天冷了，别多吃鸡鸭鱼肉！多吃这菜，蛋白含量超高，即使再贵也要吃

天一冷，我家餐桌上最常出现的反而不是鸡鸭鱼肉。你别笑，我真的有点“倔”。老公每年冬天都想让我多给孩子和他补补，说什么营养要跟上。可我在长沙这边见得太多了：肉一多，胃就开始抗议。

我家里有个小习惯，尤其立冬以后，肉可以吃，但会“克制点”。原因很简单：中老年人或者脾胃弱的人，运化没那么利索。肉类脂肪多、纤维少，吃多了容易油腻、积食，身体还得额外去做代谢消化的工作。你说这不是给自己找事吗？所以我更愿意从“高蛋白、低负担”的方向下手。很多素菜其实蛋白含量不低，口感也能做得很舒服，关键是更容易被吸收，吃进去没有负担，过冬才稳。

当然我也要讲清楚一句，食补是日常营养调养，不是药。家里有基础病的，还是得按医嘱来。

我这次给你一套四道菜，家常到你不需要开火就会做那种，但蛋白顶得住。轮换着吃，冬天真的不容易“越补越虚”。

第一道：香煎老豆腐

我特别喜欢老豆腐。它有点像冬天的“耐心”，慢慢煎、慢慢入味，外皮金黄，里面还是软的，不需要复杂手法就能香。

做法很省事：

老豆腐切厚片，淡盐水泡个五分钟再捞出来沥干。锅里放少许油，小火先煎。别急，火太大容易外面糊了里面还没熟。煎到一面金黄翻面，再撒蒜末爆香，最后淋一点点生抽，少许盐调味，葱花一撒出锅。

这道菜我家孩子也吃得下去。豆腐被很多人叫“植物肉”，植物蛋白确实丰富，而且脂肪相对低。对冬天容易乏力、想补点但又怕吃油的人来说，豆腐比“猛上红烧肉”稳太多了。你要是担心味道不够重，生抽别多，加一点点就够，盐也别贪，清爽反而更养胃。

第二道：香菇炒豌豆

我每次炒这道菜都会想起大学那会儿，跟同学合租，冬天住得特别热闹。那个时候大家都穷，可又不想吃得太惨。我就学会了用香菇把味道“撑起来”，再配豌豆这种看着小、其实营养点很硬的食材。

香菇提前泡发切丁，豌豆剥好洗净。先把豌豆焯水两分钟，捞出来备用。热锅少油下香菇丁，翻炒出香味以后再把豌豆倒进去，一起炒。最后加一点点盐调味，炒匀就行，不用炒得特别久，保持豌豆的口感。

这道菜最大的优点是“不油”。秋冬人容易变懒，吃点清爽的更舒服。香菇和豌豆搭在一起，营养层次更完整，补能量也不慌张。说得直白点，它属于那种你吃完不会犯困、肚子也不会顶着的家常菜。

第三道：鸡蛋羹
