锅包肉好吃的秘密！23年东北大厨私藏的“黄金面糊”比例，收藏

每次去东北菜馆，锅包肉都是必点的菜。那金黄透亮的色泽，那扑鼻而来的酸甜焦香，光是闻着就让人口水直流。但是很多朋友在家总是做不好这道菜。为了解决这个难题，我特意托朋友关系，找到了一位在哈尔滨做了23年锅包肉的老大厨，软磨硬泡之下，终于套出了这份压箱底的“私房面糊比例”。今天我就毫无保留地分享给你们，只要掌握这个秘诀，你在家也能做出让全家人都抢着吃的顶级锅包肉，绝对是那种咬一口就酥掉渣的体验！

一、选肉是基础，切肉有门道

在做菜之前，咱们得先准备好原材料。大厨说了，锅包肉必须用猪里脊肉，最好是通脊肉，也就是里脊中最长最嫩的那一条。这种肉没有筋膜，肉质细嫩，炸出来才不会柴。

买回来的肉，先别急着切。有个小窍门：把肉放进冰箱冷冻半小时，微微发硬的时候再拿出来切。这样能轻松切出厚薄均匀的片，厚度大概控制在3毫米左右，也就是跟硬币差不多厚。太薄了，肉一炸就干柴；太厚了，又不容易熟透。切的时候要注意方向，一定要顶着肉的纹理切（顶刀切），这样肉片吃起来口感才松软不塞牙。

切好的肉片，需要用刀背或者松肉锤轻轻拍打几下，把肉质拍松，但又不能拍得太薄，这点分寸要掌握好。

二、灵魂所在：23年大厨私房“黄金面糊”比例

好了，重点来了！锅包肉好吃的秘密，百分之六十都在这一碗面糊里。很多朋友在家直接拿干淀粉兑水，那是大错特错！大厨这次酒后吐真言，给我报了个精确到克的配方。

核心比例：土豆淀粉：水：食用油 = 2：1：0.2（再加上一小撮泡打粉）

具体来说，如果你有200克的土豆淀粉，那就需要加入100克左右的清水，20克左右的豆油（大豆油最好，没有的话用玉米油也行），然后再加入大约2-3克的泡打粉（也就是一小撮）。

这里有几个千万要注意的细节：

1. 必须是土豆淀粉，其他都不行！

这是大厨反复强调的一点。土豆淀粉的糊化程度高，吸水性好，炸出来的外壳蓬松酥脆，而且凉了以后不容易回软。玉米淀粉虽然也能炸脆，但凉了就容易变硬或者变皮，口感差远了。更不能用红薯粉，那个太黏重，炸出来不是那个意思。

2. 千万别用干粉，要用“湿淀粉沉淀”

大厨告诉我，专业的做法是要提前泡淀粉。把土豆淀粉用凉水浸泡，然后静置沉淀至少一个小时，最好能提前一晚放冰箱冷藏浸泡！泡好以后，把上面的浮水倒掉，留下底部像非牛顿流体一样结块的湿淀粉。这时候再用这个湿淀粉去抓肉，效果是干粉兑水完全比不了的。因为经过充分吸水的淀粉，在油炸时膨胀效果更好，形成的酥脆层更厚实，这就是所谓的“底层逻辑”。

3. 面糊里加“两样宝”：油和泡打粉

在调好的湿淀粉里，加入一勺大豆油和一点点泡打粉。加油是为了让面糊在炸的时候更酥脆，而且能防止肉片之间互相粘连。加泡打粉则是为了让外壳产生更多细密的小气泡，这些小气泡就是酥脆掉渣的关键。最后搅拌好的面糊状态，应该像浓稠的酸奶一样，既能挂在肉上，又能缓慢地往下流。

三、腌制只需一步，保留肉的原香

很多新手做菜喜欢放一堆调料腌肉，什么生抽、料酒、五香粉全往里倒。大厨听了直摇头：锅包肉吃的就是肉的本味，千万别用酱油！

正确的做法是：把切好的肉片用清水冲洗一下，挤干或者用厨房纸吸干水分（这步很关键，水分太多挂不住糊）。然后只需要加入一点点盐（增加底味）和少许料酒去腥，抓匀即可。千万不要加鸡蛋，加了鸡蛋面糊会发硬，炸不出那种蓬松酥脆的感觉。

抓匀后，把肉片放进调好的面糊里，满满地裹上一层。注意要让每一片肉都均匀地挂上糊，但又能若隐若现地看到肉色，这个厚度最完美。

四、炸制的功夫：复炸是关键中的关键

炸锅包肉，油温火候的把控直接决定成败。

第一遍炸：定型熟化

锅里倒油，烧到六成热（大概160度左右）。怎么判断？把筷子插进油里，周围冒起密集的小泡泡就差不多了。这时候把挂好糊的肉片一片片展开，下入油锅。一次不要下太多，免得粘连。炸到肉片浮起来，表面定型、微微发黄就可以捞出来了。这时候的肉大概八分熟。

第二遍炸：酥脆起壳

别以为炸一遍就完事了！把油温继续升高，到七八成热（大概200度左右），看到油面微微冒青烟，这时候把刚才捞出来的肉片倒进去，快速复炸。这次时间要短，大概30-40秒，炸到外表金黄，能听到“沙沙”的脆响，就可以赶紧捞出来了。复炸不仅能逼出多余的油，还能让外壳在高温下迅速脱水，变得更加酥脆，这就是“咬一口就酥掉渣”的奥秘所在。

五、烹汁要快，酸甜适口

最后一步，也是最考验手速的一步。

调一碗酱汁：白糖和白醋按1：1的比例，再加入一小撮盐（盐能把甜味和酸味更加衬托出来，这是点睛之笔）。喜欢传统老式口味的可以加一点番茄酱来调色，但一定不要多加。

锅里只许留一点点的底油，放入葱丝、姜丝、胡萝卜丝爆香，然后倒入调好的酱汁，大火熬到起大泡，闻到那股冲鼻的酸甜味时，立刻把炸好的肉片倒进去。这时候动作要快，快速翻炒个五六下，保证每一片肉都裹上汁就马上出锅。千万不能在锅里久留，否则外面的脆皮吸了汤汁变软，前面所有的努力就白费了！
