没菜，是吃两顿就腻歪。轮换着做，老人爱喝，孩子也愿意吃，这就省心。

我们家这种三代同住的日子，最能体会这点。老人吃饭图个软烂，孩子长身体又得有营养，我自己平时干活多，也得靠饭菜顶住。板栗山药鸡汤适合晚上补一补，南瓜山药小米粥适合早上垫一垫，莲藕花生猪蹄汤适合一家人围着喝。锅不大，日子不小，热气往上冒的时候，屋里那股安稳劲儿，比啥都实在。
