火山土豆泥，淋上酱汁那一刻，食欲直接拉满

火山土豆泥是我刷视频刷到的，看着挺花哨，其实做起来特别简单。土豆泥堆成小山，浇上一圈浓稠的酱汁，看着像火山喷发一样，拍照也好看。关键是味道真的好，土豆泥绵密细腻，酱汁咸香浓郁，拌在一起吃根本停不下来。

土豆选黄心的，蒸出来颜色好看，口感也更绵。去皮切块，上锅蒸到筷子一戳就烂的程度，拿出来趁热压成泥。压泥的时候加点牛奶和黄油，牛奶让土豆泥更顺滑，黄油增香，没有黄油的话用一点点玉米油也行，就是香味差一些。压好的土豆泥加一点盐和白胡椒粉调味，搅匀之后尝一口，味道够了就行。接下来是酱汁，这才是灵魂。锅里放一小块黄油，化开之后下蒜末炒香，别炒糊了，微微发黄就行。然后加生抽、蚝油、一点黑胡椒，再来小半碗水，煮开之后淋入水淀粉，边倒边搅，搅到酱汁变得浓稠、能挂在勺子上就可以了。喜欢辣的话可以加一点小米辣或者黑胡椒碎，味道更有层次。

有时候我还会在土豆泥里加一点芝士碎，压好之后放微波炉叮一下，芝士融化拉丝，再浇上酱汁，那味道简直了。不过原版的就已经很好吃了，土豆本身的绵密加上酱汁的咸香，简单却让人吃不够。这道菜端上桌的时候，大家都会先拍照再动筷子，毕竟颜值在那摆着。但拍完照之后筷子就停不下来了，一勺接一勺，不知不觉盘子就见底了。这种好看又好吃的菜，谁不爱呢。
