值得分享的菜肴推荐：香辣鱿鱼须、爆炒牛肉、干煎辣豆腐

香辣鱿鱼须

材料：鱿鱼须500g、蒜苔150g、干辣椒40g、青辣椒6个、蒜头30g、生姜20g、郫县豆瓣酱30g、盐适量、鸡精5g、白糖2g

做法：

1.、鱿鱼须清洗干净切成小块，放入盘里待用。干辣椒洗净剪成小段，生姜去皮洗净切片，蒜去皮洗净待用。

2、青辣椒洗净切圈，蒜苔去掉头尾，清洗干净切段。锅里放入适量水烧开，把鱿鱼须放入焯熟，焯好捞起来，冲洗干净，沥干水待用。

3、热锅放入适量油，放入干辣椒，蒜瓣，姜片炒出香味。加入30g郫县豆瓣酱炒出红油。鱿鱼须和辣椒搭配，饭店都做不出来的味道，只要配料放对！加入蒜苔翻炒1分钟。

4、加入焯好的鱿鱼须翻炒均匀。加入适量盐翻炒1分钟，再加入青辣椒圈

酱肘子

制作方法：1.肘子清理干净，下入锅中放入葱姜料酒煮五分钟，捞出洗净备用

2.锅中烧油放入冰糖炒至枣红色，倒入开水放入肘子，放入葱姜，八角，黄豆酱，腐乳汁，酱油，蚝油，老抽，盐，十三香，鸡精，小火炖五十分钟即可出锅

爆炒牛肉

制作方法：1.牛肉洗净切成薄片，加入盐，料酒，淀粉，蛋清，抓拌均匀腌制二十分钟

2.锅中烧油下入牛肉小火炒至变色盛出，锅中放入葱姜蒜，圆葱，青红椒，翻炒出香味，加盐，鸡精，酱油，白芝麻，白糖，大火翻炒两分钟即可出锅

干煸鸡块

材料：鸡1只、干海椒、八角、花椒、生姜、蒜瓣、料酒、生抽、老抽、白砂糖、食盐

制作方法：

1.鸡清理干净后剁成差不多大小的块；锅中烧少量油，下八角、花椒炒香；

2.倒入鸡块翻炒，烹入一些料酒，继续炒至肉皮收缩变色盛出；

3.锅中下入姜蒜末爆香，下入海椒煸一下；倒入鸡块，加生抽和老抽翻炒均匀，倒入没过食材的水量；

4.大火烧开，中小火炖煮至成熟；大火收汁，加白砂糖和食盐调味翻匀出锅。

干煎辣豆腐

材料：北豆腐1盒，鲜香菇4朵，胡萝卜1根，尖椒1根，橄榄油4汤匙（60毫升），豆豉辣酱2汤匙（30克）

做法：

1、将北豆腐切成2cm大小见方的块儿，胡萝卜去皮切片，尖椒去蒂去籽切成三角块，香菇洗净后切成小块。

2、锅中倒入橄榄油，大火加热待油七成热时，放入豆腐块，改成中小火煎炸成几面金黄色捞出。

3、加热锅中的底油，待七成热时放入胡萝卜片、香菇块，充分炒透后，放入豆腐块、豆豉辣酱，不要加水，用中小火继续煸炒1分钟左右。

4、最后加入尖椒块翻炒30秒钟后即可出锅。如果咸度不够，可以适当加一点盐

杏鲍菇炒肉

材料：猪肉 100克、杏鲍菇 2个、尖椒 2个、豆瓣酱 1小勺、生抽 少许、料酒 适量、植物油 适量

做法：

1、杏鲍菇切片、葱姜切丝、蒜切片

2、瘦肉切薄片、青椒切片

3、平底锅入少许油，放入杏鲍菇片煎至两面微黄，盛出备用

4、另起炒锅放少许油，把肉片煎炒约5分钟，放入郫县豆瓣酱炒匀

5、放入葱姜蒜炒出香味

6、加入煎过的杏鲍菇片、少许生抽、料酒和一小勺水炒片刻

7、加入青椒炒至断生即可

小炒猪皮

材料：自制黄豆豉两勺，猪皮三块，食用油少许，葱少许，姜少许，蒜少许，青少许，红尖椒少许，料酒少许，鸡精少许

做法：

1、将猪皮上的毛清理干净，洗净，放入锅里煮15分钟。

2、将煮好的猪皮切条备用。

3、锅内油烧热，放入葱、姜、蒜煸出香味，倒入豆豉炒香。

4、加入切好的猪皮、料酒翻炒一分钟，加入青红尖椒翻炒一分钟倒入鸡精拌匀即可。

凉拌黄瓜色

做法

1.准备好所有材料洗净备用。

2.用多功能切菜刀，把黄瓜切成大约1厘米到1.5厘米的段。

3.再把每段分成几小块。

4.依前两步把所有黄瓜切好。

5.切好的黄瓜备用，辣椒蒜切碎备用。

6.取一个大碗，放入切好的黄瓜，放入适量盐搅匀。腌制10分钟左右，等黄瓜出现了少量水份时，把水倒掉。

7.然后加入辣椒粉和白糖。

8.锅中倒入适量油，把蒜末，辣椒炒出香味（这一步喜欢吃生蒜的可以省略掉，我是不吃了，所以炒一下）

9.喜欢生蒜的直接放上面，然后把图八，烧热油淋在上面。拌匀。

牛肉炒小藕

材料：里脊牛肉250g，小藕100g，红椒2个，青椒1个，泡椒5个，小粉1茶勺，盐适量，香油1茶勺，酱油2茶勺，油，大蒜

做法

1、将里脊牛肉切成薄片，装碗，加入2茶勺酱油，1茶勺香油，拌匀腌制15分钟。

2、小藕切小段，青红椒切小圈，大蒜拍碎。

3、食材都准备好了，把锅烧热，倒入适量油，放入腌好的牛肉，中大火翻炒，炒至8成熟出锅装盘备用。

4、锅中再倒少许的油，然后放入大蒜、青红椒、小藕、泡椒一同翻炒，炒至小藕断生，放入牛肉一同翻炒片刻，勾一层薄芡，芡汁里有盐，翻炒均匀，出锅装盘

鲜虾炒蛋

做法1、将鲜虾洗净去皮，从背部二，三节中用牙签挑出虾线

2、加入生粉，盐，胡椒粉，蛋清和姜末抓匀，使之上浆入味；

3、烧锅开水，将调制入味的虾仁下入, 虾仁变色后立刻捞出；

4、按一勺淀粉和二勺水来调制水淀粉, 再准备好其他的原材料；5

5、先将鸡蛋加入适量的盐和胡椒粉打散后，再加入小葱末和水淀粉搅拌均匀；

6、烧热锅，加入油再转动锅，让热油均匀地铺在锅内表面后，下入蛋液；

7、等蛋液边缘开始逐渐凝固后，用木铲将蛋液轻轻地向锅中央推；

8、继续重复这个动作，直到鸡蛋虾仁在锅中央慢慢烘到八，九成熟即可关火；

香菇炒豌豆

食材：豌豆粒300g、干香菇8朵、花椒粉3g、盐5g、水淀粉15ml、色拉油、红尖椒粒

做法：

1.干香菇洗净，温水泡发后，切成比豌豆粒稍微大点的丁。泡香菇的水待用，不要扔。

2.炒锅置于火上，倒入适量油，用中火加热至七成，放入花椒粉炒香。

3.倒入香菇丁和豌豆粒翻炒均匀。

4.倒入适量香菇水，盖上锅盖焖烧5分钟。

5.加盐、淋入水淀粉，翻炒均匀即可出锅，最后撒少许红尖椒粒点缀一下。

爆炒猪肚

做法1.买回来的猪肚洗干净用水烫一下

2.烫好后捞出再洗一下

3.锅中再次放入水姜和烫洗好的猪肚煮熟

4.煮熟后捞出切成丝状备用

5.准备好姜蒜八角红干椒（这里红干椒我没全拍进去可以多放几个）

6.锅中倒入油放入准备好的调料爆香

7.然后倒入猪肚爆炒

8.炒上一会可以加一点老抽盐糖调味

9.然后加入青椒和红椒丝翻炒片刻

酸菜鱼

食材：鲜活草鱼3斤，重酸菜半棵，乌冬面1包，姜、干辣椒、花椒、八角、泡椒、蒜子、盐、胡椒粉、蛋清、淀粉、食用油、鸡精各适量

做法

1、鱼去掉头尾，取中段（要是家里人多的，也可以头尾一起用上）。

2、辣椒剪成丝，花椒和八角准备好；泡椒、蒜子、姜片备好。

3、按照刀从头部斜向尾部的角度，片成鱼片。

4、鱼片滑嫩鲜甜，要用一汤勺盐，在水下抓洗，抓洗揉搓到水清澈（换水三次，鱼片白嫩透亮）。

5、用蛋清两个，盐一茶匙，胡椒粉一茶匙，食用油一汤匙，鸡精半茶匙，腌渍10分钟后，拌上半汤勺的淀粉。

6、乌冬粉用开水烫一下，酸菜切丝焯水煮开，这样才能脆嫩没有异味。

7、锅里放油，辣椒花椒八角和酸菜一起下去炒出香味，放入鱼骨头一起炒到变色；兑水，放泡椒、泡椒水、姜片、蒜片煮开。

8、大火煮开，小火煮8分钟左右，放一茶匙盐。

9、把锅里的骨头，酸菜捞出来，在一个碗里，把乌冬粉煮熟放碗里。

9、开最大火，鱼片一片一片地放进去（动作要快）；全部放好盖上锅盖，等锅冒小泡就关火。

10、乌冬粉铺在最下面，铺一层酸菜，鱼片捞在碗里，兑点汁水；剪点辣椒丝放在鱼片上（喜欢再麻辣的可以用一茶匙辣椒粉和花椒粉的混合，撒在上面）。

11、净锅上炉子，放两汤匙油，冷油就放花椒和干辣椒，稍微有点焦脆了就捞出来放在鱼片上；剩下的油烧热冒烟，停三秒，浇在鱼上面即可

芹菜炒鱿鱼

做法：1.将鲜鱿鱼剖开，先切段，再切成粗条，放入开水中快速焯一下，捞出;芹菜择洗干净，切段。

2.锅中热油，放入芹菜段和盐快速翻炒，沿锅边洒一点水，炒至芹菜味道散出来时，放入鲜鱿鱼、酱油和香油，炒匀即可。
