年纪大了，少吃柿子！这8道暖身菜端上桌，补钙补蛋白，腿脚有劲

秋后寒风一天比一天硬，不少中老年朋友总爱囤点软甜的柿子尝鲜，这里可要多提个醒：年纪大了肠胃蠕动变慢，柿子里的鞣酸和果胶遇上空腹的胃酸，很容易结成硬块堵在胃里，还会影响钙和蛋白质的吸收，秋冬嘴馋可千万别多吃。与其贪一口凉甜闹肚子，不如把8道热乎暖身菜端上桌，家常食材好操作，钙和蛋白双双补到位，数九寒天出门遛弯，腿脚照样硬朗有劲。

一、娃娃菜鸡蛋豆腐汤

准备食材: 娃娃菜、豆腐、鸡蛋、姜丝、葱花。

做法步骤:

1、豆腐切小块，然后热锅烧油，油热以后，往里打入鸡蛋煎熟，再把简单切小块备用。

2、清洗干净娃娃菜切好，然后热锅烧油，油热以后，放入姜丝爆香，接着加入清水大火煮开。

3、然后往里加入豆腐煮一分钟，再倒入娃娃菜和煎蛋继续煮一分钟。

4、接着往里加入适量的食盐调味，再撒入一把葱花点缀提鲜，即可出锅开吃。

二、芹菜拌花生米

食材

芹菜、花生米、八角、花椒、香叶、盐、白糖、生抽、香醋、香油

做法

1. 花生米提前泡2小时，加水、盐、香料小火煮30分钟，晾凉备用；

2. 芹菜切小丁，焯水2分钟过凉沥干；

3. 全部放入大碗，加盐、少许糖、生抽、香醋、香油拌匀；

4. 静置入味几分钟，清爽解腻、越吃越香。

三、油焖虾

做法：

1、虾清洗干净剪去虾头去虾线

2、酱汁准备：生抽2勺、蚝油1勺老抽半勺、适量糖、生粉1勺、加适量清水搅匀

3、虾下锅煎至表面微微金黄加入蒜末炒香，加入调好的酱汁，再加一勺盐翻炒出锅即可。超简单！上桌秒吃光，快快做起来！

四、清蒸鲈鱼

准备食材: 鲈鱼、姜丝、葱丝、葱花。

做法步骤:

1、鲈鱼剁成小块，然后加入姜丝和料酒抓拌均匀，再腌制十分钟备用。

2、把腌制好的鲈鱼铺在蒸碗底，然后起锅烧水，水烧开之后，把鲈鱼上蒸锅蒸煮八分钟。

3、接着把蒸出的汁水倒掉，然后铺上葱丝和姜丝，再淋入热油爆香葱姜丝。

4、最后再撒入一小把葱花点缀提鲜，即可开吃。

五、蒜苗炒鸡蛋

食材：蒜苗一把、鸡蛋三个、盐、油

步骤：

1. 蒜苗斜切成段，白的和绿的分开。

2. 鸡蛋打碗里加少许盐，搅散。

3. 热锅倒油，鸡蛋液下锅炒成块，盛出。

4. 锅里再倒点油，先下蒜苗白炒半分钟。

5. 下绿叶部分，倒回鸡蛋，加盐翻匀，断生出锅。

六、板栗烧鸡

所需食材：新鲜板栗仁三百克，鸡腿肉或半只土鸡约六百克，生姜五片，大蒜四瓣，小葱两根，八角一颗，桂皮一小段，冰糖十五克，生抽三汤匙，老抽一汤匙，料酒两汤匙，食盐适量，食用油适量。

步骤：

1. 板栗仁洗净，若用生板栗需先在壳上划十字，入沸水煮五分钟，捞出剥去外壳和内膜，沥干备用。

2. 鸡肉斩成大小均匀的块，冷水下锅，加两片生姜和一汤匙料酒，大火煮开后撇去浮沫，再煮两分钟捞出，用温水冲洗干净。

3. 炒锅烧热，倒入少许食用油，放入冰糖小火慢炒，待冰糖融化并泛起枣红色细泡时，迅速倒入鸡块翻炒上色。

4. 加入姜片、蒜瓣、八角、桂皮，继续翻炒出香味，再淋入料酒、生抽、老抽，翻炒均匀让每块鸡肉裹上酱色。

5. 倒入没过食材的热水，大火烧开后转中小火炖煮十五分钟，让鸡肉初步入味。

6. 放入处理好的板栗仁，翻拌均匀，继续中小火炖煮十五至二十分钟，至板栗软糯、鸡肉酥烂。

7. 开大火收汁，待汤汁浓稠时尝味，酌情加盐，撒上切碎的葱花，翻匀即可出锅装盘。

七、菠菜炒猪肝

食材：猪肝200g、菠菜250g、生姜3片、大蒜2瓣、生抽1勺、料酒1勺、少许盐、食用油

详细做法

1、猪肝切成薄片，放入碗中，加清水、一勺料酒浸泡30分钟，中途换水2次，泡出里面血水，去除腥味。

2、菠菜摘洗干净，锅中烧水，水开放入菠菜焯水1分钟，捞出沥干。

3、泡好的猪肝洗净，加少许生抽抓匀腌制10分钟。热锅倒油，姜片蒜片爆香，倒入猪肝大火快速滑炒，炒至猪肝变色立刻盛出，不要炒老。

4、锅中留底油，倒入菠菜翻炒片刻，倒入猪肝，加盐快速翻匀，马上出锅。
