百合莲子排骨汤家常做法，简单几步，新手也能炖出清甜好喝的汤

我家老大十岁那年冬天，早上刚起床就喊肚子有点不舒服。我当时没敢乱给他吃凉的甜的，锅里就炖着百合莲子排骨汤。汤一盛出来，学校门口他还能边喝边点头，说这汤不油不腻，喝着顺。更让我安心的是，家里两位老人也能喝，他们牙口一般，但这汤的莲子和百合软糯，不用怎么嚼。

说白了，这口清润清甜的汤，就是我家四季都爱反复做的那一锅。很多人自己炖，最后不是排骨带腥气，就是汤色浑、莲子发苦、百合煮烂化水。问题看着像是食材不行，实际上往往是几个关键细节没跟上。今天就把我在家反复试出来的做法和避坑点摆在这儿，照着做更容易稳定出锅。

先把话说明白，这锅汤不走重口味路线，核心口感是清润清甜、不油腻、温和。你想要的就是这种全家都能喝的感觉，所以配比和下锅顺序就很关键。就拿家庭常用份量来说，3到4人我一般用猪肋排400克，干莲子25克，干百合20克，清水一次性加1800毫升。时间也别乱改，整个流程大约70分钟，准备20分钟左右，炖的时候该慢就慢，该延后就延后。

第一个最容易被忽略的点，主料先选对。猪肋排别买成肥排或者大骨，油脂太多汤就容易发闷，喝着也不清润。选小肋排更合适，肉质嫩一点，炖出来汤更偏清甜。干莲子我建议用去芯莲子，口感不会发苦。你要是买到带莲心的，日常就别硬扛苦味，直接抠掉莲心，爱清爽就去得干净，少量保留也行，但别指望它不会苦。干百合尽量用干百合来做家常煲汤，香味更浓一些；你非要换新鲜百合也可以，新鲜的出锅前15分钟放进去更合适，口感偏脆嫩清甜，特别适合夏天喝。

第二个点，辅料别堆，堆也没用。生姜就3片，作用很简单，就是去腥提鲜，把百合和莲子本身的味道往鲜里拉一拉。红枣3颗，提前去核，吃起来不容易发酸，还能自然增甜。枸杞10克最后放，别早放，早放容易煮烂、颜色也不稳。盐和料酒就两样，盐控制在3到4克，料酒1勺只用来焯水去腥。

我一直不喜欢新手一上来就加很多调料，什么鸡精味精、各种香料都往锅里倒。汤本来走清润路线，你越折腾越容易串味，最后喝不出排骨的鲜、莲子百合的甜润，反而像一锅“调料汤”。对，这种汤是靠细节吃出来的，不靠调料堆出来的。

第二步，排骨焯水要按冷水下锅来。排骨冷水下锅，放入两片生姜和一勺料酒。水开后煮沸3分钟，把表面浮出来的浮沫尽量撇干净。焯好之后最好用温水冲洗一下，把表面的血沫和杂质带走。很多人嫌麻烦，只是随便冲一下就下锅，结果汤里腥味就容易留着。还有个细节也别省，排骨不建议用冷水冲到完全不热再炖，肉质容易冷热骤变，炖出来更柴，还可能残留腥味。

第三步，砂锅里先熬排骨底汤。砂锅加入1800毫升清水，放入焯好的排骨、姜片和去核红枣。先大火把水烧开，再马上转最小火慢炖40分钟。你可以想象成“把鲜味熬进水里”，不是把水烧翻滚。很多人一直大火沸腾，图快图热闹，但高温翻滚容易让汤体变浑，也会把油脂逼出来，最后喝起来就不清润了。家里老人小孩都要喝，我宁愿慢一点，让汤更干净。

第四步，下入百合和莲子，时间上要延后。底汤炖40分钟后，把泡发好的莲子和百合下锅，继续用小火慢炖25分钟。这个步骤别偷懒，不要排骨和莲子百合一开始就同锅。长时间久煮会让百合更容易直接化水、莲子也可能煮空，整体卖相和口感会差一截。你看家里那一口汤，是要入口软糯但别散烂，是要淡香但别变味，所以下锅时机很要紧。

第五步，最后调味，枸杞和盐别早放。出锅前5分钟加入枸杞，焖一会儿就可以关火。盐尽量也放到这时候调，过早放盐会让排骨肉质收紧，不太容易炖到位，汤的鲜甜感也会打折。整锅也不用加味精鸡精，清淡喝更舒服，尤其家里有老人胃口偏淡的，基本不用额外调整。

说点我自己在家翻车之后才明白的“避坑清单”。汤浑、汤色发黑，常见原因就是浮沫没处理干净，中途加了冷水，还有就是大火一直翻滚。你要做的是全程小火微沸、一次性加足水量，中途别补水。浮沫别只撇表面一层，锅底细碎的血沫也要轻轻捞干净，不然汤里会有隐形杂味。

莲子吃着发苦，基本就是莲心的锅。日常喝汤就去掉莲心，苦味就能直接解决。你要是觉得苦味也有风味，那也别指望人人都能接受，家里有孩子就别冒险。

百合煮烂化水，通常跟干百合泡发方式和下锅时间有关。干百合不用泡太久，泡软就行；下锅时间延后到排骨炖熟之后，百合往往能保持软糯完整，不太会散烂在汤里。

排骨腥味、肉质发柴，常跟焯水和火候有关。冷水焯水、尽量撇净全部浮沫、温水清洗排骨，再加小火慢炖，一般腥味就会下去，排骨也能软烂入味。

汤味不香甜，也别急着加糖。用红枣的自然甜就够了，这汤走的是清甜清润路线。你要回甘重一点，可以加一颗桂圆提味，但别加多，甜得太重就不清爽了。家里孩子喝汤，我就不会把甜味压得太满。

有人问我电饭锅能不能做，能。电饭锅版本适合上班族，我通常用焯水后的排骨和姜片红枣一起放进去，加足清水，开启煲汤模式。程序跑到一半时再放莲子和百合，结束前5分钟放枸杞和盐调味。这样不用守锅边，省事，但味道还是走家常那条路。

也有人问高压锅，赶时间用高压锅更快。焯水后的排骨、清水、姜片、红枣一起放入高压锅，上汽后压15分钟。自然泄压之后再放莲子百合，小火慢煮15分钟，最后放枸杞加盐调味。高压锅有个坑就是压完直接开盖，热气骤散会让莲子瞬间回硬，我试过一次，口感确实不稳，所以自然泄压这一步别省。

如果夏天喝想更清淡低脂，也能调整。选纯瘦肋排，焯水时尽量把浮油撇干净，全程不额外加油。红枣用量稍微少一点，不加桂圆。口感清爽，肠胃也更好适应。

关于保存也说清楚。煮好的汤可以冷藏密封保存大概2天，喝之前小火加热煮沸就行。冷冻大约能保存一个月左右，解冻后要彻底煮开再喝。建议食材分开存放，别让百合和莲子一直泡在汤里软烂到发酸。家里老人小孩吃饭讲究，我不喜欢冒这种风险。

最后再聊聊适不适合肠胃偏弱的人喝。百合和莲子本身偏清淡，适量饮用没问题。要是你家里有人平时消化弱，我建议减少百合用量，多两片生姜，或者少量用陈皮调一调，喝起来更温润顺口。你要是像我家这样，老人牙口一般、孩子口味清淡，那这锅汤很对路。

至于食材怎么替换，排骨可以换成瘦肉或者土鸡，鲜味依然在。日常做菜也能加点山药、芡实、玉竹，让层次更丰富，一年四季都能喝。主食我一般配白米饭、杂粮饭，或者小米粥。配菜搭白灼菜心、清炒西兰花、凉拌黄瓜这种清爽的就行，能中和汤的温润。家里吃一顿完整的，我常用杂粮饭加清炒时蔬再加这锅汤，低脂好吃，吃完肚子舒服，不会被油盐顶住。

但有一点我会提醒你，尽量别同时吃重辣和重油炸的菜。重辣会把汤的清润回甘盖住，重油炸会把整餐的口感压成一个味儿，最后你炖这锅汤的意义就打折了。人是会挑嘴的，嘴不闹，胃就更省心。
