入秋排湿正当时：常吃“秋季6宝”，祛湿健脾，一年轻松少生病！

入秋这阵子，很多人一到晚上就觉得身上发沉，嘴里没味，早上起床也像没睡醒。家里老人更明显，饭量不大，肚子里却总像堵着一口气。我在厨房里一琢磨，最实在的办法还是从一日三餐下手，别整那些花里胡哨的，顺着节气吃，胃舒服，身子也轻快。

这份秋季家常菜单，核心就一个意思：用清爽、温和、好消化的食材，把湿气往下带，把脾胃养顺。空心菜、香菇、鸡肉、洋葱、山药、菠菜、口蘑、莲藕、玉米、排骨，这些菜看着普通，搭配起来却很有门道，既有蔬菜的清利，也有肉汤的补养，适合一家老小一起吃。

先说蒜蓉炒空心菜。空心菜在南方北方都常见，到了秋天，很多人拿它当清口菜。它本身水分足，口感脆，配蒜蓉一炒，香味一下就出来了。做法也不复杂，400克空心菜，3瓣蒜末，盐和油就够了。关键是火要大，动作要快，不然叶子一蔫，口感就差了。少许料酒一烹，锅气就更足，山东人讲究的就是这个利索劲。

从营养上看，空心菜含有膳食纤维、钾和维生素C，吃起来清爽，适合秋天搭配油腻一点的菜一起上桌。蒜末除了提味，也能让这道菜更开胃。很多家庭到了入秋还天天炖肉，胃里没得喘气，来一盘蒜蓉空心菜，就像给桌面开了个小窗，透气。

再看香菇滑鸡，这道菜就不是单纯的下饭了，属于那种一端上桌，老人孩子都愿意夹两筷子的菜。鸡腿肉300克，干香菇8朵泡发，姜片、葱花、生抽、蚝油、淀粉、料酒一拌，先腌再炒，鸡肉就嫩。香菇泡发后别把水倒光，留一点香菇水进锅，鲜味能提一截，这个做法很多老厨子都懂。

香菇里有多糖和鲜味物质，鸡肉又是优质蛋白，秋天吃它，不会像大鱼大肉那样压人。鸡腿肉比鸡胸肉更滑，配香菇焖炒，汁水挂在肉上，扒一口米饭，真是顺溜。家里有老人，牙口不算特别硬，这道菜比红烧大块肉更合适，软和，入味，也不费劲。

洋葱焖鸡块这道菜，闻着就有食欲。鸡块500克，洋葱1个，姜片、蒜末、生抽、老抽、糖、料酒一放，先把鸡块煸出香味，再慢慢焖。很多人做洋葱总爱下得太早，结果焖没了脆甜劲，成了软塌塌一锅泥。洋葱要在后段放，最后几分钟进锅，既有甜味，又保留口感，这一步很关键。

洋葱在做菜里有点像配角里的主心骨，平时不起眼，一加热就把香气和甜味顶上来。它和鸡肉搭配，汤汁浓，味道厚，秋天吃这类焖菜，比只吃凉拌菜更顶饿。尤其是家里有两个半大小子，饭量跟小火车似的，这种菜一上，米饭消耗得那叫一个快。

胡萝卜炒山药，是不少北方家庭秋天餐桌上的老熟人。胡萝卜1根，山药1根，蒜末少许，简单一炒就成。山药去皮时最好戴手套，别嫌麻烦，手痒起来可不是闹着玩的。切好后先焯一下或者稍微焖一会儿，保持脆嫩，不要炒成一锅糊。胡萝卜本身有点甜，山药口感绵，合在一起很顺。
