秋分一过，昼夜温差逐渐拉大，空气里的凉意也愈发明显。对于中老年人来说，这个时节正是调养身体、储备能量的关键期。民间常说“秋补冬藏”，但补不等于大鱼大肉，而是要吃对、吃巧。尤其是高蛋白的家常菜，既能增强体质，又不会给肠胃添负担。今天推荐4种适合秋分后多吃的高蛋白食材，做法简单，软烂好消化，常吃养气血、强筋骨，让身体硬朗少生病。接下来就分享几道家常做法，照着做，轻松吃出好状态。

第一道：番茄豆腐炖牛腩

所需食材：牛腩500克、嫩豆腐1块、番茄3个、生姜3片、大葱1段、八角1颗、生抽2勺、料酒1勺、盐适量、白胡椒粉少许、食用油适量。

步骤：

1. 牛腩切成2厘米见方的块，冷水下锅，加料酒和姜片焯水，水开后撇去浮沫，捞出用温水冲洗干净。

2. 番茄顶部划十字，用开水烫一下去皮，切成小块；豆腐切成与牛腩大小相近的块，用淡盐水浸泡10分钟去豆腥。

3. 锅中倒少许油，放入姜片、葱段和八角炒香，再倒入番茄块，中火翻炒至软烂出汁。

4. 加入焯好的牛腩块，翻炒均匀，让肉块裹上番茄汁，倒入生抽炒出香味。

5. 加入足量热水，水量没过食材两指，大火烧开后转小火，盖上锅盖慢炖1小时。

6. 放入豆腐块，继续炖15分钟，让豆腐充分吸收汤汁。

7. 最后加盐和白胡椒粉调味，转大火收汁至汤汁浓稠即可关火。

1. 牛腩焯水后用温水冲洗，避免肉质遇冷收缩变硬。

2. 番茄要炒出沙，汤汁才浓郁，若番茄偏酸可加少许糖平衡。

3. 豆腐用淡盐水浸泡能去除豆腥味，炖时不易碎。

4. 盐最后放，过早加盐会让牛肉不易炖烂。

第二道：虾仁蒸蛋羹

所需食材：鸡蛋3个、鲜虾仁100克、温水180毫升、生抽1勺、香油几滴、葱花少许、盐少许、料酒少许、白胡椒粉少许。

步骤：

1. 鲜虾仁去虾线，洗净沥干，加少许料酒、白胡椒粉和盐抓匀，腌制10分钟。

2. 鸡蛋打入碗中，加少许盐，用筷子充分打散，尽量打出细腻的蛋液。

3. 加入约1.5倍的温水，搅拌均匀，水温以不烫手为宜。

4. 用细筛网过滤蛋液两遍，滤去泡沫和未打散的蛋清，倒入蒸碗中。

5. 蒸碗上盖一层耐高温保鲜膜，用牙签扎几个小孔，水开后放入蒸锅，中小火蒸8分钟。

6. 待蛋液表面凝固，摆上腌好的虾仁，重新盖上保鲜膜，继续蒸5分钟至虾仁变红熟透。

7. 取出后淋上生抽和香油，撒上葱花，稍凉即可食用。

1. 蛋液与温水比例约1:1.5，蒸出的蛋羹最嫩滑。

2. 过滤蛋液是关键，能去除气泡，成品如镜面般平整。

3. 蒸时火不宜大，中小火可避免蛋羹出现蜂窝。

4. 虾仁后放，能保持鲜嫩口感，不会蒸老。

第三道：山药木耳炒鸡片

所需食材：鸡胸肉200克、铁棍山药1根、干木耳1小把、胡萝卜半根、蒜2瓣、姜丝少许、生抽1勺、蚝油1勺、淀粉1勺、盐适量、食用油适量。

步骤：

1. 干木耳提前用冷水泡发，洗净撕成小朵；山药去皮切片，泡在淡盐水中防氧化；胡萝卜切片。

2. 鸡胸肉切成薄片，加生抽、淀粉和少许食用油抓匀，腌制15分钟。

3. 锅中烧水，水开后放入山药和木耳焯烫1分钟，捞出沥干。

4. 热锅凉油，放入腌好的鸡片，快速滑炒至变色，盛出备用。

5. 锅中留底油，爆香蒜末和姜丝，加入胡萝卜片翻炒至断生。

6. 倒入山药和木耳，大火翻炒均匀，再加入炒好的鸡片。

7. 加蚝油和盐调味，快速翻炒几下，淋少许水淀粉勾薄芡，出锅装盘。

1. 山药去皮时戴手套，避免黏液引起皮肤瘙痒。

2. 鸡片腌制时加淀粉和油，炒出来更嫩滑不柴。

3. 木耳泡发时间不宜过长，冷水泡2小时左右即可。

4. 全程大火快炒，保留食材脆嫩口感和营养。

第四道：鲫鱼萝卜丝汤

所需食材：鲫鱼1条（约400克）、白萝卜半根、生姜4片、大葱1段、枸杞1小把、盐适量、白胡椒粉少许、料酒1勺、食用油适量。

步骤：

1. 鲫鱼去鳞去内脏，洗净后擦干水分，在鱼身两侧各划两刀，抹上料酒和少许盐腌10分钟。

2. 白萝卜去皮切成细丝，生姜切片，大葱切段，枸杞用温水泡软。
