番茄炒蛋算是国民下饭菜里的“门神”。两个人吃，番茄2个、鸡蛋3个。我做番茄不追求复杂处理，表皮带点红纹、捏着发软就行。太硬不出味，太熟炒起来就烂，口感直接塌。番茄切小块就能成事，要是你讲究一点，就用勺子刮一遍表皮再撕，省时间还更香。

鸡蛋打碗里，加一勺温水，顺一个方向搅开就行。别乱搅，不然下锅容易碎成渣。锅要热，油要热锅凉油，油比平时稍微多点更香。倒入鸡蛋后别急着翻，底部定型了用铲子轻轻划散，划散就行，别搅太碎。盛出来备用，锅里留底油，放番茄块压一压，炒到出沙的程度再加小半勺白糖提鲜。盐少放，最后倒回鸡蛋翻两下就出锅。

接着是可乐鸡翅，家里最受欢迎那盘。孩子吃得快，老人也爱，原因很简单：甜香够、肉嫩、下饭省事。鸡翅中选大小均匀的，2人份6个就够。改刀两面各划两刀，方便入味。冷水下锅，放姜片和料酒，焯3分钟，捞出来用温水洗干净，别用凉水，不然肉容易收缩变紧，口感就不软糯。

锅里放一点点油，别多，不然腻。把鸡翅煎到两面金黄，用小火别用大火，糊底了就得重做。倒可乐，没过鸡翅三分之二就行，普通可乐就行，无糖的味道差一截。加一勺生抽和小半勺老抽上色，其他别乱加，直接大火煮开转中小火焖10分钟。收汁阶段得不停翻动，快干就关火，糊了会发苦，整盘香气就没了。

我给家里总结一句话就这道菜最像：焖的时候别加水，可乐的甜味足够；收汁的时候别走神，味道和苦味都在那一会儿。

要是说饭桌上最容易让人筷子变活的，酸辣土豆丝也算一个。黄皮脆土豆更适合炒土豆丝，面土豆别选，炒出来不脆。1个土豆削皮切细丝，粗细尽量均匀，熟得才一样。切完立刻泡进冷水里，中间换一次水，把表面淀粉洗出来，水清了就能留下脆感的底子。

准备蒜末和干辣椒段，锅里油热放蒜末和干辣椒，小火炒香别炒糊。倒土豆丝，转大火快速翻炒，大概1分钟就行，土豆丝不熟透就会发腻，炒过头就会塌。出锅前加白醋，先别早放。白醋提前下，土豆丝会软，还带不出那股酸味的清爽。盐和鸡精少量，翻两下就出锅。

这道菜避坑最核心的是三点：泡水不省、白醋不早放、大火快炒。你要是把这三点踩稳，酸辣的劲儿就会把饭香托起来。

说到硬菜，红烧肉很多人觉得费工夫。其实家常版也能做得软烂不腻，只要顺序对，火候别拖。五花肉选三层那种，2人份半斤就够，切2厘米见方的块。冷水下锅，姜片和料酒一起加，焯5分钟。捞出来用温水洗干净，别用凉水，肉缩得快，口感就差。

锅里放一点点油，小半块冰糖，小火炒糖色。糖融化后颜色变成深琥珀色，冒小泡就能下肉了。下锅别慢慢来，快速翻炒，让每块肉裹上糖色才香也好看。加两勺生抽、小半勺老抽，放八角一片桂皮就够，别搞一堆香料盖住肉味。倒热水，一定用热水，没过肉就行。大火煮开转小火炖40分钟，最后开大火收汁，加一点点盐就行，生抽老抽里咸味已经够了。

红烧肉想成功，炒糖色用小火，别炒糊；加热水别用冷水；炖的时间够，肉才软。家常饭的关键不在复杂，而在别偷懒。

清蒸鲈鱼是我给老人孩子都能打分的一道。鱼这东西讲究时间，蒸过头就老。选一斤左右鲈鱼别太大，处理干净后两面各划两刀，用姜片和料酒抹匀，腌10分钟去腥。盘子里铺姜片和葱段，把鲈鱼放上去。

水开之后再放鱼蒸，大概8分钟就差不多了，关火后再焖2分钟。焖太久也会老。蒸好后别急着端上桌，先把盘里的水倒掉。那水很腥，倒掉之后鲜味才撑得起来。去掉姜葱，铺上新鲜的姜丝和葱丝，淋蒸鱼豉油，再浇一勺热油，滋啦一声香味才出来。热油激出的是香，不是油腻。

我家老太太特别爱这道，她说比炖汤省事但味儿不差。小孩子一尝也会说鱼肉嫩，不需要咬半天。

韭菜炒鸡蛋是家里最“勤快”的下饭菜。韭菜选新鲜的，掐掉老根，洗干净切小段。鸡蛋2个打散备用。锅里油热先炒鸡蛋，炒成块盛出来。锅里再少放一点油，放韭菜大火快炒1分钟，别炒太久，软了味道就发散也不香。加盐要最后放，不然韭菜容易出水发稀。倒回鸡蛋翻两下就出锅。

这道菜的逻辑很简单：韭菜要大火快过锅，盐别早下。你要是把它炒成一锅绿汤，那不叫韭菜炒鸡蛋了，那是对饭的挑战。

凉拌黄瓜在夏天就是开胃菜里的主力军。黄瓜选带刺新鲜的，1根就够。洗干净后用刀拍碎，别切太细，拍出来口感更脆。切小段放碗里，加入蒜末、生抽、醋，比例大概2比1。加一点点白糖提鲜，再加香油少许。喜欢吃辣就加小米辣，拌匀就行。

想更脆一点，拌好后放冰箱冷藏10分钟再吃。时间一到，口感就回来了。黄瓜不怕凉，就怕拖着不吃，放久了会出水。

香菇滑鸡也是我常做的“省心饭”。鸡肉嫩、香菇鲜，配米饭就很稳。选鸡腿肉，别选鸡胸肉，口感差一截。1个鸡腿切小块，加入生抽、料酒、小半勺淀粉抓匀，腌15分钟。香菇泡发切块，姜蒜片准备好。

锅里油热先下姜蒜炒香，倒香菇炒2分钟，出香味后倒鸡肉，大火炒到变色。加小半碗水焖5分钟，时间别长，不然鸡肉老。最后加一点点盐翻匀出锅。

我最看重手上那个动作，鸡腿肉别用刀剁，直接用手撕小块，肉感更细腻。淀粉也别省，锁住肉里的水分，吃起来就滑。

蒜蓉粉丝娃娃菜适合那些不想开火炒半天的。娃娃菜一棵切条，粉丝提前泡软但别泡烂。把娃娃菜铺在盘子里，把粉丝放在上面。蒜蓉加生抽、蚝油、一点点油拌匀，均匀铺在娃娃菜和粉丝上。水开后蒸10分钟，出锅撒葱花就行。

蒸的时间别拖。娃娃菜软了刚好，拖久了会出水，粉丝也会变得不紧实。蒜蓉如果你愿意还能提前用香油炒一下，香味更直达鼻子，但直接生蒜蓉也能做。

冬天吃饭怕冷，番茄炖牛腩能把桌子气氛拉热。牛腩切小块，冷水下锅加料酒和姜片焯一下，捞出来再用温水洗干净。锅里油热放洋葱炒软，倒入番茄块炒出汁。放牛腩，加生抽、老抽、八角、桂皮，倒热水没过牛腩。大火煮开转小火炖1.5小时，最后加盐。时间到了再下盐，肉才更入味。

牛腩选带点脂肪的，炖出来香。热水别省，冷水会让肉更柴。炖的时候别频繁掀盖，温度一断，肉质就不稳。
