万物皆可啫！自从学会了啫啫鱼头煲，我家鱼头再也没有炖过汤

一个砂锅，几块平平无奇的鱼头，居然能在我家的厨房里发出“啫啫”的响声，然后端出一锅让我差点把舌头都吞下去的惊艳美味。第一次做啫啫鱼头煲那天，我站在灶台前，听着砂锅里传出的滋滋声，闻着从锅盖缝里飘出来的蒜香和酒香，心里只有一个念头：万物皆可啫！没想到啫啫鱼头煲这么好吃，出锅嫩滑鲜香，一点腥味也没有！ 今天就把这道让我彻底“入坑”粤菜啫啫煲的做法和心得，分享给每一个爱吃鱼又怕腥的朋友。

一、一切都要从那个会“唱歌”的砂锅说起

广东人做菜，讲究的是“镬气”，而啫啫煲，就是把这种“气”发挥到极致的代表。我第一次在美食纪录片里看到啫啫煲时，就被那个画面迷住了：厨师把腌制好的生料往烧得滚烫的砂锅里一放，盖上盖子，沿着锅盖淋上一圈米酒，火焰腾地窜起来，锅里传出“嗞嗞啦啦”的声响——在粤语里，这个声音就被叫作“啫啫”（juē juē）。

其实，这种做法的前身是老一辈粤菜师傅的“煀”法，后来经过大排档师傅的改良，才变成了现在我们熟悉的“生啫”。“生啫”的精髓，就是全程不加一滴水，完全靠食材自身的水分和酱料，在高温砂锅里迅速焗熟。这样做出来的鱼肉，能不好吃吗？

二、想要鱼头不腥，这一步千万别偷懒

很多朋友不敢在家做鱼头，就是怕腥。我之前也踩过不少坑，直到认真研究了一回鱼头的预处理，才明白：去腥，七分靠处理，三分靠烹饪。

买回来的大鱼头（最好选大头鱼，也叫胖头鱼，肉厚口感好 ），第一步不是洗，而是检查鱼鳃有没有去干净。鱼鳃是腥味的大本营，必须彻底剪掉 。然后要把鱼头内壁的黑膜刮干净，尤其是鱼骨缝里的淤血，要用流动的水反复冲洗，直到鱼肉发白。洗干净的鱼头剁成块，千万别急着腌制——一定要用厨房纸彻底吸干表面的水分。这一步太关键了，水分不干，后面一焗就变成了“炖鱼头”，完全没了啫啫煲的干香。

三、腌制的“魔法”：让鱼肉嫩滑的秘诀

鱼头沥干后，放进大碗里开始腌制。想要做出那种嫩滑得像豆腐一样、但又入味十足的鱼肉，酱料是关键。

我试过好几个配方，最稳妥的还是经典粤式口味：两勺生抽、一勺蚝油、一勺黄豆酱、少许老抽上色、一小勺白糖提鲜、多多的白胡椒粉去腥，最后再加一勺玉米淀粉，抓拌均匀。白胡椒粉是去腥的神器，一定要舍得放。淀粉的作用是锁住鱼肉的水分，让焗出来的鱼肉更加滑嫩 。抓匀后淋一点点食用油封住，腌制15-20分钟就够了，时间太长反而会让调味料“腌熟”鱼肉，影响口感。

四、“啫”的艺术：火候和时间是灵魂

做啫啫煲，一定要用砂锅，而且要厚壁的粗陶砂锅，蓄热能力才够强。

把砂锅放在灶上，开中火加热到锅底完全烧热（手放在锅上方能感觉到明显的灼热感），然后倒油，油可以稍微多一点。接着把大量的蒜瓣、姜块、红葱头倒进去爆香。这三种“料头”是啫啫煲的底味担当，不仅要铺满锅底，还要堆出一定厚度，既能防止鱼肉粘锅，又能让香气充分渗透进鱼肉里。

等料头被煸炒到表面微微焦黄、香味直冲鼻腔的时候，把腌制好的鱼头块均匀地平铺在料头上面。千万不要叠放，叠在一起下面的熟了上面的还是生的 。铺好之后，马上盖上锅盖，转成中小火焗8分钟左右。这时候千万别好奇老开盖看，一开盖，锅气就跑光了。

五、点睛之笔：那一把烈焰飞腾的酒香

焗到第8分钟的时候，重头戏来了。转成大火，拿一小碗米酒（或者花雕酒），沿着锅盖的缝隙慢慢淋进去。酒液遇到滚烫的锅壁，瞬间气化，带着火焰“轰”地一下窜起来。别怕，这是正常现象，也是啫啫煲增香的关键一步。酒香在高温的作用下渗入锅中，不仅能进一步去腥，还能给鱼肉增添一层复合的香气。

等火焰熄灭后，关火，别急着开盖，再焖一分钟。端上桌的时候，砂锅还在“啫啫”地响，热气腾腾的。打开盖子的瞬间，蒜香、葱香、酒香、酱香混合着鱼肉的鲜香，扑鼻而来。

六、舌尖上的惊喜：嫩滑鲜香，一口入魂

赶紧夹起一块鱼脸肉（这可是整锅的精华），吹了吹送进嘴里。鱼肉紧实又滑嫩，筷子一夹就能看到里面白生生的肉质，咬下去还有微微的弹性。鱼皮被焗得微微焦香，裹着浓郁的酱汁，咸香回甘。最神奇的是，明明用了这么多重口味的调料，但鱼本身的鲜甜一点都没被盖住，反而被衬托得更加突出。一点腥味都找不到，只剩下满口的鲜和香。
