肝不好，人先老！入秋后多吃这8种“护肝菜”，气色红润，睡眠好

老辈人常说“肝是人体总开关”，肝好的人，脸上透亮不发黄，沾枕头就能睡，连走路都带劲儿。可入秋后秋燥耗损阴液，不少人开始嘴巴发苦、眼干发涩，照镜子一看脸色暗黄长斑，躺床上翻来覆去到后半夜还醒着——这其实是肝在给你发“求救信号”。不用急着买贵价保健品，家常菜里藏着8种实打实的“护肝好手”，做法简单还好吃，全家都能跟着吃，养着养着气色回来了，睡觉也踏实。

一、菌菇滑肉片

食材

猪瘦肉三百克，金针菇一把，白玉菇一把，鸡蛋一个，生姜少许，生抽一勺，少许盐，玉米淀粉两勺，食用油，少许胡椒粉。

做法

1.猪肉切成薄片，加入生抽、淀粉、半个蛋清抓匀腌制十五分钟。

2.两种菌菇切去根部清洗干净，生姜切丝。

3.锅里烧开水，放入菌菇焯水两分钟捞出沥干。

4.锅中放少许油，姜丝下锅爆香，加入适量清水烧开，水沸腾之后把肉片分散下入锅中，肉片变色之后撇去浮沫，放入焯好的菌菇，小火煮五分钟，放适量盐和胡椒粉调味就可以出锅。

二、清炒茭白丝

食材

嫩茭白、大蒜、盐、少许白糖、鸡精

详细步骤

1、茭白切均匀细丝，清水快速冲洗沥干；大蒜切片。

2、热锅凉油，下入蒜片爆出香味。

3、倒入茭白丝全程大火快炒，炒至茭白变软、出水断生。

4、加少许盐、一点点白糖提鲜，少许鸡精调味。

5、大火翻炒均匀，锁鲜即可出锅。

三、冬瓜丸子汤

食材：冬瓜300克、猪肉馅200克、姜末、葱花、盐、白胡椒粉、生抽、淀粉、香油

做法：

1、猪肉馅加姜末、葱花、盐、生抽、白胡椒粉、淀粉、少许水，顺一个方向搅打上劲。

2、冬瓜去皮切薄片。

3、锅中加水烧开，转小火，用勺子将肉馅团成丸子下入锅中。

4、丸子浮起后，放入冬瓜片，煮3-5分钟至冬瓜透明。

5、加盐、白胡椒粉调味，淋几滴香油，撒葱花即可。

四、凉拌秋葵

所需食材：

鲜嫩秋葵400克、蒜末20克、小米辣2个、生抽3勺、香醋2勺、蚝油半勺、白糖1小勺、香油1勺、藤椒油几滴（可选）、熟白芝麻适量、冰水一大盆。

步骤：

1. 秋葵用盐搓洗表面细绒毛，冲洗干净，不要切去蒂部，整根备用，以防焯水时黏液流失过多。
2. 锅中烧足量清水，水沸后加一小勺盐和几滴油，下秋葵焯烫2分30秒，时间精确计时。
3. 到点立即捞出，迅速投入提前备好的冰水中，浸泡5分钟至彻底凉透，此举是脆嫩的关键。
4. 将冰镇后的秋葵捞出，用厨房纸巾吸干表面水分，切去硬蒂，再斜刀切成约3厘米的段。
5. 小碗中调入生抽、香醋、蚝油、白糖、蒜末和切圈的小米辣，搅拌均匀至糖完全溶解。
6. 将调好的味汁淋在秋葵上，再浇上香油和藤椒油，撒入熟白芝麻，轻轻拌匀。
7. 静置腌制10分钟，让秋葵充分吸汁入味，上桌前再翻拌一次，确保每块都挂满酱汁。

五、清炒口蘑西兰花

食材：口蘑 200g、西兰花 300g、蒜 3 瓣、少许盐、生抽

做法:

1、西兰花切小朵，盐水浸泡 5 分钟洗净；口蘑切片，大蒜切末。

2、锅中烧水，水开加少许盐油，放入西兰花焯水 1 分钟捞出沥干。

3、热锅烧油下蒜末爆香，倒入口蘑中火翻炒至变软出汁水。

4、加入西兰花，放少许盐、一点点生抽调味，大火快速翻匀即可出锅。

六、土豆烧豆角

食材：土豆 2 个、长豆角 300g、葱、干辣椒少许、盐、少许蚝油

做法:

1、土豆去皮切滚刀块；豆角掰成长段洗净。

2、热锅放油，下葱段干辣椒爆香，先放入豆角煸炒至表皮微微起皱。

3、倒入土豆块一同翻炒两分钟，加热水没过食材大半。

4、盖上锅盖中小火焖 8‑10 分钟，土豆豆角熟透，加盐、蚝油调味，大火收一下汤汁即可。

七、口蘑炒芦笋

所需食材：新鲜口蘑300克，芦笋250克，大蒜3瓣，生抽1勺，蚝油1勺，食盐适量，黑胡椒粉少许，食用油适量。

步骤：

1. 口蘑放入清水中，加入少许食盐浸泡5分钟，去除表面杂质和泥沙，捞出后切成厚约3毫米的薄片备用。
2. 芦笋洗净，削去根部较老的外皮，切成约4厘米长的斜段，放入沸水中焯烫30秒后捞出过凉水，沥干备用。
3. 大蒜剥皮后切成蒜末，分成两份，一份用于爆香，一份出锅前增香。
4. 炒锅烧热，倒入适量食用油，油温五成热时放入第一份蒜末，小火煸炒出香味。
5. 将口蘑片倒入锅中，转中大火翻炒，待口蘑出水变软、边缘微微金黄时，加入焯好的芦笋段继续翻炒。
6. 沿锅边淋入生抽和蚝油，撒入适量食盐和少许黑胡椒粉，快速翻炒均匀，使调料充分包裹食材。
7. 出锅前放入剩余蒜末，翻炒几下即可关火装盘，蒜香浓郁、口感清爽。

八、银耳雪梨羹

食材：干银耳1小朵，雪梨1个，枸杞一小把，少量冰糖

步骤：

1. 银耳冷水泡发1–2小时，剪去黄色硬根，撕成细碎的小朵（更容易出胶）；
2. 雪梨用盐搓洗表皮，带皮切小块；
3. 银耳下锅，加足量清水，小火慢炖40分钟，炖出胶质；
