后悔没早知道！秋燥没胃口、手脚冰凉，8道菜一上桌全家抢到舔盘

刚入深秋就发现不对劲：早上起来喉咙干得能磨出砂纸，连喝三杯温水也压不下那股燥意，做的家常菜端上桌，娃扒拉两口就喊“没味道不想吃”，老人吃两口就皱眉说太凉，晚上睡觉爱人裹着被子还脚凉得像块冰。前阵子刷了好多养胃润秋的菜谱，要么做起来麻烦要炖两三个小时，要么味道太怪全家都不买账，直到跟着老中医学了这三道菜，食材普通做法简单，连吃一周现在全家吃饭不用催，下班刚开门就闻着香味，最近我家直接把相关的8道适配秋冬的快手家常菜整理出来，换着做一周都不重样，今天就把压箱底的全部分享给你。

一、花生莲藕排骨汤

食材：猪排骨500g(推荐肋排或筒子

骨)、粉藕2节(约800g，选表皮淡红、藕节粗短的湖北粉藕为佳)、白皮花生米(适量)，老姜1块、葱2根。

做法：

1、排骨剁成5cm段，冷水浸泡30分钟去血水，中途换水1次。

2、粉藕去皮切滚刀块，用刀面轻拍藕块使纤维松散，便于入味。

3、老姜拍松，葱打结备用。

4、排骨冷水下锅，加1勺料酒、3片姜，中火煮沸后撇净浮沫，焯5分钟捞出，用温水冲洗，沥干备用。

5、锅中放少许油炒香姜葱,放入排骨翻炒至表面微微金黄，倒入适量开水大火煮3分钟，后倒入砂锅。

6、砂锅中加足量热水(约2.5L)，放入排骨、姜块、葱结，大火煮沸后转小火慢炖1小时。

7、加入藕块、花生米继续炖煮40分钟、1小时，至藕粉排骨酥烂(用筷子轻戳藕块，能穿透即熟透)。

8、捞出葱结，加盐调味，撒少许白胡椒粉提鲜，盛出后撒葱花点缀即可。

二、胡萝卜炒牛肉丝

准备食材：牛肉、胡萝卜、青椒、姜、蒜、葱。

做法步骤：

1、准备一块牛肉（建议选用牛里脊），洗净后切成均匀的细丝，放入碗中，加入少许盐、1勺生抽、1勺蚝油、少许胡椒粉、1勺淀粉，倒入少量清水抓拌均匀，腌制15分钟。

2、准备两根胡萝卜，去皮洗净后改刀切成细丝。准备一根青椒，去籽洗净后切成细丝备用。姜切丝，蒜切末，葱切段备用。

3、起锅烧油，油热后将腌制好的牛肉丝下锅，大火快速翻炒至变色后盛出备用。

4、锅中留少许底油，下入姜丝、蒜末爆香，放入胡萝卜丝翻炒1分钟，炒至稍微软化。

5、倒入炒好的牛肉丝，加入1勺生抽、少许盐、鸡精调味，快速翻炒均匀，再放入青椒丝，继续大火翻炒至青椒断生。

6、撒入葱段，翻炒均匀后即可出锅装盘。

三、清蒸鲈鱼

所需食材：新鲜鲈鱼1条（约500克）、大葱1根、生姜1块、红椒半个、蒸鱼豉油3勺、料酒2勺、盐适量、食用油适量。

步骤：

1.鲈鱼去鳞去鳃，从腹部剖开去除内脏，清洗干净后在鱼身两侧各斜切三刀，便于入味和均匀受热。

2.用厨房纸吸干鱼身表面水分，在鱼身内外均匀抹上少许盐和料酒，鱼腹内塞入姜片和葱段去腥。

3.取一个大盘子，底部铺上葱段和姜片，将鲈鱼平放其上，在鱼身表面再铺一层姜丝。

4.锅中加水大火烧开，水沸后将鱼盘放入蒸锅，盖上锅盖大火蒸8至10分钟，视鱼的大小调整时间。

5.蒸鱼期间，将大葱白和葱绿分别切成细丝，红椒切成细丝，一同放入冷水中浸泡，使其自然卷曲。

6.鱼蒸好后关火焖2分钟，取出倒掉盘中蒸出的腥水，去掉表面的姜丝，重新铺上葱丝和红椒丝。

7.均匀淋上蒸鱼豉油，另起锅烧热油至冒烟，趁热浇在葱丝和鱼身上，激发出浓郁香气即可上桌。

四、平菇烧豆腐

食材：

嫩豆腐1块，平菇250克，蒜，生抽，少许老抽，盐。

做法：

1.平菇撕成小朵焯水捞出挤干。

2.豆腐切方块下锅煎至两面微黄盛起。

3.锅中放蒜爆香，放入平菇翻炒，加生抽、一点点老抽，少量清水，放入豆腐，中小火焖5分钟，加盐调味，略微收汁出锅。

五、莲藕花生汤

所需食材：

粉藕500克（选两头带节、表皮偏黄者为佳）、红衣花生80克、猪脊骨250克、生姜5片、蜜枣2颗、陈皮1小块、食盐适量、白胡椒粉少许、料酒1勺。

步骤：

1. 花生洗净，用温水提前浸泡2小时，使其吸足水分；陈皮用冷水泡软后刮去内部白瓤，减少苦味。
2. 猪脊骨斩成大块，冷水下锅，加入姜片2片和料酒，大火煮沸后撇去浮沫，焯煮3分钟，捞出用温水冲净附着的血沫。
3. 莲藕削去外皮，切去两端藕节，滚刀切成大块，放入清水中加少许白醋浸泡，防止氧化变黑。
4. 取一口砂锅，注入足量清水（约3升），一次加足，放入焯好的脊骨、泡好的花生、剩余姜片、蜜枣和陈皮。
5. 大火烧开转小火，保持汤面微沸状态，慢炖1小时后，捞出藕块冲洗一下，投入锅中继续炖煮。
6. 再炖40分钟，至藕块用筷子能轻松穿透、汤色变粉白，加入食盐调味，搅拌使盐溶化。
7. 关火前撒入白胡椒粉，盖上盖子焖5分钟，让胡椒的辛香充分融入汤中，即可盛碗享用。

六、奥尔良烤鸡翅根

准备食材

鸡翅根12个、奥尔良腌料30克、少许生抽、食用油、蜂蜜

制作步骤

1. 鸡翅根洗净，两面改刀，方便入味去腥。
2. 无需复杂调料，直接加入奥尔良腌料。
3. 加少许生抽、一勺食用油，下手反复抓拌揉搓。
4. 一定要多揉一会，让调料渗透进肉里。
5. 密封冷藏腌制2小时，隔夜腌制味道最佳。
6. 空气炸锅垫油纸，整齐摆好鸡翅根。
7. 表面轻轻刷一层薄油，锁住水分。
8. 190度先烤12分钟，中途拉出翻面一次。
9. 翻面后再烤8分钟，保证两面均匀熟透。
10. 最后两分钟刷一点点蜂蜜，颜色更好看。
11. 出炉香气扑鼻，肉质嫩滑、正宗奥尔良风味！
12. 简单零难度，每次做孩子都抢光！

七、白灼基围虾

食材： 基围虾 / 生姜 / 大葱 / 香葱 / 生抽 / 陈醋 / 料酒 / 白糖 / 盐 / 香油

步骤：

1️⃣ 基围虾剪去虾须虾枪，挑去虾线，清水冲洗沥干；姜一半切片一半切末，葱切段，香葱切葱花。

2️⃣ 锅中加足量清水，放姜片、葱段和料酒，大火烧开。

3️⃣ 水沸后下基围虾，煮2分钟至虾身全部变红卷曲，立即捞出沥干装盘。

4️⃣ 调蘸汁：姜末、葱花、生抽、陈醋、少许白糖和几滴香油搅匀。

5️⃣ 锅中热油浇一勺在蘸汁上激出姜葱香，虾蘸汁食用即可。

八、番茄冬瓜鸡蛋汤

所需食材

番茄2个、冬瓜、鸡蛋、葱花、盐、少许生抽

详细制作步骤

1. 冬瓜切薄片清洗干净，番茄去皮切小丁。
2. 鸡蛋打入碗中，充分搅拌均匀备用。
3. 热锅烧油，下入番茄丁不停翻炒，炒出红沙浓汁。
4. 加入清水大火煮开。
5. 放入冬瓜片，中小火煮4分钟，把冬瓜煮软。
6. 保持汤面沸腾，缓慢转圈淋入蛋液。
7. 等待蛋花浮起成型，轻轻推散。
8. 加少许盐、一点点生抽提鲜调味。
9. 再次煮1分钟入味。
