选好米，是这锅粥的灵魂第一步

要想粥底软糯香稠，米的选择可不能马虎。以前我也图省事，拿什么米都往锅里倒，后来才知差之毫厘，谬以千里。正宗的潮汕砂锅粥，行家首推东北珍珠米。这米粒短圆胖乎，胶质重，煮出来天然就带着一股绵滑劲儿。讲究些的，还可以掺上少许糯米，增加那份黏稠的口感。

米下锅前，得先“醒”上一醒。 淘洗干净后，用清水浸泡半小时到一小时，让米粒吸饱水分。这一步好比运动前的热身，能让米在后头的熬煮中更快“开花”，释放出内里的淀粉。泡好的米别急着倒水，沥干后拌入一勺花生油，这是老一辈传下的窍门，油能锁住米香，还能防止煮的时候粘锅底。

熬的是粥，更是耐心和火候

砂锅之所以是灵魂器具，就在于它受热均匀、保温性极佳，能让每一粒米在温柔的火力中慢慢“融化”。水得一次加足，最忌中途添水，坏了粥的魂。比例大概是1份米配10到12份水，想要稀一点可酌情增减。

待锅中的米粒煮到七八分熟，刚“开花”但还保留一点硬芯的时候，就到了下海鲜的最佳时机。虾蟹这类易熟的海鲜，煮久了肉就老了，失去那份脆嫩和清甜。

鲜虾剪去虾须和虾枪，从背部剖开，挑出虾线，这样既干净，煮出来的虾也像绽放的花，好看又入味。螃蟹则要揭开壳，去掉不能吃的腮和内脏，斩成小块。随着海鲜下锅，再把提前泡软的干贝撕成丝扔进去，那鲜味简直是成倍地往上窜。
