家常排骨汤最简单做法，难道不想让汤白肉嫩还不油腻吗？这样做给全家喝，保证谁都爱喝

我家每到秋冬换季，锅里就得咕嘟起来。前两天我爸在屋里说了一句，我这把老骨头就爱喝那口热汤。正好我回家路上买了排骨，拎到厨房先给他俩孙子盛了碗，俩孩子喝得直点头。看着汤面那层奶白色的汤油光，我媳妇笑着说你这排骨汤不像家里做的，倒像饭店现炖。其实关键就几步，少一步都不行。

很多人做排骨汤，最大问题不是火候不够，是腥味和汤色。要么味道有腥，汤黑得像隔夜的酱油水；要么就清得发寡，肉软但不香，喝两口就想配馒头干嚼。排骨汤这东西，不是靠加料堆出来的，是靠处理血水、温度顺序、翻滚时间把鲜味逼出来。你把流程按住了，新手也能一次成，家里人还愿意一碗一碗喝。

第一关是泡水和焯水。排骨买回来别急着下锅，我一般先把排骨剁成小段，冷水浸泡20分钟。泡的这20分钟不是闲着，血水和里面的杂质会慢慢出来，腥味就少一大半。人讲究一顺气，我做饭也讲究一顺序，先泡再焯，后面才有奶白汤色的底子。

焯水的时候用冷水下锅，姜片和少许料酒跟上。等水烧开以后把浮沫撇干净。很多人图省事，嫌麻烦就热水下排骨，结果往往是腥味更顽固，肉还容易发柴。热水下锅像把肉突然“闷”住，表层快速收缩，里面的血水和杂质来不及处理，最后就容易腥和柴同时出现。山东人做菜讲究实在，别拿肉当实验品，这一步就要按冷水开焯的路子来。http://fino.szkrb.com/Article/details/45336913.shtml

我做排骨汤一般用足量开水入锅。先放姜片、葱段，再看口味加点配菜。想清甜一些可以放两段玉米，胡萝卜几块也行。玉米的甜能把油腻感压下去，胡萝卜的清也能让汤更舒服。配菜不是越多越好，是要能配合排骨本身的香。家里有老人孩子，汤里多点清甜，喝起来不顶，吃完胃也不闹。

第三关是翻滚和时间。大火煮沸十分钟，这一步是汤色奶白的关键。你看着锅里从小泡到翻滚，油脂和蛋白质在高温下更容易乳化融合，汤就会从清汤变成奶白色。很多人觉得一直大火不省事，我也明白，但排骨汤就是需要这十分钟把底色做出来。你要是火太小，连翻滚都不明显，汤就不容易浓起来。

煮沸以后转小火慢炖40分钟。这里就别折腾太多调料了。排骨汤讲的是排骨本身的鲜香，姜和葱已经够打底了。调料加得太早太多，会把鲜味盖住，最后你以为是没味道，其实是香气被你自己搅散了。小火慢炖的目的就是让骨肉里的胶质和鲜味慢慢析出来，肉软烂脱骨也更稳。

第四关是盐的时机。出锅前五分钟再加食盐调味，别提前下盐。因为盐会影响蛋白质的结构，过早加盐容易让肉质变老，炖起来不容易软烂。你要是做过几次就懂了，早放盐的排骨看着是红亮，吃起来却不够绵。想要我家老人孩子都能吃得舒服，盐就得掐在最后这五分钟。山东人做饭讲究火候和嘴皮子，我做排骨汤的火候也按这条来。

第五关是出锅后的状态。炖好的排骨汤一般是汤色奶白醇厚，闻着是热香，入口温润不腻。排骨软烂到用筷子轻轻一拨就能脱骨，肉不柴也不散。玉米和胡萝卜能带一点清甜，解油也解腻。你要是家里有人挑嘴，这汤反而更容易通过，尤其是老人和小孩喝的时候，不会觉得油，也不会觉得腥。

说到这里，我也想把时间线讲得更直白一点。秋冬换季家里最常做排骨汤，我一般按买回排骨到上桌是一个节奏：先泡水20分钟，焯水到浮沫撇干净，温水冲洗后砂锅加开水，先大火煮沸十分钟再小火慢炖40分钟，最后出锅前五分钟加盐。这个顺序不变，结果就稳定。你要是只记住一句话也行，别热水焯、别冷水直接煲、盐别提前放。

你可能会问，为什么大家做不出来奶白色？简单说，奶白来自于高温翻滚时的乳化融合，来自于排骨焯水后把血水处理干净，也来自于加入开水保持温度连贯。汤黑多半是腥血和杂质没有处理干净，汤清寡水多半是温度衔接错了或者没有足够的翻滚时间。排骨汤的“白”，是你把浑东西处理掉以后的“清”，再加上高温把鲜味“推出来”的结果。你想想，汤里要是还带着血腥杂质，再白也只是浑白，不是奶白那种干净的白。

至于营养这块，排骨汤主要是优质蛋白和脂肪带来的饱腹感，另外骨汤里也会有一定胶质感。玉米和胡萝卜补点膳食纤维和维生素，喝起来口感更顺，汤也不至于只有油香。你用的食材不算花哨，但只要顺着这个流程来，味道就会很稳。家里人喝得舒服，就是最实在的好味道。

你要是也想做得像饭店那种奶白鲜香，不用改一堆东西，只盯三个关键点：焯水前泡20分钟并且冷水焯干净浮沫；焯完后用温水冲洗并且加足量开水别用冷水；大火煮沸十分钟再小火慢炖40分钟，出锅前五分钟加盐。把这三步抓牢，汤色自然会由清转奶白，排骨也更容易炖到入口软烂。

我家那次我爸端着碗说这汤够味，我媳妇就顺手多盛了一勺汤油。孩子嘴上说不爱喝，但手里却没放下勺子。你看，饭店级别不是靠装样子，是靠一碗汤的细节。秋冬夜里，锅里热气一冒，屋里就更像个家。老人能暖，孩子能喝，男人下班回家也觉得踏实。排骨汤这东西，就该按这套规矩来，干净不腥，奶白不黑，肉软不柴。
