头伏鸡肉嫩，二伏鸭汤鲜：跟着老祖宗的口诀，把苦夏吃成补夏

不知道大家有没有这种感觉，一入伏，这日子就像进了蒸笼，浑身不得劲。胃口像被锁住了一样，看见啥都提不起兴趣，人也是昏昏沉沉的，干啥都缺口气。这时候，咱们的老祖宗可就留下智慧了——“头伏鸡，二伏鸭”。别小看这六个字，它可不是随便说说的顺口溜，里头藏着的是顺应天时的食补大学问。头伏吃只鸡，把底子托住；二伏炖锅鸭，把虚火平下去。今天咱们就好好聊聊，这“鸡”和“鸭”到底有啥魔力，能让咱们把这最难受的几十天，舒舒服服地“吃”过去。

头伏一只鸡，一年好身体

刚入伏那会儿，虽然热，但人体的阳气刚开始往外“冒”，加上出汗多，消耗大，身体其实处在一个相对空虚的状态。这时候，就需要给身体加点“油”，补充点扎实的能量。

为啥偏偏是鸡呢？咱们平时总说老母鸡炖汤补，但头伏这天的鸡，讲究吃的是嫩公鸡。按照老传统，公鸡属阳，有“扶阳”的说法，正好顺应三伏天“春夏养阳”的大原则。

这可不是瞎讲究。你想啊，头伏天热得人只想喝粥，体力活儿稍微一干就腿软。鸡肉里的优质蛋白特别丰富，还容易消化吸收，正好能快速补充我们流失的体力。而且这时候吃鸡，不建议像冬天那样慢炖一锅油腻的汤，最好是小炒或者红烧。嫩公鸡的肉质紧实，爆炒之后鲜嫩入味，能大大刺激因暑热而萎靡的食欲。

在咱们江西、湖南一带，老辈人做头伏鸡还有个特别的讲究：吃鸡的时候要把门窗关严实了，不许开风扇，吃得大汗淋漓才叫到位。虽然现在咱们有空调了不必这么“自虐”，但这里头的道理是通的——借着鸡肉的温补之力，发发汗，正好把体内积攒了一年的寒湿气带出去，到了秋冬才不容易生病。

二伏鸭汤鲜，清热又养人

要是说头伏吃鸡是“补”，那到了二伏吃鸭子，重点就在“清”了。

到了中伏，那可真是“热中之热”，暑热到了顶峰，湿气也最重。这时候要是再大口吃温热的鸡肉，那就好比往快烧干水的锅里添柴火，容易上火。这时候，整天在水里游的鸭子就成了“救星”。鸭子性凉，味甘，最大的好处就是滋阴清热、利水消肿。

二伏天出汗出到极致，身体的津液亏得厉害，很多人会觉得口干舌燥、心里燥得慌，晚上也睡不安稳。这时候炖一锅老鸭汤，那股子清凉润泽的劲儿，正好能把身体里的虚火给平下去。而且鸭肉有个别的好肉比不了的好处——补虚而不上火 。它既能补充我们亏空的体力，又不会给脾胃增加负担，老人家和小孩都能放心吃。
