家常脆皮锅贴煎饺：一口爆汁，酥脆解馋超治愈

要说家家户户都爱的家常小吃，锅贴煎饺一定榜上有名。不同于水煮饺子的软糯，也不同于蒸饺的清淡，煎出来的锅贴底部金黄酥脆，饺皮柔软筋道，内馅鲜嫩多汁，咸香入味。不管是早餐、下午茶还是宵夜，一盘热气腾腾的锅贴煎饺都格外合适。无需复杂食材，掌握简单的家常技巧，在家就能做出外皮酥脆不发硬、内里饱满爆汁的美味，一口下去满是烟火幸福感，简单又治愈。

家常锅贴煎饺做法零门槛，新手也能轻松拿捏，食材简单易得，我们可以根据自己喜好准备馅料，最经典的就是猪肉白菜馅。准备适量饺子皮、新鲜五花肉、少许白菜，再搭配葱姜、食盐、生抽、蚝油、香油、白胡椒粉和少许食用油即可。五花肉建议三分肥七分瘦，肥瘦相间的肉馅煎出来鲜嫩不柴、汁水充足，白菜焯水挤干水分，能避免馅料出水，保证口感紧实清爽。处理馅料是好吃的关键步骤，先把五花肉剁成细腻肉馅，葱姜切细末放入碗中，加入一勺生抽、一勺蚝油、少许食盐和白胡椒粉，顺着一个方向持续搅拌上劲，让肉馅充分吸收调料风味。接着淋入少许熟油和香油锁水增香，搅拌均匀静置十分钟入味。白菜洗净切碎，开水焯烫十秒捞出，挤干多余水分后倒入肉馅中，轻轻翻拌均匀，鲜香十足的锅贴馅料就调配完成，味道鲜而不腻。

包制锅贴无需繁琐捏褶，取一张饺子皮，放入适量馅料，将饺子皮中间捏紧，两边留小口不封口即可，这样煎制时内部热气可以流通，馅料更容易熟透，还能锁住汁水，保证咬开爆汁的口感。全部包好后就可以起锅煎制，平底锅刷一层薄油，小火预热后，整齐摆入所有锅贴，保留少许缝隙，避免粘连。开小火慢煎两分钟，煎至锅贴底部定型、微微金黄，随后倒入提前调好的淀粉水，淀粉和清水比例一比十，水量没过锅贴三分之一即可。立刻盖上锅盖，转中小火焖煎五分钟，利用水蒸气将锅贴表皮蒸熟、馅料焖熟。待锅中水分完全收干，听到锅底滋滋的酥脆声响，打开锅盖，转小火再煎一分钟，逼出底部多余油脂，让饼底变得金黄焦脆。
