老醋菠菜，一口清爽解锁家常下酒风味

在烟火缭绕的餐馆餐桌之上，总有几道小菜看似朴素，却总能牢牢抓住食客的味蕾，老醋菠菜便是这样一道经典。它没有繁复名贵的食材，依靠菠菜的鲜爽、花生米的香脆与陈醋醇厚的酸香相互交融，入口层次丰富，解腻开胃，无论是佐餐下饭，还是小酌时下酒，都是绝佳选择。很多人以为凉拌菜随手拌拌即可，想要做到店里那种鲜香入味、脆嫩爽口的口感，每一步操作都藏着不能忽视的细节，掌握好制作诀窍，在家也能复刻这道快手美味。

准备食材是做好这道菜的基础，主料选用250克新鲜菠菜，搭配60克花生米，调料准备三瓣大蒜、两片生姜、三大勺陈醋，再备盐两勺、白糖两勺、二分之一勺味精，花生米的分量可以根据个人口味，在60克至130克之间自由调整。做这道菜，最先处理的是花生米，这一步最考验耐心，冷油直接下入花生米，全程保持小火慢慢煸炒，随着油温缓缓上升，花生的香气慢慢释放，等到花生表皮微微变色，就能关火捞出控油。刚捞出来的花生并不会立刻变脆，需要摊开静置放凉，完全干透之后才会拥有酥脆口感，切记不要大火猛炸，很容易外表焦糊，内里却没有熟透，破坏整道菜的风味。

处理菠菜时，先切除老根，清洗干净后切成小段。锅中烧足量清水，水完全沸腾后放入菠菜，焯水50秒就迅速捞出。焯水时间千万不能过长，煮太久菠菜会软烂发黄，失去脆嫩的口感。捞出的菠菜立刻放入凉水中过凉，这一步可以锁住菠菜翠绿鲜亮的色泽，防止余热继续焖熟菜叶。等菠菜凉透，一定要用力攥干菜叶里多余的水分，水分残留太多，拌菜之后味道会被稀释，酱汁挂不住，口感也会水水的，这是很多人做凉拌菠菜失败的关键。

全部原料备好之后，就进入拌制环节。把攥干水分的菠菜放进大碗，倒入放凉变脆的花生米，大蒜与生姜切成细末一同放入碗中，依次加入盐、白糖、味精和陈醋。用筷子充分翻拌，让每一片菠菜叶都均匀裹上调味汁，酸甜咸鲜的味道渗透进食材当中。白糖可以中和陈醋的刺激酸味，鲜味儿相互平衡，陈醋独特的发酵香气，赋予这道小菜灵魂，拌匀之后无需久放，直接装盘上桌。
