一斤泥鳅赛过十只鸡！立秋后常吃它，降三高补元气，真是不懂太可惜

秋天一到，很多人就开始犯愁，想进补又怕吃错，想吃得舒服又怕没营养。泥鳅这种平时不起眼的食材，其实真挺适合这时候端上桌，尤其是红烧泥鳅、泥鳅炖豆腐这类做法，实在、下饭，还比很多人想的更有东西。很多人一听泥鳅，第一反应还是那点黏糊劲儿，可真到了秋凉时节，它反倒成了厨房里很接地气的一把好手。

这篇文章的核心意思很明白，秋季想补一补，不一定非得盯着贵价食材。泥鳅就是那种老百姓家里能常做、能吃得舒坦的东西。南方不少地方立秋吃泥鳅，本来就有这个习惯，老辈人讲秋补，讲究的是顺时而食。现在再看，泥鳅的高蛋白、低脂肪、易消化这些特点，和现代营养思路还真能对得上，话糙理不糙。

先说它为啥能在秋天上桌。天一凉，很多人胃口开始变差，吃油腻的犯堵，吃太素又不顶事。泥鳅的口感就卡在一个很妙的位置，鲜，嫩，热乎，炖一锅出来，汤汁往米饭上一浇，山东人这饭量，真能狠狠干两碗。它不是那种一眼看上去就高大上的菜，可吃进嘴里，舒服劲儿挺实在，像家里那口暖炕，平平常常，但离不开。

有些人对泥鳅不感冒，主要是嫌它黏，嫌它不好收拾。其实会不会做，差别挺大。先用盐搓一搓，冲洗干净，再过油或者先煎一下，很多腥味就压住了。老厨子常说，泥鳅这东西，火候一到，香味就出来了，和黄河鲤鱼一个道理，不能急，急了容易翻车。秋天做泥鳅，最怕图快，最讲究的是稳稳当当。

从营养上看，泥鳅确实有点东西。每100克泥鳅里，蛋白质含量不低，脂肪含量却不算高，钙、铁、磷这些矿物质也有，维生素A、维生素B族同样能见着影子。中国食物成分表里，泥鳅一直都算比较扎实的食材。它不是药，也不是神仙汤，但放在日常饮食里，确实比很多重油重盐的菜更适合秋天吃。说白了，吃的是实在，不是玄乎。

很多人爱把补和贵划等号，这事儿我一直觉得有点拧巴。秋补这回事，讲的是顺季节、讲搭配、讲适量，不是越贵越灵。泥鳅这种东西，胜在接地气，买得起，做得动，家里老人孩子都能吃上一点。比起一些花里胡哨的补品，泥鳅端上桌以后，家里那股子热乎气儿，比什么广告词都实诚。

红烧泥鳅是最容易出味道的一种做法。锅里先下点油，姜蒜爆香，泥鳅煎到表面微微发黄，再加酱油、料酒、少许糖提鲜，最后撒上葱段。这个过程不复杂，关键是煎香以后再收汁，味道就会往里走。山东老爷们做饭，讲究一个能下饭，红烧泥鳅就特别符合这个标准，汤汁浓一点，咸鲜口一出来，孩子都愿意多夹两筷子。

泥鳅炖豆腐更是秋天里的实在菜。豆腐本身软和，泥鳅煎过以后和豆腐一起小火炖，汤会变白，味儿也更浓。古书里早就有泥鳅配豆腐的说法，民间也常拿这道菜招待家里人。豆腐含钙，泥鳅含优质蛋白，搭在一起，口感和营养都比较顺。尤其家里有老人，牙口不算太利索的时候，这一锅比硬菜省心多了。

还有人提到紫苏去腥，这招真不赖。紫苏这个东西，南方菜里常见，香气很冲，和泥鳅搭在一起，腥味压得住，香味也提得起来。做鱼做虾都能用，放在泥鳅里也不突兀。再配上山茶油，很多人一开始可能觉得稀罕，其实它在一些地方本来就常拿来炒菜或者煎炸，烟点高，香味也稳，不容易把食材做得发苦发焦。做泥鳅的时候，用它来煎，保住风味，确实比胡乱用油更讲究。

现在网上不少人一说健康饮食，就只盯着鸡胸肉、牛油果、奇亚籽，弄得跟上战场一样。可回到咱老百姓的厨房里，泥鳅这种东西一点不差。它不张扬，不摆谱，买回来就能做，做出来一家人都能吃。人到中年以后，越来越明白一个理儿，吃饭不是比赛，天天整那些稀奇古怪的玩意儿，胃不一定受得了，钱包也受不了。泥鳅这种老食材，反而更像家常日子，稳稳当当。

挑泥鳅这事也不能马虎。现在市场上的泥鳅，养殖的比较多，来源相对正规，买着更安心。野外捕捞的泥鳅，水体污染、重金属残留这些问题要防着点，别图便宜。吃进嘴里的东西，图的是踏实，不是赌运气。尤其家里还有老人孩子，来源清楚、处理规范，比啥都重要。泥鳅活蹦乱跳不等于就一定好，真正能放心吃的，是经过检验和正规渠道来的。

泥鳅的吃法，在不少地方还有老传统。立秋前后，民间讲究贴秋膘，但贴不是瞎贴。过去条件一般，肉不常有，泥鳅就成了很实惠的选择。老辈人会说，秋天吃点泥鳅，身子骨能补得更舒坦。现在再看，泥鳅富含优质蛋白，热量不算高，和秋天容易干燥、容易没精神的状态，倒是挺合拍。说它是老百姓版的秋补食材，一点不夸张。www.weiduolisha.com

秋天吃泥鳅，还有个挺实在的好处，就是不容易给身体添负担。天冷以后，人的消化系统会慢一点，吃太油、太硬、太补的东西，反倒容易不舒服。泥鳅做成汤菜或者红烧菜，温和，容易入口，老人小孩都能搭着吃一点。尤其是泥鳅炖豆腐，汤鲜、味稳，不像大鱼大肉那样厚重，吃完嘴里不腻，胃里也轻松。

说到底，泥鳅这类食材最打动人的地方，不是噱头，是它把传统吃法和现实需求接上了。秋天想吃得暖一点、补一点、实在一点，泥鳅就是个值得摆上桌的老实选择。不是装腔作势的补，不是摆给别人看的菜，就是一家人围桌坐下，热汤热饭，慢慢吃，心里也跟着踏实。
