独家秘诀！炸麻团记住这3点，不开裂不塌陷，个个空心比卖的还香

不知道有多少朋友和我一样，对早餐摊上那种金灿灿、圆滚滚的麻团毫无抵抗力？咬一口，外皮酥脆掉渣，里面软糯香甜，尤其是那种空心的口感，简直太治愈了。但说实话，这玩意儿买着吃确实香，自己做却总翻车——要么炸的时候直接裂开，要么出锅就塌成了“面饼”，心塞得很。其实想要炸出完美的麻团，真不需要啥高超的厨艺。今天我就把反复试验多次总结出来的“独门秘诀”全盘托出，只要你看完记住关键的“一烫二压三控温”，保证你也能一次成功，炸出来的麻团个个空心，不开裂不塌陷，比外面卖的还香！

和面有讲究，“烫面”是空心第一步

很多朋友炸麻团失败，从第一步和面就错了。你试试直接用冷水和面，那炸出来的麻团大概率是实心的，甚至硬得像石头。为啥？因为冷水揉的面团缺乏延展性，油锅里温度一高，它根本撑不开，自然就膨胀不起来了。

记住我们的秘诀：得用开水烫面！

做法很简单：把糯米粉倒进盆里，一边倒刚烧开的滚水，一边用筷子快速搅成絮状。这一步的作用是让糯米粉充分糊化，变得更有黏性和筋力，这样后续才能包住膨胀产生的气体，形成空心结构。等面絮稍微晾凉一点，再上手揉成一个光滑、软硬适中的面团。这里要特别强调一下，面团不能太软，否则下锅一炸就塌了；也不能太硬，不然炸不开，容易裂。

包制和裹芝麻，细节决定成败

面团揉好了，直接搓成长条，下成大小均匀的剂子。如果想吃带馅儿的，这时候就可以像包汤圆一样，把豆沙馅包进去，然后收口捏紧，千万不能留缝隙，否则炸的时候空气一膨胀，麻团就从缝隙里裂开了，这是“不开裂”的一个关键点。

接下来就是沾芝麻。很多人炸完麻团，芝麻掉了一大半，看着光秃秃的，卖相全无。秘诀在于：先给搓好的麻团生坯表面沾一层水，然后再丢进芝麻碗里滚一圈。沾上水后，芝麻会粘得特别牢。但这还没完，最核心的一步是——沾完芝麻后，一定要用两个手心轻轻地、反复地把麻团攥一攥、搓一搓。这个动作能让芝麻粒实实在在地嵌进糯米面皮里，这样下锅炸的时候，芝麻才不会“离家出走”。

油温与按压，空心与否在此一举

终于到了炸制环节，这也是麻团“空心”最关键的一步，分为两点：凉油下锅和反复按压。

好多人习惯油烧热了再下麻团，这绝对是大忌！外面温度太高，麻团表面瞬间定型，里面受热膨胀后撑不开表皮，不裂开才怪。正确的做法是“凉油下锅”，也就是油温还微热（大概三四成热，筷子放进去冒小气泡时）就把麻团放进去，让麻团的温度和油温一起慢慢升高，这样内外受热均匀，才能完美解决开裂问题。

等麻团慢慢炸到浮起来的时候，好戏才真正开始。这时候千万别闲着，拿起你的漏勺，开始对浮起的麻团进行“温柔拍打”——轻轻地把麻团按进油里，压扁它，然后它会自己再弹起来恢复圆形。弹起来之后再压下去，如此反复多次。这个按压的动作，是在逼迫麻团内部的气体把组织撑开，让它不断膨胀，这是形成超大空心的“必杀技”。记住，全程要保持中小火慢炸，千万别心急用大火，不然外面焦了里面还是生的。一直炸到麻团表面金黄，体积明显变大，外壳硬挺，用漏勺捞起来感觉轻飘飘的，就可以出锅了！这样炸出来的麻团，绝对不会塌陷。
