精挑细选几款菜品分享：孜然烧烤土豆、麻辣牛杂香锅

孜然烧烤土豆

做法：

1.土豆削皮切小滚刀块。稍微切薄一点的块儿，比较入味也比较好烧熟。花椒粉，蒜末，油辣子，孜然粉，盐，味精，糖，榨菜粒倒入小碗备用。

2.锅内倒少量油，小火，凉油入土豆。炒制土豆快好了放入一勺豆瓣酱，炒匀。快要起锅的时候倒入小碗里的调料，炒匀，再炒1分钟左右入味。倒入葱花和香菜碎，拌匀，出锅。撒上熟芝麻就好了。

麻辣牛杂香锅

做法：

1、牛杂洗净，入高压锅30分钟

2、土豆切片，花菜切小块，姜切片，蒜拍碎，葱切段，香菜洗净，干辣椒剪段；土豆和花菜焯水至6成熟，捞起待用

3、牛杂晾凉，切条，煮牛杂的汤汁待用

4、锅热，入食用油，姜蒜，花椒，清油火锅料，干辣椒，炒香，入牛杂。

5、调味：生抽，老抽，鸡粉，糖，胡椒粉。入牛杂汤汁，加盖，小火焖，使香辣味浸入牛杂。

6、待汤汁减少，适时将半熟的土豆和花菜倒入翻炒，入鸡粉调味，起锅前淋少许香油，加香菜

杏鲍菇炒牛肉

用料：杏鲍菇2个牛肉2两葱适量蒜适量生粉适量

做法1.将牛肉切成薄片，加生抽及生粉腌制一段时间。将杏鲍菇也切成薄片，装盘中备用。

2.大火热锅凉油，待油加热到开始有点冒烟时，加入牛肉快速翻炒，只需要十五秒，然后盛出备用。

3.继续加少量油入锅，炒大蒜，然后将杏鲍菇一起下锅翻炒，炒到软了的时候加少许盐，继续翻炒。稍后加入牛肉一起炒。

4.最后撒上葱花即可盛出装盘啦

白菜豆腐汤

做法

1、白菜叶适量、卤水豆腐1小块、香葱适量、粉丝适量。

2、将白菜叶切成块、豆腐切块、香葱切末、粉丝泡软备用。

3、锅中倒入适量的水，大火烧开后，将白菜叶、豆腐、粉丝放入锅中。

4、待锅中再次煮开后，转小火炖2分钟，然后放入1小勺盐调味。关火后再淋少许香油，撒少许香葱碎即可。

韭菜鱿鱼须

食材：韭菜、鱿鱼须、 酱油、料酒、十三香粉、精盐、 味精

做法：

1.韭菜切段，鱿鱼须切条

2.锅内上热水把鱿鱼须放进去烫一下捞出过冷水，最后沥干待用。

3.锅内放油，下鱿鱼须大火翻炒，加酱油，精盐，少量味精，料酒，十三香粉等煸炒

4.最后放入韭菜大火翻炒即可

凉拌金针菇

材料：金针菇、酱油、黑醋、小米椒、干辣椒、葱、蒜

做法：

1.去除金针菇根部洗净，在沸水中烫煮捞出备用

2.小米椒和干辣椒都切小圈备用

3.蒜和葱切细放在金针菇上，并放适量的酱油、黑醋、盐

4.热锅，放适量的油，油温升高以后，倒入切好的小米椒和干辣椒，然后马上关火

5.把辣椒油快速地淋在葱蒜上即可（注：吃的时候搅拌搅拌）

葱姜竹节蛏

食材清单

浓香花生油 适量、葱姜蒜 适量、红椒 一个、竹节蛏 适量、生抽 适量、白糖 一点点

烹饪步骤

步骤1、竹节蛏剪开，去沙囊。冲水，备用。

步骤2、烧开水，放点料酒。

步骤3、水开，放竹节蛏，马上关火，焯水20秒，取出，过凉水至冷却。

步骤4、取肉，洗干净。肠子全部撕掉，触角要轻轻揉搓，至确定无沙 。沥水备用。

步骤5、蒜姜拍碎，红椒切丝，葱切段。（喜欢吃辣的，红椒可以换成小米椒，葱可以用大葱，洋葱或者芹菜代替，这几种炒海鲜都好吃）

步骤6、热油爆香葱（葱白部分）姜蒜红椒

步骤7、放入竹节蛏，翻炒一分钟。

步骤9、翻匀，尝尝味道，不够咸度，可以再加点生抽。再撒一点点白糖提鲜。

步骤10、关火，剩下的葱叶放进去，翻几下就出锅。

苦瓜拌虾仁

材料：苦瓜2根、鲜虾200克、大蒜3瓣、花椒20粒、料酒、白胡椒粉、盐、糖、米醋适量

做法：1、鲜虾去头去皮，剥出虾仁，挑去虾线，用料酒和白胡椒粉腌制十分钟。

2、入开水中焯烫，变色后捞出，过凉开水，捞出沥干备用，苦瓜对半剖开。

3、用勺子挖去内瓤，切成薄片，入开水中焯烫片刻，捞出过凉。

4、大蒜拍扁后剁碎，焯水后的虾仁、苦瓜和蒜末混合，添加盐、白糖、米醋拌匀。

5、起植物油锅，小火炸香花椒，去掉花椒，把花椒油趁热浇在拌好的苦瓜虾仁上，拌匀即可。

凉拌萝卜皮

原料：萝卜，盐，糖，香醋，蘑菇精，香油

做法：

1，萝卜冲洗干净后沥干水分2，削去外皮，可以切得稍微厚点3，加入食盐4，把食盐均匀滴抹在萝卜皮表面

蒜爆肉片

做法1.准备食材，猪肉、洋葱和青椒切片，蒜苗切段。

2.猪肉中加入料酒、盐和淀粉。

3.抓拌均匀腌制十分钟。

4.调酱汁:小碗中放入一勺生抽、一勺蚝油、半勺糖和少许香油拌匀后备用。

5.锅中放适量油烧热后改小火，放入洋葱片翻炒爆出香味。

6.放入肉片翻炒均匀至肉片断生。

7.把酱汁倒入肉片中翻炒均匀，直至肉片炒熟。

8.放入蒜苗和辣椒翻炒两三分钟。

红烧冬瓜

食材：冬瓜500g，盐适量，鸡精适量，生抽适量，老抽适量，蚝油适量，白糖适量。

做法：

1.冬瓜去皮后，洗净，切成方块状。

2.干红辣椒，切段备用；再切点葱花，备用。

3.小碗里，调入适量生抽、老抽、蚝油、白糖，搅拌均匀。

4.炒锅烧热后，倒入适量植物油；油锅烧热，转小火，放入干辣椒煸香。

5.放入冬瓜，大火翻炒几下；倒入调好的料汁；翻炒均匀，盖上盖子，将冬瓜焖煮至熟。

6.调入适量盐；调入适量鸡精；翻炒均匀，关火，撒葱花。

茄汁带鱼

材料： 带鱼、番茄酱、盐、料酒、葱、姜、蒜、淀粉、糖；

做法

1.带鱼中放入盐和料酒腌制入味大约20分钟；将带鱼身上裹一层薄薄的淀粉，入锅煎至两面金黄；

2.锅里放少油，放葱、姜、蒜、番茄酱炒香，加点糖，加水放入带鱼，大火煮沸后转小火略煮收汁后即可盛出；

3.小贴士：煎鱼窍门：第一个方法：锅烧热，用姜片将锅子擦一下 ；第二个要注意，在鱼放入锅中后不要马上翻面，要让它在锅中多停留一段时间，

等到鱼身一面有点焦焦的，坚硬后再翻面；还有一种方法就是在鱼身上涂一层淀粉或者面粉再放入锅中煎； 最后一个，如果你有足够的时间，在将鱼

处理好后最好风干一会儿，等到鱼身上没有水分时再煎也是不容易破皮的。

辣子鸡

1.鸡肉洗干净撒点盐花椒粉胡椒粉料酒腌着备用

2.锅中放入大量油6分热倒入鸡肉炸

3.炸到鸡肉金黄再反复炸一次直至熟透

4.备料

5.洋葱切丝

6.放入油锅中炸几分钟捞出备用

7.另起锅倒入适量的油放入花椒粒爆香倒葱姜蒜干辣椒继续翻炒

8.倒入炸干的鸡肉，放入小葱

9.倒入洋葱调味

家常辣子鸡丁

做法：1.将鸡块切成小丁，加盐、料酒、腌制一下。把干红辣椒切成小段，姜蒜剁好、放少许花椒。

2.锅烧热倒油，油七成热就倒入鸡丁、炸至表面呈金黄，将鸡丁捞起。锅里留少许油，倒入姜蒜、干辣椒、加花椒、炒出麻辣的香味即可

香辣红烧肉

食材：五花肉480g、酱油、料酒、冰糖、葱姜蒜、豆豉10颗、干辣椒2个、桂皮1段、八角3个、草果1个、香叶2片

做法：

1、五花肉加姜片和料酒焯水，撇去浮沫。葱切段，姜蒜切片或切条，香料准备好。

2、五花肉切成块状备用。锅内放少许底油，加入葱姜蒜爆香。

3、转中小火，放入五花肉块翻炒。煸炒至五花肉块出油，颜色金黄。

4、加入剩余香料翻炒两分钟。加入酱油，料酒和冰糖翻炒上色之后加入沸水，加盖转中小火炖1个小时40分钟后开盖，转大火收汤至粘稠即可。

泡椒田鸡

材料：田鸡、泡椒、泡姜、葱、香菜备好。

做法

1、田鸡洗净沥干水份，泡姜、泡椒切块，葱、香菜切段备好。

2、将1茶匙盐、1茶匙糖、1汤匙花雕酒、1汤匙油码入田鸡，腌制10分钟。

3、锅下油烧热，爆香田鸡。

4、炒至田鸡微黄盛出。

5、另锅爆香泡姜、泡椒和葱白。

6、将田鸡放入。倒入泡椒水。淋入红烧酱油。

7、撒入糖和盐，盖上盖焖一会。

8、撒入香菜。炒匀即可!

口水鱼

食材：花鲢鱼一条，淀粉两大匙，油炸花生仁约半两，熟白芝麻两大匙，老姜一小块，蒜一个，香葱五棵，豆豉两匙，料酒三大匙，酱油两大匙，醋一大匙，白糖一匙，红油辣椒一两，花椒油两大匙，盐、味精适量，香油一大匙。

做法：

1、鱼洗净片成片，用盐、料酒拌匀腌几分钟，再加水淀粉拌匀码味，油炸花生仁剁成碎粒，豆豉剁碎，葱、蒜、姜切末。

2、锅中放油烧至六成热，倒入豆豉、姜末、蒜末炒出香味。

3、在大钵中放入盐、味精、白糖、酱油、醋、炒过的姜蒜豆豉、红油辣椒、花椒油、香油、油炸花生仁搅拌均匀兑成调味汁。

4、锅置旺火上放油烧至四成热，放入鱼片滑散炒熟。

5、捞出沥干油后装入碗中。

6、淋上调味汁，再撒上熟芝麻、葱碎即成。

7、拌匀即可。

香辣粉蒸鱼

做法：1.将糯米、八角、桂皮、香叶、花椒一起放入锅中翻炒。

2.继续炒至糯米发黄，大料散发出香味。

3.将炒好的米倒入磨碎机中。

4.将它们一起粉碎成细小的微粒。

5.放入碗中， 加入鱼块（我是用的龙利鱼，买回来直接切块就行了），再加入盐、 料酒、 胡椒、姜末、油和腐乳汁。

6.抓匀后腌制半个小时。

7.将玉米叶垫入蒸笼底。

8.上面码好腌好的鱼块。

9.起锅烧水，水开后，大火蒸十五分钟， 再撒点水和适量的油， 再大火蒸十五分钟。

10.出锅后撒上小葱末即可。

宫保土豆

食材：土豆1个、猪肉50克、青椒1个、花生米50克、黄瓜80克、葱、姜、盐、花椒5克、干辣椒10克、蒜瓣2个、老抽10毫升、生抽20毫升、香醋20毫升、白糖10克、料酒30毫升、鸡精、香油

做法：

1. 猪肉切丁，加入酱油、料酒、白糖，淀粉拌均匀；锅中烧水放入土豆丁煮上5分钟捞出过凉；炒锅少倒一点油炒熟花生米，盛出沥油。

2. 葱姜蒜切碎、辣椒切碎、黄瓜切丁；取一个小碗加入老抽、生抽、香醋、白糖、料酒、水，拌匀。

3. 炒锅炸香花椒捞出，爆香葱姜蒜和辣椒，放入肉丁翻炒至变色盛出。

4. 再倒入土豆丁翻炒，加入调好的料汁，大火煮至3分钟入味，加入黄瓜丁和青椒丁翻炒，再倒入肉丁、花生米，淋入水淀粉翻炒均匀，淋入香油，翻炒均匀即可。

啤酒卤蛋

食材：鸡蛋、啤酒、生抽、老抽、白糖、盐、八角、桂皮

做法：

1、鸡蛋外壳清洗干净，凉水下锅煮熟，加点盐可防破壳，煮熟后用冷水浸一下，再剥壳，比较容易剥出完整的鸡蛋。

2、准备好所有的调料，锅中倒入一罐啤酒，将其它调料也一并放入锅中，汤汁搅拌均匀。

3、鸡蛋放入锅里，大火烧开后，转中小火再煮10分钟左右关火。

4、卤好的鸡蛋和汤汁装在一个适当的容器中，晾凉后放冰箱冷藏浸泡一个晚上。

7.炖1小时，大火收浓汤汁即可。
