腊肉蒸香芋多绝？不加调料，香糯不腻秒光盘

材料准备

腊肉200克（最好选带点肥的，油水才足）

香芋450克（荔浦芋头最佳，粉糯起沙）

小葱2根（最后点缀用）

详细步骤

1、腊肉“减盐”处理

腊肉是重盐腌出来的，直接蒸能咸到皱眉。先烧一壶开水，把腊肉整块丢进去泡10分钟。这个小动作能让多余的盐分“跑”出来，吃起来只留咸香，不齁嗓子。泡完再冲一下，洗干净表面。

2、切片有讲究

把腊肉切成3-4毫米厚的片——太薄了容易蒸干，太厚又出不了油。厚度均匀，受热才一致。

3、香芋切块不切薄

荔浦芋头去皮后，先切成0.8厘米左右的厚片，再改刀成两指宽的块。别切太小，否则蒸久了容易散；这个大小刚好能吸油又不碎。

4、叠放顺序是灵魂

盘底铺香芋块，再把腊肉片一片片盖在香芋上面。记住：腊肉在上，香芋在下。这样蒸汽一催，腊肉的油脂往下渗，香芋就像海绵一样吸得饱饱的。

5、蒸制时间要精准

高压锅：上汽后转小火，蒸12分钟（最快，肉软芋糯）

电压力锅：选“蒸肉”模式，30分钟

普通蒸锅：水开后放进去，大火蒸50分钟

6、出锅点睛

蒸好取出，撒一把葱花。不用翻拌，直接上桌——腊肉晶莹透亮，香芋裹着油光，连盘子底下渗出来的汁水都能拌半碗米饭。
