秋分后别只盯着牛肉鸡蛋！这3样便宜货，养人又解馋，懂吃的都抢

秋分，我去早市溜达，发现个挺有意思的事儿。卖牛肉的摊子前没几个人，旁边一筐毛芋头倒被围得严严实实。一个大妈边挑边说：“秋分后吃这个，比吃肉强。”我一开始还不服气，回家路上琢磨了一路，越想越觉得有道理。秋分后最该吃的不是牛肉鸡蛋，而是这3样，便宜又养人。哪三样？芋头、红薯、板栗。都是地里刚刨出来的土货，几块钱一斤，但吃着就是比大鱼大肉舒坦。今天我就跟你唠唠，这三样到底怎么吃才不亏。

先说说芋头。这玩意儿长得丑，毛乎乎的，但秋分后的毛芋头正是最粉糯的时候。我挑芋头有个笨办法：拿手里掂一掂，沉甸甸的，再捏一下，硬邦邦的，基本错不了。别贪大，小个的毛芋反而更香。削皮的时候一定戴手套，别问我怎么知道的，上次徒手削完，痒得我差点把手指头挠破。后来学了一招，削完用醋搓搓手，立马就缓解了。

芋头最让我上瘾的做法，是葱油蒸。芋头切厚片，铺在盘子里，上锅蒸二十分钟。筷子能轻松扎透就行。这时候另起锅，倒点油，扔一大把葱花，小火慢慢炸，炸到葱花变焦黄，香味直往鼻子里钻。趁热把葱油浇在芋头上，再淋一勺生抽。你夹一块试试，外面裹着葱油香，里面绵密软糯，舌头一抿就化了。我家孩子平时不爱吃蔬菜，这道菜能就着吃两碗饭。要是想解馋，拿芋头和五花肉一起焖。五花肉煸出油，下芋头块翻炒，加酱油冰糖，倒水没过，小火咕嘟二十分钟。芋头吸饱了肉汁，比肉还抢手。秋分后脾胃弱，吃这个不胀肚，比炖牛肉温和多了。上次我图省事，芋头和红薯一锅蒸，结果串了味，芋头带着红薯甜，怪怪的。后来分开蒸，才吃出各自的好。

再说红薯。秋分后的红薯刚从地里挖出来，红皮黄瓤，切开冒白浆，甜得特别实在。我买红薯就认准一点：表皮干爽，没有黑斑，拿手里沉甸甸的。别买那种细长细长的，圆滚滚的通常更甜。红薯最养人的吃法，我觉得是熬小米粥。小米别使劲搓，轻轻淘两遍就行。红薯削皮切滚刀块，别切太小，不然煮着煮着就化了。水烧开下小米，搅两下防粘底，然后放红薯，大火滚五分钟转小火，慢慢熬。熬到小米开花，红薯一戳就烂，锅面上浮着一层米油。这时候关火，盛一碗，不用加糖，红薯自己的甜就够了。早上喝一碗，胃里暖烘烘的，比喝牛奶舒服。要是想换个花样，红薯蒸熟压成泥，加糯米粉揉成团，裹上芝麻按成小饼，平底锅少油煎到两面金黄。外脆里糯，当下午茶点心，比外面买的强多了。

最后说板栗。秋分后街头糖炒栗子的香味开始勾人，但板栗可不只是零食。我老家管它叫“铁杆庄稼”，秋天吃它正当时。挑板栗要选油栗，个头小，外壳油亮，摇一摇没有响声的，说明果肉饱满。剥生板栗有个小窍门：用剪刀在壳上剪个十字口，微波炉高火叮两分钟，趁热一剥，壳和那层内膜一起掉。千万别凉了再剥，凉了又粘回去了。

板栗烧鸡是我家秋分后必做的一道菜。鸡块焯水，锅里炒香姜片葱段，下鸡块翻炒到表面微黄，加生抽老抽几粒冰糖，倒开水没过鸡块。大火烧开转小火炖二十分钟，然后把剥好的板栗倒进去，继续炖十五分钟。最后大火收汁，汤汁浓稠地裹在鸡块和板栗上。板栗炖得粉粉糯糯，筷子一夹就碎，拌在米饭里，一碗根本不够。要是嫌烧菜麻烦，直接板栗粳米粥。板栗切小块，和粳米一起煮，煮到粥稠栗子香，早上喝一碗，一整天都觉得扎实。秋分后燥气重，板栗性子平和，不像牛肉那么燥，吃着舒服。

这三样，你不用一顿全上，换着吃就行。想偷懒，板栗红薯汤：板栗煮十五分钟剥壳，红薯切块，一起放蒸碗，加几颗冰糖，倒小半碗水，上锅蒸半小时。板栗粉，红薯甜，汤水清亮，吃完饭来一碗，从嗓子润到胃里。或者芋头红薯甜汤，加红糖姜片，秋分后手脚容易凉的人，喝两天就能感觉出不一样http://read.blog.louzt.com/Article/details/909393.shtml
