秋天的第一锅羊肉汤，暖身不燥的秘密全在这一锅里

立秋一过，早晚的风里就多了一丝凉意。朋友圈里“秋天的第一杯奶茶”刷了屏，但真正会吃的人知道，这时候最该端上桌的，是一锅咕嘟咕嘟冒着热气的羊肉汤。羊肉温补，专走肾经和脾经，夏天出汗多、阳气耗得厉害的人，这时候喝上一碗，从胃里暖到脚底板。但很多人又怕——羊肉性温，立秋余热还没散尽，喝了会不会上火？别急，今天这篇就把“秋天第一锅羊肉汤”怎么炖、怎么搭、怎么喝才能温补不上火，一次性说清楚。

为什么立秋后要喝羊肉汤？

先说说为什么是羊肉，为什么是现在。

夏天我们出汗多，中医讲“汗为心之液”，出汗过多会耗气伤阴，底子里的阳气也跟着往外跑。所以立秋前后很多人会觉得不对劲——早上醒不来，醒了也像没睡够；腰那一圈空落落的，使不上劲；别人还穿短袖呢，自己先得套件薄外套。这不是矫情，是身体在提醒你：该补了。

羊肉在这时候就派上用场了。它味甘性温，入脾、肾经，能温中暖下、益气补虚。简单说，就是能把夏天漏掉的阳气慢慢接回来。而且羊肉的温补不像辣椒那样“冲”，它是润物细无声的那种暖，喝下去胃先舒服了，然后整个人慢慢热乎起来。

但问题也来了——立秋不是深秋，暑气还在，秋燥也起来了，这时候吃羊肉，搭配不对确实容易上火。那怎么办？

温补不上火的核心秘诀：一温一凉，搭配对了才叫补

先说一个最关键的搭配原则：羊肉必须配凉性食材。

白萝卜是羊肉最经典的搭档，没有之一。萝卜性凉味辛甘，入肺、胃经，能理气解腻、清热生津。它跟羊肉一起炖，萝卜的凉正好给羊肉的“燥”降降温，一温一凉，补进去才不上火。而且萝卜里的酶类物质还能分解羊肉的膻味，让汤更清甜，肉也更易消化。

除了白萝卜，莲藕也是好东西。熟藕性温但能健脾开胃、补益气血，跟羊肉搭配有润肺补血的效果，同时莲藕本身带凉意，能预防上火。山药也值得一试，性平温和，健脾益气，跟羊肉一起炖，补阳气的同时把底子也稳住了。

还有一个很多人不知道的小技巧：炖羊肉的时候放两片橘皮。橘皮理气化痰，能中和羊肉的燥性，还能去膻，一举两得。

反过来，有几样东西千万别跟羊肉一起炖——八角、花椒、桂皮这些重香料。它们本身偏燥热，跟羊肉凑一块就是“火上浇油”，而且会把羊肉的鲜味完全压住，汤色发黑发浑。炖羊肉汤，姜葱足矣。

手把手教你炖一锅清亮鲜甜的羊肉汤

说了这么多原理，该上实操了。下面是我自己反复试过、零失败的方子，照着做，汤清肉嫩，一点不膻。

食材清单（3-4人份）：新鲜羊肉800克（羊腿肉或羊排最好）、白萝卜1根、生姜一大块、大葱2段、枸杞一小把、料酒1勺、盐适量、白胡椒粉少许。

第一步：泡血水，去膻的关键。 羊肉切大块，别切太小，炖出来容易散。放冷水里泡至少1小时，中途换两次水，把血水充分泡出来。这一步做到位了，膻味基本去掉大半。很多人炖羊肉膻，就是泡得不够。

第二步：冷水焯水。 泡好的羊肉冷水下锅，加姜片、葱段、一勺料酒。大火烧开，持续沸腾5分钟，把浮沫彻底煮出来。撇干净浮沫后捞出羊肉，用温水冲洗——千万别用冷水，冷水一激肉质紧缩，后面怎么炖都柴。

第三步：小火慢炖。 砂锅里加足量开水，放羊肉、姜片、葱段。大火烧开后转最小火，盖盖慢炖60分钟。记住全程加开水，别加凉水，汤才清亮。

第四步：萝卜中段下。 白萝卜去皮切大滚刀块，羊肉炖够一小时后放进去，继续小火炖25分钟。萝卜别放太早，煮久了会化掉；也别太晚，不然不入味。

第五步：调味只放盐和胡椒。 出锅前5分钟放枸杞，最后加盐和一点点白胡椒粉。盐一定要最后放，早放盐会让羊肉蛋白质凝固，肉变柴、汤不鲜。

炖好的汤，羊肉软烂到筷子一夹就脱骨，萝卜吸饱了肉汁变得晶莹剔透，汤色清亮微白，喝一口鲜甜暖胃，一点不油腻。

不是所有人都适合这一锅，对号入座

最后说个实在话：羊肉汤虽好，但确实不是人人都适合猛喝。

阳虚体质的人——常年手脚冰凉、容易累、喝凉水就不舒服的——立秋后适量喝羊肉汤，温补气血，改善畏寒乏力，最对路。但如果你是痰湿或湿热体质，平时容易长痘、口臭、大便黏腻、舌苔黄厚，羊肉吃多了反而会加重内热，上火更厉害。阴虚火旺的人也要悠着点，五心烦热、夜间盗汗的那种，少喝或者搭配更多萝卜莲藕来平衡。http://cvea.net.cn/index.php/ArTicle/details/538924462.sHtML
