蒸包子总塌馅开裂怎么办，老师傅4招，个个白胖软乎不塌底

说实话，我刚开始学做面食那会儿，十次有八次翻车，明明面发得挺好，一蒸就“见光死”。后来跟早点铺的老师傅软磨硬泡，外加自己回家反复折腾了无数斤面粉，才把这“塌陷开裂”的毛病彻底根治。今天就把这压箱底的4招实战经验掏出来，全是厨房里摸爬滚打出来的大实话。学会了，保准你以后蒸的包子，锅盖一掀，个个白净松软，咬一口筋道多汁，比包子铺的还馋人！

第一招：和面别光加酵母，加点“料”给包子“撑腰”

很多人和面就是面粉、水、酵母，简单一揉完事。这不行！要想包子皮有韧性、不塌底，和面时得加点“帮手”。一斤面粉，除了放5克酵母、一小勺白糖加速发酵之外，务必再搁一小勺猪油（没有的话玉米油也行）和一小撮食用碱。这猪油能让面筋网络更顺滑，蒸出来表皮油亮亮，凉了也不硬；食用碱能中和发酵产生的酸味，还能增加面皮的支撑力，相当于给包子骨架“打了钢”，就不容易缩成一团。记住，水要分次加，用筷子搅成面絮再上手揉，揉到“三光”——盆光、手光、面光，这面才算合格。

第二招：擀皮有门道，“中间厚四周薄”不是随便说说的

好多朋友包子开裂，问题就出在擀皮上。你如果擀得整个皮厚薄均匀，那收口处肯定因为太薄，一蒸就撑破“咧嘴”。正确做法是，擀面杖别使劲压中间，要重点擀边缘。左手捏着面剂子边转，右手推擀面杖，擀成中间稍微凸起、像个小山包，四周慢慢变薄的圆皮。这样包馅的时候，底部能稳稳托住汤汁和重量，收口捏褶子的地方因为厚实，有韧性，就不会因为膨胀而开裂。这可是老师傅手里十几年的功夫，多练几次手感就对了。

第三招：二次醒发别死心眼，看状态比看时间灵

这一步是决定成败的关键！好多人照着食谱说醒发15分钟，结果冬天15分钟没动静，夏天15分钟早发过了。记住，看状态！包好的包子放进蒸锅，盖好盖子，别急着开火。就在锅里静静地待着，直到看到包子体积明显比刚包好时大了一圈，拿在手里轻飘飘的，手指轻轻一按皮子，能迅速回弹，这时候才是上锅的最佳时机。千万别醒发过度，发太大了，一上蒸汽，表面撑不住，直接就塌成死面疙瘩。夏天大概10-15分钟，冬天可能得半小时，灵活调整，信眼睛别信钟表。

第四招：上锅蒸的火候和“焖”的玄机

水烧开后，再把笼屉放上去，记住要全程大火，让蒸汽猛足！蒸汽不够，包子涨不起来，皮子发粘。素包子一般大火蒸12分钟，肉包子15分钟左右，个头特别大的适当延长时间。最最重要的一步来了——关火后，千万别手欠去掀盖子！一定得焖个3-5分钟。你想啊，锅里一百度，外面室温二三十度，温差那么大，你猛地一掀，热胀冷缩，包子皮“噗”一下就缩回去了。给它个缓冲时间，让温度慢慢降下来，表皮定型了，再开盖，保证个个白白胖胖，挺着大肚子，看着就喜人。
